this is a recipe for corn casserole. It's a Paula Deen recipe, but I took out the butter (it really didn't need it!) and it is really good!

1 can of cream corn
1 can of corn (drained)
1 box of jiffy corn muffin mix
1 cup of reduced fat sour cream


Combine all in a baking dish. Bake at 400 for about 35 min. Remove from oven, top with 1/4 cup or so of grated cheese and return to the oven and let it melt.

Serves 10 or more, dependng on serving size, but it is really yummy and super easy! This is one of my staples for family gatherings and holiday meals! It goes great with a taco supper too!

I was the worst when I was a teenager. I once put turkey legs in the oven and fell asleep. My mom came home to find the house filled with smoke, me snoring away, and the turkey legs fused to her new baking dish. There was no way to rescue it. Needless to say, my allowance went to a new baking dish. I don't do that anymore.

Wow---I can picture the mess!!! I had a roommate once who left a couple of eggs boiling, and forgot about them when she went to work; the water all boiled away, and there was exploded egg EVERYWHERE!! I turned the stove off when I got home, but left the mess for her to clean up.
I'm glad your cookies turned out well; they do sound good!

I was making a peruvian wedding cookie (secret family recipe I got from a former employer). They are basically shortbread cookies with a very healthy dose of rum. You take one cookie spread a thin layer of filling on it and top with another cookie and then roll in powdered sugar. The filling is nothing more than sweetened condensed milk that you boil for 4 hours in a hot water bath (it actually turns to something very much like caramel). I let the water bath run dry and POOF it exploded all over the room. Our kitchen back then was 8 feet wide and 24 feet long. (It's shorter now because we made a small pantry at the one end.) I had that milk on walls, floor, ceiling, cupboard from one end to the other and some of it even got into the dining room. Needless to say Moms was NOT happy! But, I started over with the milk and was careful not to let the bath run dry and the cookies were delicious!

Oh my, Shari!! How did you make the can of milk explode??
My brother was a fabulous chef too, but, I have just never had a great interest in gourmet cooking; I stick with pretty basic things.

I made a can of condensed milk explode. Had no idea how far milk could travel! Or how hard it could stick. I don't know if I could do the flipping thing. I'm actually a great cook as is the sibling next down the line from me. Steve and I have been know to create some fantastic meals....he can flip, but, his friend who IS a chef taught him how. Steve won't teach me. He keeps me on seasoning and saucing detail.

Sure! Flip like a chef. I have professional cookware I got when I was earning good money and I STILL can't flip eggs w/o a spatula.

This isn't really a favorite recipe or anything ... but something I like to make for the kids for breakfast if we don't have time to really sit down and eat. We can eat it on the run if need be (even though eating on the run isn't a good idea)

I make them my take on Egg McMuffins (no this isn't McDonalds!)

Spray your pan with a little cooking spray (so you can just flip the egg like a good chef does, instead of getting a spatula dirty)
Make sure you break the yellow, or you will have yellow on your shirt.
I sprinkle with a dash of garlic salt and pepper
Toast a Thomas English Muffin (or any brand)
1 slice of American cheese
A couple of thin deli slice ham

And waa-laa .. there you have it! The kids (and I) love them, they get protein from the egg ... easy .. better then a Pop Tart or something ... and tastes great!

That sounds really yummy. I also like to take whole wheat tortilla's, spray them with cooking spray, sprinkle with cinnamon and splenda and bake for 10-12 minutes until the edges start to curl. Cut them into wedges and enjoy!

This may sound silly to some, but I just LOVE this.

I am following a low carb way of eating, and I miss terribly cheesecake, so I make what is called Bowl-O-Cheesecake.

You Take an 8 ounce package of cream cheese, 4 or 5 packets of equal, and mix them together very well. (easier if you let the cream cheese come to room temp) Then I add about a teaspoon of Davinci Raspberry flavored no sugar added syrup. (find them in the coffee isle, i also like the vanilla one)

I come out with a bowl of pink colored raspberry flavored cream cheese flavored stuff.. I put it back in the fridge and let it get real cold again.

Then when I have a sweet tooth, I walk by and eat a spoon ful...LOL, YUM!!

I like to make beef tips with london broil (it's fairly cheap).

You cut the beef into strips. And saute with lots of garlic and your favorite seasonings. Then you add pepper strips, sliced onions and mushrooms. Serve over pasta or rice.

That stew sounds wonderful too!!
When I wrote out the recipe, I forgot to mention that you should stir occasionally as it simmers....I have edited my post to add that.
I am going to try your stew too! Sounds like it could work well in a crock pot.

Thanks, Leslie. I have printed your chili recipe and can't wait to make it. Sounds really good! Here's one we like during the fall/winter months:

BEEF STEW

1 Pound Lean Stew Meat
1 Onion - Diced
6 Potatoes- Diced
4 Carrots - Sliced
2 Stalks - Celery - Sliced
1 Can Stewed Tomatoes
1 Can Pinto Beans
1 Can Tomato Sauce
1 Can Mushrooms - Stems/Pieces
1 Can Corn
1 Can Green Beans

Mix all in big pot and bring to boil. Turn heat to medium low and simmer for 30 minutes. Refrigerate Left Overs. We eat the left overs all week long if it lasts that long.

Make this a Healthy Choice Day!

One of my girl's favorite dishes I make is my meatballs and pasta { a cup of it is like 400cal.} I make the meatballs out of lean meat and i always get the low fat sauce to spice it up and I always add onions { I love spicy foods } Kitten

One of the easiest meals I make is chili.

1 lb. gr. beef
1 can condensed tomato soup
1 large onion, chopped
1 can beans (pinto, kidney, or whatever), drained
garlic (I use 1 tsp. minced garlic from a jar)
1 tbsp. chili powder
1 tsp. gr. cumin
dash oregano
few dashes of red pepper flakes (optional)

Brown beef with onion and garlic, drain fat.
Add and stir in remaining ingredients, heat to bubbling, then cover and simmer for about 30 minutes, stirring occasionally.

To serve, I put some shredded cheese on top, and sometimes add some salsa and sour cream.

It's even better the next day, and because it makes a very thick chili, it is a good filler for beef and bean burritos or enchiladas..... I get at least 4 servings out of it, but, I do live alone.

How about a thread where we can all post recipes of dishes or meals that we all like to make. They can be anything from a simple, throw together dish to a lavish meal.

This should be a popular and "delicious" thread! I know I am looking forward to reading it!
