Day 3 of my 3 day diet.I'm not sure if this adjustment is gonna work like it used to but we'll see,I tried this a long time ago,like last year and did pretty good on it but I was working then.Dr's. appt today and I'm to start physical therapy,it's not near my house but I'm hoping it'll be worth the trip.Anyway farmer's market tomorrow can't wait to see all the goodies they're gonna have.

My daughter is now catching on to the healthier eating. She always ate white bread but now brown and other changes too. She wouldn`t eat my food because it was healthy but now that has changed.

I was terrified the first time I made it thinking it must be a typo... DH and both like mint though and I did use it all and it was INCREDIBLE. There is so much flavor and the sweet of the mint was probably working to mesh with the anchovy (which also adds a lot of salty) so you might want to cut that back a little too? If you change it please let me know what you think... would you change something else or was it perrrrfect.. It is a lot of chopping the aromas wafting from the herbs while preparing - so fun! Smile.

A smile can make it all feel a little better. So, I go and smile at myself in the mirror. Shallow or what? But it works... My name is Kathy and I'm Pennsylvania.

Kathy, those Lamb Chops with Mint Salsa Verde look excellent! Thanks for sharing!

Did you use as much mint as they call for? My husband's not a big fan of mint in savory dishes ( emoticon ).

The other ingredients are so flavorful, that I'm thinking I could cut back on the mint, or even eliminate and still have a tasty dish.

I cook from scratch so I can control the ingredients. No questionable sweeteners, fats, preservatives, artificial sweeteners, etc. It's healthier and it just tastes better!

My husband has a weird sensitivity to sugar - it makes his joints hurt a LOT. He can't eat sugar, molasses, artificial sweeteners, but he's OK with honey, pure maple syrup, and maple sugar. He discovered it 20 years ago. (I wonder how many people with aching joints could find relief if they just eliminated sugar or some other food that may be bothering them!) He's a bit less sensitive now; if there's a tiny bit of sugar he doesn't notice it.

So one of the reasons I cook from scratch is to make desserts occasionally that he can eat. Desserts are usually reserved for holidays or times when we're entertaining, but I like making something that everyone enjoys and my husband can eat.

I started cooking from scratch when I was living in Paris and had limited ingredients and a limited budget. I'll never forget the time I hauled a pumpkin home on my bicycle to make pumpkin pie for thanksgiving.

For me, the pleasure of cooking from scratch is in collecting the ingredients and the creativity of combining them. There's nothing like a colorful basket full of fresh produce.

The "light" breads are so expensive and there is very little rye bread in our area in the southwest. I make my own rye (and other breads) and yesterday for the first time made my own lower carb, high fiber rye that was wonderful. I added maize fiber flour in place of some of the white. It was great!
Where did you read about store bought breads?

I tried a great seasonal recipe the other day. Butternut squash pasta.
I'd pre-roasted the squash so it only took about 15 minutes. Yummy. - Oh and I added peas too for colour and flavour.

I cook from scratch because I can control the ingredients, and I am having a hard time finding pumpkin desserts with out the artificial sweetener, I gave up diet cokes 3 years ago to get away from that stuff, and I find a lot of recipes with it. I would rather have a smaller piece of something,with sugar than with artificial sweetener.

I love to cook and cooking from scratch is the best way. I dont have alot of recipes I would love to swap recipes with anyone that would like that also..
And it is a good way to relive stress. And I also agree that if I have to make it before I can have it then Im more apt not to eat it after I get it made.. Especially if its something sweet by the time its done I no longer want it my mind is on something new.

I was 16 when I learned how to bake bread. I am now 68 and still know how but try to bake the healthier ones. I still like to cut off the heal when it first comes out of the oven and put butter on. Just one of my vices. emoticon Oh so good.

What kind of flour do you use? Ive been using whole wheat for about a year and a half. I have not tried any other types of flour. Regular flour taste like paste to me. My main reason for cooking from scratch is to know what my family is eating. If I cant read a label I dont want it in my body.

My reasons:

1. I do not have high fructose corn syrup in my pantry.

2. If I have to MAKE the brownies, cake, ice cream, whatever, rather than walking to the kitchen and just grabbing it, I'm less apt to eat it.

I was raised in the kitchen, cooking, preparing, baking is a joy. I spent even more time in all my great aunts kitchens... I find it sad seeing home cooking no longer done or appreciated by many new young families.

WHEAT GERM FRIED CHICKEN
3/4 cup wheat germ
1/4 cup grated Parmesan cheese
2 Tbsps chopped parsley
1 tsp salt
1/8 tsp pepper
1/2 tsp Italian seasoning
1/4 tsp garlic powder
3 lb chicken cut up

Combine wheat germ, cheese, parsley, salt, pepper, garlic and Italian seasoning. Rinse chicken. Dip into wheat germ mixture. Place chicken in baking dish. Bake 350º for 55 minutes or until done.

Restaurant food does not interest me at all. I do go out occasionally just for a change.
A friend likes bar-b-que chicken that is done is certain grocery shops. How do you make a chicken like that so she doesn't have to buy it from the grocery store? I've never done one like that. I usually use my wheat germ recipe to bake my chicken in the oven but not a whole. It is in pieces.

When I cook it myself I'm not filling the landfill with styrofoam, plastic, waxed paper, etc..

The physical and emotional side effects I suffer through from eating processed foods aren't worth the grab & go convenience.

For me there is nothing like trying new recipes. I tried spinach turnovers. So simple. I used carrot, onion and celery and tofu and some spices for the stuffing instead of the spinach. So yum!

Since I am new to this team, I will add my reasons:
I just plain "like to cook"
My mother was a good "from scratch" cook
We eat more fresh fruits and vegetables that way
I control the sodium (cook w/o salt mostly)
Good therapy fore me
A certain feel of satisfaction
I knew I was feeding my kids good nutrition
And now I have taught my grandchildren to like
good, healthy food.
It certainly is more economical.
