Oh man, Cassie over at the blog "Back to Her Roots" just posted a microwave pumpkin cake. I made it last night and it was BRILLIANT! This morning I was going to have one for breakfast but after I had mixed the batter and looked at it, I thought : PANCAKES! They were yum, yum, yummy!
This is not exactly scratch cooking, but it's my absolute favorite dessert. Take one healthy choice fudge bar and spread a tablespoon of peanut butter over one side of it and return to freezer for a half hour or so. Tastes just like a frozen reese's cup, but lo cal, lo carb and so so yummy.

I was watching a Hungry Girl episode the other day and she made frozen smores. They are delicious!!
Use one graham cracker sheet, broken in half so you have two square, set aside. Lightly hand mix/fold together 1/4 C non fat whip cream, thawed (I like the taste of the regular, so that's what I use) 1 tsp mini semi sweet chocolate chips & 8 mini marshmellows
put the mix on one cracker, top with the other and freeze for about an hour.
