ooh! Both recipes sound tasty. I'm going to tackle the casserole today. I'm so excited. I'll let you know how it goes.

Sounds wonderful Diane, I will have to try it for sure.
Last night I was lazy, so I mixed a can of black beans a jar of mild pace picante sauce, and some brown rice, with a green salad and called it dinner. I do plan on making it again, it was quite tasty.
Rinse the beans to eliminate some of the salt.

I also like this Lentil and Rice casserole: recipes.sparkpeople.com/recipe-detai

However, more people in my house like the soup than the casserole.

Put them in soup!

I have a recipe for Pea and lentil soup here on SP recipes.sparkpeople.com/recipe-detai
l.
asp?recipe=510650
It calls for tomatoes, garlic, basil, celery, lentils, and split peas, but you can use any small beans you like.

Yesterday I made it and added carrot, corn, more basil, salt, and oregano.

Thank you. Polenta? That's a new one. I have the others on my list as well, but most of them offer low dosages of fiber.

Lentils are fine, but not much taste. Any ideas?

Really. I'm open to other suggestions too. So if anyone can match the benefits of beans or come close, let me know.

I love beans! To me they have the same consistency as a carb but healthier. It does help curb some of my cravings too.

Ok, team. So we eat beans in my house a lot. It's the only thing I've found that really boosts our fiber intake for the day. Beans are also tasty and satisfying, so again, it's a regular in our house.

Outside of the small quantities in rubbage and some fruit, what else is there to cook for dinner!
