I make a lot of bread. Especially yeast bread. Often I shape it into rolls. I make quite a few biscuits, too!!

I really dont' follow a recipe for my yeast bread anymore. I just kinda know how much of what. I usually use honey instead of sugar. I think it makes a softer bread that stays fresher longer.

I often grind my own wheat or rye. So far I only add 1/3 to 1/2 home ground to the white. Anymore than that and hubby doesn't like it!

I made a standard 'white bread' recipe, but used whole wheat pastry flour, honey for the sweet, olive oil for the fat and it was dang tasty!

Still haven't made any challah but I did make cranberry pistachio biscotti (not bread but not a cookie either and oh so good with a cup of coffee!)

I just got in my high protein flour & malt powder for bagels, Yeah!! Can't find the flour here so had to order it from King Arthur. I know what I'm making this weekend :-)

I've been looking at a Challah bread recipe and it sounds so delicious!!
Never tried bagels but I would like to. They seem complicated and I want a whole day, lol.

I have my own sourdough starter, but I got a free starter from one of the bread web sites I visit soooo, I revived the starter and have been making sourdough everything! Bread, sourdoughrye bread, no knead sourdough bread, pizza crust, rolls, pancakes, pretty much everything I can think of, lol.

If you like sourdough and don't want to make your own starter, this is a really good starter

I love baking bread and made all our bread for a few years there but have become lazy more recently and bought breads. I have made various whole grain breads though my family's favorite is probably my challah, which is a family tradition. My mom made it every Friday morning for our Sabbath dinner when I was a kid. If you haven't had challah, it's very light and eggy, sort of like brioche. Very carby, I'm sure!

I also love to make bagels and have a wonderful recipe for them although I have to put it on the spark recipe calculator to see how nutritional it is....

Okay, after a trip from hell (see my blogs if you want the gorey details) I got home and what did I do? I BAKED! Lol! I made a potato based bread and used half of the dough for a loaf of bread and the other half for cinnamon rolls for Al since the cinnamon roll girl wasn't at the Farmer's Market last week.

It was amazing how baking bread made me really feel like I'd made it home!

(Well, pooh, no loaf of bread emoticon!)

I've been using my crock pot to raise the dough.

I didn't care for the texture when I cooked it for the whole duration.

I've been playing with Pitta bread. Perhaps today I'll try my hand at tortillas.

Yes I do!!! Just love it!! Toast came out really good so I decided to try french toast. I have to say that was probably the best french toast I've ever made. Normally with store bought bread or homemade baked bread the crust is....not sure of what word I should use here, but kinda hard, not this. I'm getting ready to start another loaf so we can have more french toast. emoticon

Oh my.....that's good bread! It stayed really soft but like she said in her article, put it in the broiler and let the crust brown some. It took me about an hour and 15 minutes, probably because I used some whole wheat flour. It's really good sandwich bread. (tuna is my favorite). Tomorrow I'm going to try toast. emoticon

I made the bread in the crock pot. It was GOOOD! I used two cups of whole wheat pastry flour and it took nearly 2 hours to cook. BUT, I think I should have started the crock pot before the bread went in to warm it up, and the whole grain will take longer. Still, it was great for a trial run!

I think tomorrow I'm going to use some of the refrigerated dough for pizza. Oooh, maybe on the grill? I have a leek & some goat cheese and, dang, I'm getting hungry. emoticon

Forgot to say that, like you, I hate turning on that oven in the summer, so this is a nice way around that!

That's really interesting. I'm going to try this method. With Summer here, it's hard to turn the oven on. I came across their website last week, intreged by the bread in 5 minutes a day.
I just bought a covered clay cooker and so far have made two loaves of bread. Amazing how good they have turned out, soft & chewy.

I made two different beer breads. One was a quick bread using just beer (coors light, which I could've used a stronger beer like Guinness) gave half to my friend and we ate the other half while it was still warm, and it was really good. No complaints from anyone, lol.

The other one I used the no knead recipe and used half beer/half water and the batter seemed to be to dry so I added about a 1/4 cup of each to help bring the batter to a more sticky consistency. Baked it this morning and it turned out really really good. I used a stronger beer (It was called Steel something?). The crust was crispy and the inside was soft & airy.

I made a round loaf and DH & I ate all the crust!! Now I have this square loaf with no side crusts. It'll be good in the morning toasted. emoticon emoticon


I have a question, I'm going camping over the weekend of St Patricks day and I want to make soda bread to go with our corned beef & cabbage. I don't want to bake the bread ahead of time and I was wondering if I could make the dough and keep it cool until time to bake? Soda bread is kinda like a quick bread with baking soda and no yeast.

I had to reply to this topic...the joy of my life!! Baking bread. Nothing better than a warm piece of freshly baked bread with butter!! YUM!! My Mom taught me how to bake bread with I was barely a teenager.

I love the fresh loaf and sourdough home web sites! Lots of good information and tips.

I make bread any which way I can and have time for, bread maker, no knead, hand knead and my latest is the stretch and fold method I found on Sourdough Home, so easy and fun.

My favorite loaf right now is a rustic rye cooked in my dutch oven.

To share a recipe that's super easy: No Knead


3 cups bread flour, (I've actually used all purpose before and haven't seem any difference)
1/4 tsp yeast (I use a packet of 7g/1/4oz)
1 1/2 tsp salt
1 1/2 spring water

Mix toghether dry ingredients in large bowl. Mix in water until the water is incorporated. Cover with plastic wrap and let sit 12 - 18 hours. (I'll mix in the late afternoon and let sit overnight and finish in the morning.)
After 12-18 hours, pour/scrape out of bowl onto a WELL floured surface flouring hands & fingers to help keep dough from sticking to much to you.
Next, pat dough down into about a 10x15 rectangle and then fold into 3rd's (take one side and fold about halfway over, then the same for the other side) and then in half (bottom to top).
Transfer to a greased bread pan, quickly molding the bread shape to fit the pan (whether it's round, square or rectangler). Cover with towel and let rise 1 1/2 - 2 hours then bake. Usually it's about 35 - 40 minutes.
Please keep in mind I bake in my dutch ovens so rising and baking times may need to be adjusted.

