healthy snacks on the counter at all times being wheelchair bound and little weight bearing on left leg limits me. The frozen veges by green giant are my DH life saver since he does the cooking and grocery buying since 6/07.

I think what helps me the most is just routine. Eating the same thing for lunch and breakfast most days helps keep me on a routine so I don't have a lot of choices or have to think too much about what I'm going to eat. Might sound boring to some, but generally works for me. And Barb, I do the same thing with my salads. I cut up my lettuce for the week. Sometimes I go ahead and chop up my green peppers and carrots and go ahead and mix it with my baby spinach ahead of time, but other times I mix it the night before or that morning, but somehow having that lettuce already washed and cut up helps. I really don't cook a whole lot, so when I do, I cook larger quantities and freeze it for meals later. I often just pull out a piece of chicken I cooked at another time and cook a baked potato and some veggies to go with it. I do try to vary my dinners some since I eat basically the same thing for most lunches and breakfasts.
I just always have things in the fridge ready to grab, like light yogurts and veggies. Making a meal isn't hard for me as most nights it is just me and Tina. The night before work I always plan what I will pack for lunch. Anna
I use my crockpot once or twice a week. Even if I only put the meat in all I have to do is fix sides when I get home. I usually have enough for at least 2 meals and a lunch. Hope this helps someone. Marcie

Since I cook a separate meal for the men I live with, I bulk cook thinks like my chicken tenders and hamburger so I can throw together a quick meal for myself each night. I don't work so I tend to cook more for myself at lunch when I am only worrying about myself.

Mine would be: having everything prepared beforehand. For example. I cut up my lettuce and everything that goes in it on a weekend (for the week), so the night before I go to work, I put together a fast salad.
