recipe=465075 I use mild salsa since I have to kids to serve it to, but I imagine it would be tasty if you added a medium or hot salsa.
I follow the recipe exactly but I normally triple it. That gives me one meal to serve that night and 2 meals to have in the freezer. It does add a bit more onto cooking time but it's still really easy. After its shredded and cooled I label ziplock freezer bags and toss it in the freezer.
I serve it with whole grain soft taco's and various sides. Avocado, low fat cheese, tomato, jalepeno, etc. healthy refried beans, whatever you like.