I just baked bread again today. I have an easy recipe that makes just 4 loaves. I also make rolls quite often. Bread will turn out every time if you practice.

I need some bread for myself so I`ll make some on Saturday. I will make some buns as I am going to a potluck on Sunday. I walk to church about 40 minutes so that is the easiest thing for me to bring.

I made some bread yesterday. I tried a different recipe. I am going to try some with an open-faced tomato sandwich for lunch. I tried the bread while it was still warm. It is a recipe I would use again.

My secret is beer!

I use honey lager or other strongly flavoured beer as part of the water in my brown bread and then sub some of the sugar for honey.

It is amazing and leaves a warm (but not "beer-like) flavour behind, and the loaf is much lighter in texture than when I use just water.

I`m going to buy some flour today. I have a feeling that prices are going to sky rocket soon because of the wars. At least that is the excuse. Yes I`ll keep my fingers crossed for the rye bread. Way to go on the try again. Try try again as the saying goes. I don`t know about the fun in cake decorating. I really have never seen it that way but maybe this class will help for me to see it differently this time.

I'm a pretty good cook and do very well with quick breads, but am never satisified with my yeast risen produce. My best friend is a great bread baker, which is fortunate when I vist, but it is also unfortunate, in that she lives a continent away.
Guess I will have to give it another go.

In Canada we had a long weekend this past weekend so that is how I spent my holiday Monday. I made 4 delicious loaves and some potato buns. So delicious. My bread is not make by machine. My muscles.

I do like making bread but it takes a long time to get to the finish product. The very best piece is the heal when it first comes out of the oven. When my mom made breat we always reached for that piece, put butter on it and let it melt. YUMMMMM

Oh, I'm so glad I found this team! I'm an avid breadbaker myself. I decided about a year ago to cut out as many preservatives and corn syrup as possible. The first thing I had to do was learn how to make bread. I use a Kitchen-Aid mixer and have found that Cook's Illustrated has some good reliable recipes. I've made a few from allrecipes.com and Better Homes and Garden as well.

For the person who lives alone and doesn't make it because it goes bad too soon... you can slice it and freeze it easily. I do this as it is just my husband and myself. Fresh bread will go stale after a day or two (makes you wonder what the heck they put in the stuff you buy at the store that makes it last for weeks - ich!), but if you slice it right after it cools and put it in a 2 gallon ziploc bag in your freezer, you can take one slice at a time. It will defrost on the counter in about 15 minutes.

I'll check out Fresh Loaf and Alton Brown, thanks. Never heard of Fresh Loaf. Used to see Alton Brown on Food Network's internet version - didn't care for him but I would love to know the science of it, that appeals, also Alton has a really good baked brown recipe.

I love making bread! My fiance and I were so upset to find out that breads, even the fancy expensive ones, have HFCS in them so we learned how to make our own bread. We make a loaf a week. He likes to use the bread machine and I like to knead it by hand. We buy flours and grains and seeds in bulk at our local healthy store (Sprouts) and have a lot of fun making bread together. Our weekday loaf is a 7-grain bread or a simple whole wheat. On the weekends I get crazy and make my fancy French breads and pizza doughs.

There's a website that I like called The Fresh Loaf. They have a lot of information. My favorite cookbook is Alton Brown's baking book. It has my favorite pizza dough recipe in it and Alton explains the chemistry behind bread making. Making bread is easier when you understand what you're doing and why.

At the age of about 12, I picked up and was reading one of my mother's cookbooks (Fannie Farmer) when I happened on a recipe for bread. "What?? You mean you can make bread AT HOME??" Within several days I was baking edible stuff and have spent the last several -uh- decades perfecting and exploring. I hold several blue ribbons at the county fair for my stuff, some of which I created. My current favorite is a foccacia recipe (i.e. it lives well in the fridge for days needing at least one overnight before using). But instead of doing a foccacia loaf, I grab off a piece and roll it flat on a well floured surface (the dough is quite sticky) and cook for about 1 minute each side like naan. Super fresh as you need it and ready in less than 4 minutes. The recipe can be found here: www.101cookbooks.com/archives/seeded

) but I really love the seediness of the first recipe. There is a sequel article on the TMEN site by the same authors as the 5 minute that I cited, but using whole grains and fun other stuff, but beginners might do best to try the white version first a few times to figure out the wetness of the dough when using this technique.

P.S. I forgot - I use 1 T. yeast rather than 1 t in the seeded flatbread; with all those grains and seeds, it seems like it could use the extra boost.

One of my favorite things to bake these days is bread. It's really satisfying in the winter, and of course it's much better than what I used to make, which was sweets, sweets, sweets! I can defiantly eat only one slice of bread, but with cookies...another matter altogether :)

Do any of you bake bread? I'd love to hear some of your recipes and tricks. I am somewhat in a rut. I usually just toss them in a pan to shape them, because the shape works well for portion control. And, I kind of make honey wheat most of the time--I'll add things like walnuts, oats, wheat germ, and flax seed, and after that I'm out of tricks! All of the breads taste approximately alike. I bake it about every 2 weeks, and make 2 loaves. We eat one and freeze the other for the following week.

What kind of simple daily-type breads do you make?
