Here's the recipe for anyone who's interested:

Spaghetti Squash Stir-Fry
From Sunset


"My mom introduced me to spaghetti squash when I was a girl growing
up in Spokane.

I liked it so much that years later I prepared it for my boyfriend,
who is now my husband," says Jane Shapton.

1 spaghetti squash (3 lb.)
1 green bell pepper (6 oz.)
1 red bell pepper (6 oz.)
2 carrots (6 oz. total)
1/2 cup vegetable broth
1 tablespoon dried basil
1/4 teaspoon pepper
Salt
1/4 cup grated parmesan cheese

1. Pierce squash in several places with a sharp knife.
Set squash in a microwave oven and cook at full power
(100%) until soft when pressed, 10 to 12 minutes; turn squash
over after 5 minutes.

2. Meanwhile, rinse, stem, and seed bell peppers. Peel carrots.
Cut bell peppers and carrots into matchstick-size slivers.

3. When squash is tender, cut open and scoop out and discard seeds.
Scoop out tender squash strands and reserve.

4. Set a 10- to 12-inch nonstick frying pan over high heat.
Add bell peppers and carrots. Stir often until carrots are tender-crisp,
5 to 7 minutes.

5. Add broth, basil, pepper, and squash strands. Stir until squash is
hot. Add salt to taste.

6. Pour vegetables into a dish. Sprinkle with cheese.

Yield: Makes 6 servings

Paulissa, next time I have a speg. squash I will try the stir fry. I always have more than enough.

Linda, if you have any of JoAnna's cookbooks or if you can get one from your library, be sure and read the front part of her book. There are lots of handy hints in just about everyone of them for cost cutting ways. Like make you own evap. milk and condensed milk instead of buying the canned. I prefer her evap. milk to the canned anyday. Doesn't have that funny taste. She also has recipes for making your own Cook and Serve Puddings. I'm also going to start making up some cream of soup mixes. I know others make there own and like them better.

I went through the Heart Smart cook book this afternoon and most of the recipes I marked are the Sweet Salads. There were some vegetable dishes that were pretty low in calories that would be nice for a change. I must get busy.

Happy Super-Bowl Sunday evening! Game is almost over and it has been a pretty good one. Still anyones game!!

Louise, I had a 6 hour child-care class on Saturday, too. It comprised of 3 classes. Children's emotions, Science for kids and Literacy. When they set up for lunch they put in a one mile walk with Leslie Sansone for us to do so we got some activity in too! Felt good after sitting most of the morning. And then we had Subway for lunch. It was a good day. I got 6 Continuing Ed hours for the day. I need 15 a year. Those that work in a center need 25 hours a year.

Well, AZ scored. Hoping they can hold the Steelers and pull out the win. Still, anything can happen.

A good week to all. I am closed tomorrow. Have a funeral to go to.

Yep, the spaghetti squash gets cooked in the microwave and then the strands get scooped out and combined with whatever stir fry veggies we have on hand, a little onion, carrots, etc, sprinkled with parmesan and served.

Very filling and only 97 calories for a cup. It's one of my mil's favorite meals when she comes to visit.

Ann, I think you'll really like that salad. I hate having to return things, too. Shipping is so high now. I ordered a bathrobe from QVC (Stan Herman) once and every time I washed it for the next 2 years the lint catcher was full of purple fluff. I've had other bathrobes from SH and they didn't do that (chenille).

Linda, Don't be discouraged about the grocery shopping trip. Many HE recipes call for the same basic things and you'll be able to build up your supply over time. Such as Campbells Healthy Request soups - tomato, cream of chicken, cream of mushroom- so if these go on sale, you can start to stock up. Do you plan to follow the exchange system? If so, you can easily use exchanges of things that are on sale (chicken, hamburger, whatever veggies are in season like cauliflower and broccoli right now. Then have a special HE salad, dessert or main dish now and then.

How does everyone else make that dollar stretch a little farther?

I'm not a football fan and I'd be like Jan, just watching for the commercials. Think I will put the time to better use. Maybe a movie on the LMN or Lifetime channel.

Jan, I put frozen raspberries on my shopping list so I must have the salad marked. Your Choc. Turtle Pie sounds so good. Last night at the bridge game I passed up apple pie. Pie with crust is really not my passion. Much prefer those with graham cracker crusts. I'm trying to stay away from those.

Paulissa, when you stir fry speghetti sauce has the squash been steamed and shred. Seems like a funny question but for some reason I can't picture stir frying speghetti squash. I bet the dish is very good when finished.

Those of you that are under the weather, I hope you feel better real soon. Not fun having to go to work when you feel bad.

