I dunno, I think zucchini big enough to make pizza crust is bigger zucchini than I want to eat. I have a pizza recipe using portabella mushroom caps for the crust that I want to try.

bought zucchini today was gonna try the pizza.. but the grocery only had small ones so theyre gonna be sliced, seasoned and baked to a crisp for snack chips!
I also bought a beautiful spaghetti squash.... anyone know how to cook those things.?.lol I assume baking is the preferred method. And I think I will make a basil pesto with olive oil, fresh basil and some fresh chopped garlic. Everytime I looked at a marinara sauce it was loaded with carbs. atleast more carbs than I wanted! emoticon

Either way Im just happy to try some new things Tuna Salad on toasted Carb Smart wheat bread is delicious.. but not if youre eating it 2x a day..hahhahahaha

Good ideas! I like to make a zucchini parmesan, like eggplant parmesan, but with zucchini cut lengthwise, sauteed a little, then baked in the oven with tomato sauce and cheese. Pretty yummy and low carb healthy too!

I am so addicted to Pinterst. I have a low carb board. I have made the cauliflower pizza crust and breads sticks, very very good.
Cauliflower mac and cheese, also very good.

I found a lot of substitution recipes on www.pinterest.com under carb free food..
There was an abundance of them and Im making a new grocery list right now!

CDC - those cauliflower-tots are something I'm going to try. Keeping the carbs down hasn't been a problem for me, but incorporating more veggies has been. Also, I'm married to a vege-a-phobe, so it'll be fun to see how this recipe goes over with him. Thanks for sharing. 8-)

Always exciting when you figure out swaps! I use cauliflower mash as a sub for grits too. Another is "fried" radishes...fries made out of jicama....mmmmmm

HOLY COW!!!!!
I have been searching the web for healthy carb free recipes... and what I found really threw me for a loop!
Substituting veggies for the "bread" and "taters" was a thought that never entered my mind! But if you use spaghetti squash in comparison to the lowest carb whole wheat pasta..You're cutting your carb intake by 2/3! 8 net carbs in spaghetti squash..I think the last time I looked at the pasta it was 20-30 per serving..
Zucchini (which has a ZERO carb count) cut about 1/2 inch thick grilled til a lil tender, placed on a baking sheet sprayed with a lil olive oil.. is the perfect PIZZA CRUST.. add a tbsp of marinara or pizza sauce cheese and pepperoni....and bake at 350 til cheese is bubbly!

Boil Cauliflower til tender drain and toss in food processor (while still hot) with some cream cheese, shredded cheddar and chives. then salt and pepper to taste..tastes like mashed potatoes... pipe the mixture onto a baking sheet and bake at 400 til golden brown and you have tater tots!
