I really can't do any of the recipes either. They are either to complicated, to $$, or just unappetizing. So I keep things simple. Over time I have found more things that I like. If i make a salad I throw on hard boiled eggs, beans, turkey, avocado, nuts, chicken, or what not. I've put eggs over millet (that was new actually kinda good). I make many kinds of wheat (buckwheat, muesli, bulgar, oat meal, steel cut etc). many of these reheat for a yummy lunch later.
So start with some staples that you know you like and then start adding new things. I like to try them on the weekends so I don't get stuck at work with yucky things.
