I have found anything is good in a corn tortillas

Tonight was sauté fresh mushrooms, onions, green pepper, red pepper, jalapeño pepper, tomato sauce in tortillas shells and 1/2 avocado sprinkled with lime juice. I used the salt free Forward seasoning from Penzys and the tomato sauce was salt free; I had control over the salt used. Almost forgot, left over chicken breast.

Slow but will get there!

I had a horrible allergy attack yesterday and wasn't in the mood to eat dinner, so I busted out the juicer and juiced a chunk of ginger, 2 apples, 2 oranges, 2 kiwis, and 2 carrots. It was pretty good;-)

about 8 oz sliced mushrooms
couple slices on onion diced
14 oz low sodium chicken stock
good heaping Tbsp of minced garlic
14 oz can of no sodium diced tomatoes don't drain
6 oz can tomato paste
shake of oregano
shake of paprika
shake of pepper
cook on high 4 hrs, or low for 8

I made a sauce yesterday with diced onions, red, gree and orange bell peppers, zucchini, jalapeno pepper and lots of tomatoes. Serving it over whole wheat pasta with a salad for tonight.

Last night I hade a chicken breast diced up and simmered in a can of chicken broth, then I added a can of drained mixed vegetables and topped it off with a biscuit. Covered it and let it simmer for about 20 minutes and I had chicken and dumblings. OH I forgot to mention that I cut the biscuit up in small pieces. It was soooooooo gooooooood.

Last night I had the Slow Cooker Salsa Chicken (I added corn). Served over brown rice. Ohh, it was so yummy. I am not sure what I am making tonight.

I put a pot of the Greek Lentil Soup on this morning at 4:30 AM. Had to do it then before it got too hot. Expecting 113 today.

Since it is already made, that is going to be my dinner. Have not decided on what protein I will have yet.

Last night made meatloaf with potatoes, carrots, green peppers, onion and mushrooms.

Tonight going out to dinner with family. Already looked at the menu and I plan on ordering the char-grilled shrimp on a bed of rice with a side salad.

It is going to 113 where I live today so my dinner is going to be on the cool side.

1 can water packed tuna drained
1 4 oz. can mushrooms drained
1/2 English cucumber diced
1/2 green bell pepper diced
1/4 sweet onion diced
4 baby carrots thinly sliced
2 hard boiled eggs white part only diced
1/4 cup light mayo

Toss all this together and serve over a bed of shredded iceberg lettuce. Sure to fill you up

My husband and I will be having a traditional British Sunday dinner of Roast chicken (skin removed), boiled baby new potatoes,broccoli, garden peas and carrots with Bisto gravy made from granules.
Followed by my special apple pudding. emoticon

I am making this for my lunch and thought I would share this with you. (By the way, this recipe is juat a little over 200 calories for both portions)

I also submitted it to SP, but who knows.

Eggy Fooy Young

Serving Size: 2
1/2 cup onion -- finely diced
1/4 cup green bell pepper -- finely diced
2 egg whites -- beaten with whole egg
1 large eggs -- beaten
2 water chestnuts -- finely chopped
2 cups bean sprouts -- drained and rinsed
1 teaspoon soy sauce

Drain bean sprouts and rinse. Set aside.

Using a large heavy non-stick skilled over medium-low heat and sprayed with vegetable oil spray, saute the onion and bell pepper until crisp tender.

Add water chestnuts and stir for half a minute.

Beat together the whole egg and egg whitestogether with the soy sauce.

Stir in bean sprouts and add cooked vegetables. Mix together thouroughly.

Spray heavy skillet with vegetable oil spray and add half the mixture. Cook over medium-low heat until lightly browned on one side and then gently turn over and cook on the other side. Repeat with second serving.
