Do you mean like a frozen egg casserole or breakfast foods with eggs in them? If you are thinking of some type of casserole read the link below (for some reason it didn't want to be added right here!)
Eggs (like scrambled) when frozen alone tend to get rubbery, but when cooked into things they do fine. I freeze whole grain muffins and pancakes all the time and they taste fine. Maybe not 100%, like my muffins tend to be a bit more crumbly and the pancakes aren't quite as fluffy. However the texture and taste are fine and neither my kids or myself mind the minor differences.
Busy mom here trying to make healthy meals. I've been exploring healthy cookbooks and they have some yummy breakfast recipes. But in order for it to work for me I have to be able to freeze many of my meals.
Have you frozen any egg meals? If so what did you freeze?
