At first I thought it was strange too :) and now that I use avocado oil I see it at more stores. I buy mine either at Whole Foods or Trader Joe's. Most health food stores might carry it. The local Ralph's near me stocks it too.

No need to apologize. You didn't do anything wrong and are in the right group. This is not a low carb group but a good carb group. Some of us eat more carbs than others because some of us can tolerate more carbs than others. We do have many members on low carb but also many members on plans like South Beach. I keep my net carbs under 150gms a day. Others may do more and some a lot less. What we usually agree on is that low glycemic veggies can be enjoyed by everyone. Some of us eat fruit, some eat nuts, some eat seeds, dairy, whole grains, etc. What we try not to eat are junky carbs like commercial doughnuts/cookies/candy/etc.

Thanks for the recipes. They will suit many of our members and others of us just adapt them so suit our own needs.

I don't have a problem with people using artificial sweeteners. Some people don't like to use them as they feel they cause cravings. Others don't like the way they tastes or feel they are sensitive to them. In studies, some people will have a mild brief rise in blood sugar after consuming artificial sweeteners until the body realizes a short time later that it is not actually sugar. Artificial sweeteners are considered safe unless you have phenylketonia and consume aspartame. It's a personal choice. I use them sparingly, in moderation. I don't suck them down all day long.

I am new to Sparks People. I want to apologize to the people on this post because I just realized you are searching for low carbs cakes and desserts. An honest mistake when I gave you the Apple Tart idea - sorry. While I try to eat the good carbs I also do try to eat a balanced diet and I include carbs in my foods.

So, I have another recipe that might work better on this post :)

Lemon Pistachio Cake

2/3 c avocado oil
1 c sweetener [ any will do ]
4 large eggs
1 1/2 c shelled pistachios
1 c almond flour [ I like to make my own ]
2 1/2 tsp baking powder
grated peel from two lemons

The recipe is best when made the day before. Measurements are for a 9-inch spring pan.
Pre-heat oven at 350.
Beat sugar & eggs until light and fluffy. Add avocado oil and mix.
Chop pistachio's in the food processor until fine; add to eggs with lemon peel and baking powder.
Add almond flour. Mix well.
Cook for 50 minutes. Cake is done if it springs back when poked lightly.

I like to put a few blackberries sprinkled with lemon juice on the side as a topping. But this would add to the carbs.

Thanks for the Pumpkin pound cake recipe. Can I use Stevia?
I have been low carbing for 2 weeks now and I miss breads/cakes. I just started collecting recipes and this one is perfect.

George Stella's Low Carb Pumpkin Pound Cake

From: Livin' Low Carb and Lovin' It


Ingredients

* Vegetable oil spray, as needed
* 2 tablespoons wheat bran
* 2 1/2 cups almond flour
* 1 1/2 cups sugar substitute (recommended: Splenda)
* 1 1/2 teaspoons baking powder
* 1 1/2 teaspoons pumpkin pie spice
* 1/4 teaspoon salt
* 7 eggs
* 1 1/2 cups canned pure pumpkin (not pumpkin pie filling)
* 1 1/2 teaspoons vanilla extract (no sugar added, imitation is usually best)
* Equipment: 9 by 5-inch loaf pan
* Serving Suggestion: homemade sugarless whipped cream


Directions
Preheat oven to 300 degrees F.

Spray the loaf pan heavily with vegetable spray and sprinkle with the wheat bran, shaking the pan to coat on all sides--this will prevent sticking.

In a bowl whisk together the almond flour, sugar substitute, baking powder, pie spice, and salt. In another bowl, beat the eggs and then whisk in the pumpkin and vanilla. Combine the dry and wet ingredients and stir until combined. Pour the batter into the prepared pan and stir to combine.

Bake until golden brown and a toothpick comes out clean when stuck in the center, about 1 1/2 hours. Cool completely before removing from the pan. Slice into 12 portions.

My birthday is in a month and I would love some ideas for a cake replacement that my co workers would eat...
They always go buy a huge cake and everyone eats it, I would like to take a healthy snack that or platter or something that would be good and not a waste....any ideas?
