I haven't used many Spark recipes, since we already own a ridiculous number of cookbooks. Like you, we try to use lots of whole grains and throw in a few extra veggies, whether they are part of the recipe or not. And since the kids have grown up and moved away, we are always freezing about half of what we make.

Slow Cooker Lime Salsa Chicken is mine and my family's favorite.

I use mild salsa since I have to kids to serve it to, but I imagine it would be tasty if you added a medium or hot salsa.

I follow the recipe exactly but I normally triple it. That gives me one meal to serve that night and 2 meals to have in the freezer. It does add a bit more onto cooking time but it's still really easy. After its shredded and cooled I label ziplock freezer bags and toss it in the freezer.

I serve it with whole grain soft taco's and various sides. Avocado, low fat cheese, tomato, jalepeno, etc. healthy refried beans, whatever you like.

What are your favorite, freezable recipes from Spark recipes? Please share how you freeze it and any tips/idea's on keeping it healthy.
