SO nice to have Al cooking for me this weekend while I recover from this trip. He made grilled salmon, whole wheat penne salad and the only watermelon our garden produced!

Cheryll, the old recipes are definitely better, and usually easier to make.
I tried a new one last night out of a magazine that the grocery store gives away. It was a skewered shrimp thing with penne pasta and red, green, and yellow peppers. Not too bad, but need to cut down on the peppers.
It called for a dressing that I had never used, now need to find some other uses for it to use it up. Maybe I'll throw together some garden veggies and pasta and use it on that.

Oh Susie! Sounds GREAT! I will have to try that!

Today I made peach cobblers and peach butter. I know, I know, but I cut the butter in half in the cobblers, and put honey and sorghum in both of them. YUMMERS!

Peach season is SO short and I love them so, so much!

How can they have an emoticon for doughnuts, but not for peaches? emoticon

Finally have all the vegetables used up or frozen in the house. Thank heaven we have chickens who love my veggies!
Made a Jorge Cruise recipe "Marinara Chicken Pasta". Instead of canned marina sauce I whipped up homemade and tastes fantastic. Calls for fresh basil & that made it so wonderful.
I have a photo of it on my Sparkpage.
Recipe calls for 1/2 cup pasta, 1/4 cup marinara, 5 slices grilled zucchini, 2 T chopped tomatoes, 1 T chopped fresh basil and 1 T sliced black olives.
This is so delicious & 386 calories!

Oooh, I've been seeing a lot of recipes for Hawaiian burgers lately! Yummers!

Al made dinner tonight,. He mixed some leftover grilled cod and potatoes and stuffed them into taco shells. He made guacamole and homemade Pico de Gallo to go on them, too. Very tasty! I LOVE potato tacos and the smoky cod added a really nice element!

I'm thinking I'm going to try a new recipe tonight....Hawaiian Pork Burgers. They look really good, pork burger topped with pineapple & ham.

Usually I make a full batch of the Salsa Chicken and freeze half of it. It's so versatile!

Tonight? I watched The Chew while eating lunch (Left-over Indian salsa chicken) and Michael Symon made a minute Pad Thai. Well, I get home late on Fridays because of Tai Chi, so I thought Hmmmmmmmmmmmmmmmmmm. So I had Pad Thai tonight! Yummers!

Okay, that was DELICIOUS! I didn't add the sour cream at the end of the inital cooking, but stirred in some coconut milk as I reheated it. Heated up some brown rice I made Sunday, and we're talking a tasty Indian meal out of SALSA chicken! emoticon

I started to make the SparkRecipe Salsa Crock-pot chicken, but when I smelled the cumin I decided to head towards Asia! I put Sambhar, Garam Marsala, Turmeric, ground Fennel seeds and Cardamom on the chicken, then made the salsa out of peppers and tomatoes from my garden, and onions from the farmer's market.

Add some garlic and GINGER, and I can hardly wait for Wednesday when I'll make some flat bread, heat the brown rice I made this morning, and put a bit of my cherry chutney on the plate.

My granddaddy always made his own yogurt! Thank you SO MUCH for this! I can see how a wooden spoon might put something yucky (maybe just flavor-wise) into the yogurt, so metal spoon is it!

I will let you know how it comes out. Yippee!!!

Blended with the peaches is soooo good! Topped with a little granola, YUM. Don't know about you, but it seems like the commercial yogurt is acidy and this isn't and of course the flavor is so much better, fresher.

Making crockpot yogurt is so simple....and to think I was a little nervous, lol

All you need is a crock-pot, 8 cups milk & a small container of yogurt (I used a plain non fat greek yogurt, all that's important here is the live cultures found in yogurt).

I used my 4 qt crock-pot. Turn it to LOW and add 8 cups of milk (I think maybe using whole milk will help it thicken better, I used non-fat. Next time I'm going to try a little bit of unflavored gelatin to see how that works).

Let the milk "cook" for 2 1/2 hours or the milk has reached at least 180 degrees. (I let mine cook for the entire 2 1/2 hours and then checked the temp)

Leaving lid on unplug and let sit for 3 hours or until milk has cooled to about 105 - 110, I started checking about 2 1/2 hours into the cooling so it wasn't a complete 3 hours for me,

Once it's cooled to 105 - 110, remove a cup and place in glass bowl or measuring cup, add 1/2 cup plain yogurt and mix well. Add this mixture back in the warmish milk and mix very well. Not sure about this, but I've read to use only metal or plastic utensils, no wood.

Very important: THIS WILL BE THE LAST TIME TO MIX UNTIL COOLED.

Put lid back on and wrap a thick beach towel around the crock-pot to help keep it warm and go to bed or let sit for 10 - 12 hours. (I doubled 2 bath towels and wrapped the crock-pot then put a folded hand towel on top)

In the morning unwrap the crock-pot and place in the fridge until your new yogurt has cooled, try not to shake it or stir. I left mine in for a few hours. Take it out, stir it up and enjoy!! Be sure to put 1/2 cup aside for the next time, you now have the live cultures needed. The yogurt is suppose to keep for a couple of weeks, if it even lasts that long.

If you have any questions feel free to ask. Let me know how yours turns out!!

I finally did it! I make homemade yogurt in the crock pot and it's really good. It turned out like a thick soup because I made it with non-fat milk but perfect for smoothies. It's good plain, slightly sweet and it tastes different (better) from the store bought kind. For my first taste I added a little honey & vanilla and WOW. Next step was to help thicken it some, so I strained it using coffee filters. This came out thick & creamy. Tomorrow I'm going to blend it with my fresh canned peaches for peach yogurt, I can't wait emoticon

Well, not COOKING! But I mixed a chopped Pink Lady apple with a chopped peach. Tossed in a few toasted slivered almonds and gave it a stir with a tsp. of Aquavit and triple sec mixed to gether and about a half tsp of honey. Then sprinkled with Lemon Verbena and Ginger Mint out of the garden. Yummers!

Al wanted to grill some chicken wings, so we had those and some green beans I'd gotten from the farmer's market and a few rings of pineapple. We also threw a few pieces of my homemade flat bread on the grill and finished off the cabbage/apple slaw from a few nights ago.

I tossed the green beans in olive oil that had simmered lemon zest in it. And I brushed the pineapple with run. Yummers! This is the year I am trying to become more grill savvy, so the green beans were a hit! Woo hoo!
