I've been eating lots of blueberries. I'm so glad they are back in season. The winter blueberry prices were killing.

That sounds so yummy! i'm back on the bandwagon and trying to eat within my calorie range. I just registered for the San Francisco Marathon so I'm motivated to work out but I really need ot commit to eating right!

Today I had one of my favorite vegan breakfasts. I had:

1. edamame, tossed in a skillet with 2 tablespoons of water and 1/2 teaspoon of olive oil, and cubes of tofu I cut up
2. a slice of rye toast with almond butter on it
3. half a grapefruit, and
4. a cup of green tea.

Okay, if you like eggplant, try this. Wash and peel. Cut up into cubes. Chop two large onions. Cut up 2-3 scallion stalks. Cut up 3 cloves of garlic. Add a dash of sea salt - pepper to taste. In a skillet, heat 1 teaspoon EVOO, and sautee ingredients for about 3- 5 minutes on medium heat.

Great side dish, or as a nice between meal snack. Also good cold too. Try it.

I have let this group fall off, but it’s June 1st and I’m going to get back with it. Anyhow, today for breakfast, I had oatmeal, orange slices, fresh granola, and green tea. For lunch, I had some green beans, long grain rice with sautéed onions, a Boca patty, spinach, and a cup of blueberries. For dinner, I’m probably having a sweet potato, a huge salad (with romaine lettuce, carrots, cucumbers, green peppers, onions, olives, sliced pears, chickpeas), and for dessert I’ll make a smoothie with bananas, apples, Splenda, and peanut butter).

I made a veggie burrito from a SP recipe and EVERYBODY loved it...even my kids. It was a little high maintenance in that you had to stir it a lot after about two hours in the crock pot, but it was really yummy and my friend and hubby had two helpings when we had it the first night for dinner. emoticon emoticon

You are inspiring me to be more creative in my eating! Spring rolls sound so good and I'm motivated by the fact that you made your own (I would probably pay 3x as much with the store bought ones). I've only ever had the pre-made boathouse green smoothies before since I'm a bit scared to make my own but I'll try one this weekend. Thanks for sharing!

I made a homemade veggie spring roll. I found the wrappers at whole foods. I wrapped shredded cabbage, shredded carrots, rice, spinach, and onions. I sprayed it lightly with a non stick spray and baked it in the oven for about 20-30 minutes @ 350 degrees, turning it over halfway through.

I had a salad

And I had a green smoothie… in my blender I used 1/2 cup of almond milk, handful of blueberries, strawberries, banana, and some pineapples, added 3-4 tablespoons of Splenda, a teaspoon of vanilla, and a 1/2 teaspoon of coconut, with about 5 ice cubes. YUMMY!

if you like lentils vegetarian times had a curried lentil soup in its november issue that was really great. it should be on their website by now. there wasn't a ton of curry but it was so light yet filling.

I made a great asparagus soup the other evening. I got the idea when I dined at California Pizza Kitchen, and there is a cream-less, meat-less asparagus soup on the menu.

I got a bunch of asparagus, pureed it in my blender. I moved it to my pot and added a smidgen of olive oil, and stirred in some vegetable broth to smooth it out over medium heat. When it was smooth, I turned down the heat, and added 2 cloves of minced garlic, 1/2 teaspoon of basil, and a pinch of time and let simmer for about 15-20 minutes. I added a dash of salt when it was about done and it was delicious. Hot soup is especially good this time of year with all this cold weather everywhere.

Anybody have some good winter soup/stew recipes? It's getting cold out and I'm always in the mood for something warm to eat for dinner. Simple is best and I don't have a crock pot so something that can cook up quick. I made a really good lentil sweet potato moroccan stew last week so I'm looking for similar things.

Just a "nothing in particular" thread for general musings, support, and updates. We didn't really have a thread like this on the forums so I thought I'd start one emoticon

Friday: I weighed in at 135 today which is a bit higher than I'd like to be if I want to reach 120 by January 9th (my half marathon) but I did manage to run 9 miles today and am already feeling less bloated than post-yesterday's feast. I'm spending the rest of my day working on law school applications, running some errands, and maybe even vegging out and watching a movie later tonight.