I have to make a trip tomorrow to the UPS store that isn't too far. This should again teach me not to order things online or through the mail. I ordered a robe and followed their sizing measurements. Well the robe came and two of me would fit into it. I see on line they don't have the next size down so I'll have to end up paying postage. Darn

Hello ladies, Go Cardinals! Well I'm not really that much of a football fan but since I live in AZ I should probably route for them. My HE shopping trip was quite disappointing. I ran out of money before I ran out of food so I had to put quite a few things back. I have no idea what meals I can make now until I go to make them. Oh, well. I guess I just need to incorporate a few at a time rather than go all out the first time. I hope you feel better soon Paulissa, it is no fun being sick. Louise the classes you took sound fun. I'm hoping to teach a pre-k class next year at the school I work at. They have an opening and I told them I was interested. Maybe then I'll be able to attend a workshop like that too. Jan, doesn't it feel good to get things cleaned out and organized? I recently did my kitchen and got rid of alot of things I have never even used. Why do we hold onto these things? I hope you all enjoy the Super Bowl. It's just the kids and I as DH is working today.

Good morning - no, it's afternoon now!

It's been a good morning. I feel like Mama Roo (Winnie the Pooh) - organizing things. I've been going through my top dresser drawer where I have some mementos from Grandma, my aunts and Mom. When I was at WalMart I got a jewelry cleaning kit which included a polishing cloth so I've cleaned up some things.

DH is rooting for the Cardinals so I will, too. I confess my participation in the Super Bowl is watching the commercials and asking at the end who won.

I'm setting up the treadmill so I can walk while I watch tv. My little room gets cluttered way too often. I have to remind DH when our son is on his own again we will have that whole room to put things in.

Louise, That was neat that you got your aerobics in while doing the workshops. Do you have to earn continued education credits? It sounds like they are giving good constructive ways to use up some of that energy kids have.

Paulissa, I hope you get some rest today. Sounds like an interesting movie you watched. In my smaller town historically we had Chinese settle here and many of them stayed and they integrated well into the community. In the 1960s Job Corps started a training center here for people 16 to 21 I think, and many of them were of other races. So many townspeople have worked at the Job Corps and gotten used to different cultures. The Sudanese students were always polite and gracious. Some learned English well and others really struggled - which made it very difficult, if not impossible, to place them in jobs (many wanted in the medical fields). There is a film I think 60 minutes did on the Lost Boys of Sudan that is very interesting. Many Sudanese settled in Seattle area. A former pastor of ours had a church there and also worked to incorporate them.

Well, friends, I'm off to enjoy a piece of Chocolate Turtle Pie!

I hope the day is treating you well so far.

I'm down with a sore throat, hurting sinuses, a fever and the blahs!!! Everyone at work has been sick for the past couple of weeks and D's been germy too so I suppose I was overdue. I just want to sleep lol!! Unfortunately, there is homework (STILL) to be done so a nap will have to wait a while longer.

I made some peach stuffed french toast this morning (HEALTHY RECIPE) and had some pineapple and it was sooooooo yummy. I figure just because I feel crappy, there is no reason to eat poorly. I'm not very hungry so dinner is going to be spaghetti squash stir fry - lots of veggies and filling.

I watched "A Time for Burning" last night. The film chronicles the efforts of Augustana Lutheran Church here in Omaha in 1969 to integrate blacks into the congregation. I thought it was quite interesting and it struck me that to some degree churches still deal with the same kinds of issues today. It was interesting to see that Ernie's attitudes toward white people hasn't changed much in 40 years. I was appalled at the bigotry but realize those were the times. I was born at the end of some of the race riots and do remember (vaguely) hearing about the black panthers in Omaha when I was little.

My congregation is very mixed; we have caucasians, black families, Sudanese, and a few Mexican families.

In my church right now, we are struggling with how to incorporate the Nile congregation into more of our services. The Nile congregation is a group of Sudanese people who meet at our church. Their services include lots of drumming (very cool), sounds of praise that I kid you not! sound like the mooing of a cow (very startling the 1st time I heard it), and they break bread together after the services. Lots of our older members don't appreciate the distraction that is worshipping with them. I find it distracting and intriguing at the same time and the intrigue outweighs the annoyance.

Well I suppose I'd better get moving on the homework so that I can take meds and sleep and hopefully feel good enough to go to work tomorrow.

I cannot believe that it is February 1st all ready!
Yesterday's Preschool Conference was Great! They had
a lot of good workshops to choose from. I only wished that the conference was the whole day so we could have picked more than three workshops to go to.
The funny thing was I got my aerobics in for the day.
The first workshop I went to was for learning about doing movement with the children. The instructor had us move the whole workshop. It was a good workout even for us teachers! Then the second workshop I attended was using music in the classroom.
She had us up and dancing and moving the whole time.
Another good workout. Then the third workshop I attended was using Praise Music in the classroom. She also had us up and dancing, shaking, jumping and using sign language the whole time. That was really an aerobics class! I actually was tired when the workshops were over. Today after church I have to get all my things together for the substitute. Then later we have a Super Bowl Party to go to. The Cardinals are actually in the Super Bowl! I cannot believe it but we will be cheering them on. Well, everyone, please have a GREAT and BLESSED SUNDAY!
