I just froze 11 burritos for lunches.
I found these great low carb tortillas (otherwise burritos have way too much carbs for me)
I put a little less than 1/2 c. refried beans (I use eden)
around 1 oz. shredded cheese
around 1 Tbsp maybe a little more salsa.
Wrap up and heat for 45 seconds.
In this case I did all but the last step. I wrapped 11 of them in plastic. Wrapped that in aluminum foil and wrote on the foil cheese burrito and stuck in the freezer. the last one I ate for dinner. Now I have a quick recipe which I turned into an even quicker lunch.
Hi and welcome! This has been a pretty quiet team, I just joined myself a few months ago.
Anyway I love to freeze meals in advance. You can find tons of great books on the subject. I recomend you start with your family's favorites and decide if you can freeze them. When I set out to freeze something I normally will cook something off my regular meal, double it, serve one meal and freeze the second one.
In my freezer I always have frozen marinara or meat sauce, meatballs, pizza dough, a few favorite casseroles, lasagna, cookie dough, chili, meats frozen in marinades, rice and soups.
I am thrilled to have found this SP group as I am have a 40+ hour a week job and comute a little over an hour each day. When I get home I dont want to think of what I need to cook and would really like to have something prepared and in the freezer ready to pull out and heat up. Do you have any good recipes for meals?
