Mainstay Meatloaf serves 6
From Cooking Healthy Across America

16 oz. gr. 90% lean turkey or beef
1/2 cup (1 1/2 oz) quick oats
3/4 cup finely chopped onion
1/2 cup Heinz Light Harvest Ketchup or any reduced sodium ketchup (divided)
2 tabl. water
1 tsp. dried parsley flakes
1/8 tsp black pepper

Preheat oven to 350 degrees. Spray a 9 x 5 inch loaf pan with butter flavored cooking spray. In a large bowl combine meat, oats, onion, 1/4 cup ketchup, water, parsley flakes and black pepper. Mix well. Pat mixture into prepared loaf pan. Bake for 30 min. Spread remaining 1/4 cup ketchup evenly over partially baked meatloaf. Continue baking for 20 - 25 min. Place loaf pan on a wire rack and let set for 5 min. Cut into 6 servings.

Each serving equals:
HE: 2 protein, 1/3 bread. 1/4 vegetable, 1/4 slider

171 Cal, 7g fat, 15g protein, 12g carbo, 76mg sodium, 23mg calcium, 1g fiber

Diabetic: 2 meat, 1 starch/carbo

Notes from HE web site: You could use tomato sauce in place of the ketchup. Sugg; put in a large casserole dish with baby carrots and potatoes around it. When it is half done add a can of fat free mushroom gravy.
