broccoli and various squashes, though i'm slowly coming around to zucchini. broccoli is a vegetable i seem to be growing out of, oddly enough. lately no matter how it's prepared i find it disgusting.
i used to hate brussel sprouts but i had them once steamed with fresh garlic and olive oil and they were so good. they tasted exactly like cabbage (which i love). i like to roast them with garlic and then squeeze lemon juice on them. really good!

speaking of irrational veggie dislikes, anyone else only like veggies cooked a certain way or in a certain form?
My friends always laugh at me for this but I HATE peas unless they are in a pod (I love sugar snap peas for example but hate peas out of the pod in soups and stuff, i'll always pick them out). However, I can tolerate peas in chinese food (ie fried rice) and Thai food (curries).
Same for corn. Can't stand corn kernels but I love corn on the cob. Silly? Probably yes :)
I LOVE artichokes! My friend trims them, steams them, and tops them with bread crumbs and garlic. All we do is dip the leaves in melted butter and scrape the yummy goodness off with our teeth. Of course, a vegan person could melt some Earth Balance for dipping...

I love vegetables and I canít say that I really hate any of them, although I can say that the one that I like the least is brussel sprouts. I never cook them myself but would probably eat them if someone else served them for dinner. Besides that, I love vegetables.
