I have been searching the web for healthy carb free recipes... and what I found really threw me for a loop!
Substituting veggies for the "bread" and "taters" was a thought that never entered my mind! But if you use spaghetti squash in comparison to the lowest carb whole wheat pasta..You're cutting your carb intake by 2/3! 8 net carbs in spaghetti squash..I think the last time I looked at the pasta it was 20-30 per serving..
Zucchini (which has a ZERO carb count) cut about 1/2 inch thick grilled til a lil tender, placed on a baking sheet sprayed with a lil olive oil.. is the perfect PIZZA CRUST.. add a tbsp of marinara or pizza sauce cheese and pepperoni....and bake at 350 til cheese is bubbly!
Boil Cauliflower til tender drain and toss in food processor (while still hot) with some cream cheese, shredded cheddar and chives. then salt and pepper to taste..tastes like mashed potatoes... pipe the mixture onto a baking sheet and bake at 400 til golden brown and you have tater tots!
