Moroccan Beef Stew


Ingredients
1 tablespoon vegetable oil
400g beefsteaks cut into small cubes
2 medium sized sweet potatoes, peeled and cut into small cubes
1 onion, finely chopped
3 cloves garlic, crushed
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1/2 teaspoon nutmeg
1/2 teaspoon cinnamons
1/2 teaspoon salt
1/4 teaspoon black pepper
70g chopped dried apricots
750ml salt-reduced chicken stock
400g chickpeas, drained and rinsed

Method
Heat a large saucepan on high heat. Add oil and cook beef in small batches browning the meat on all sides for around 3-4 minutes per batch and transferring to a plate when cooked. Now add the onion to the saucepan and cook for about five minutes.

Now add the nutmeg, salt and pepper, cinnamon, garlic and ginger to the saucepan with a teaspoon of water to prevent sticking. Cook for one minute then add the apricots, beef, sweet potato and stock. Cover and simmer for about one and a half hours. Finally add in the chickpeas and heat through.

Serve with a side of cous cous.

Worked hard today. Put in my normal work time then went to my friends house and cleaned it while she is on vacation. Needless to say I didn't feel like cooking so we ate out. Green chili sloppers. emoticon

We are going to invest in some frozen meat pies.
When we heat these, we will serve with a topping of home-made thick pea and ham soup or buttered mushroom slices.

apparently when the Brussels sprouts are quartered or halved, and then fried or roasted with butter, they are beautiful, then served with salt and pepper.

Sunday I tried a new recipe. I roasted brussel sprouts. I loved them, my husband didn't. He's not much for green veggies anyway. I keep trying though.

Yesterday the whole family came over to watch the Packer Game together.
I made a big pot of chicken soup. I don't have a recipe. My daughter-in-law wanted to learn how I make it.
Cook up the chicken in plenty of water to cover it. Add bay leaf, pepper corns and Mural of Flavor (you could use Italian herb blend). When it is good and cooked take the chicken pieces out to cool. Add a bunch of celery, onion and carrots, all rough chopped or diced. I also had a zucchini available yesterday which I added. Make your hubby remove the chicken form the bones and chop the meat up. or a kid if a big enough one is available.
When the veggies have cooked for awhile taste the broth and decide what flavor it still needs. Add bouillon, salt, pepper, garlic salt. Whatever the broth flavor seems to be lacking. I was happy that daughter-in-law "got that".

Then add the chicken meat back to the pot and make what my Mom called "dumplets" I think they have a real name but I am not sure what it is. Put about a cup of flour in a cereal dish. Add Salt pepper, dried parsley to taste. Then crack 2 eggs in there and work the flour and egg together. Add more flour if the mixture is still shiny. Have the soup at a fast simmering or boiling. Drizzle (or plop chunks) the flour mixture randomly into the soup. Let them cook and then the soup is ready.

My Daughter-in-law wants to learn how to cook without being dependent on a recipe. She is a peach!

This morning I had to get some of my fresh baby kale used. The frozen spinach will keep, right.
Coconut oil in the pan big handful of baby kale, wilt that down. I egg and 2 egg whites. Grab the whole cooked together thing and make it over easy, with some Mrs Dash salt free Garlic and Herb. That came up to approx. 150 cal. add an orange and coffee creamer and you are at about 227 calories for a big breakfast, made from scratch!

Tonight I threw together a no-recipe veggie dish. Started with healthy olive oil, then sauteed chopped sweet yellow onion, sliced zucchini and then added a big handful of cherry tomatoes, 3 smashed garlic cloves and Emerils Italian seasoning and a little salt. Then I had leftover artichoke hearts (half a can) and some leftover black olives and put those in. Turned off the heat and covered it. Served with a little pinch of parmesan cheese on top. I was wishing I woudl have had some muschroom for in this. How do we feel about canned mushrooms? I didn't have those either but I rarely buy them to have on hand. Do you cooks think they would wor just as well in a recipe like this? It was so similar to one of the Zucchini Saute recipes in Spark Recipes, so I used that for my tracking.

Since I went back to being vegetarian the two foods I miss most are chili and home made chicken and noodles.

Stove top slow-cooking roast with organic red potatoes and carrots with fresh bread. I might thaw some homemade apple sauce too!

Made a nice warming roast with all the veggies I had on hand and it turned out nice. Making a minestrone soup to have tomorrow. After a day, the white beans absorb all the wonderful flavors of the soup!!

Fish in coconut milk? Sounds like something new to try.

OH children! I made an amazing dinner, if I do say so myself! I poached cod in coconut milk and lime juice, sauteed a leek in a little sesame oil, simmered some ginger root in honey, then layered it all in a bowl over some thin rice noodles, topped with the sweetened ginger and some lime zest, thai pepper and sriracha.

I saw a picture of fish poached in coconut milk and thought, oh, that looks good! And it was!
