I am glad to hear that. I had a hair cut tomorrow and I hate it. I suppose it will grow again.

I had a chance to go whale watching with friends but the boat was already full. They saw
loads of whales too. I ended up cleaning the house. i feel as though I am getting my cold back as I have started coughing again. I have to rest as I'm flying to Sydney on Wednesday and i

I am not feeling as tired as before but I find I do need to slow down
I work one more day, then a 2 week break. I felt useless at work today
as I had to do some data entry and stuffed it up,even though I corrected
the error, I was too tired and I just get petrified when I use the computer
at work. Ended up doing laminating. My supervisor gave me a look.
La di da - I'm ready to hand in my resignation.
I am working with an autistic child in Grade 1 and it's really getting me down.
I am losing it as I have had no training. All the other Aides and Teachers pass
him on to me as they can't be bothered. Shouldn't complain. There are 4 of us
arounfd the same age and we have had enough and will all be leaving after next Term.
It's late and I'm sorry for complaining but I had to get it off my chest.Goodnight now. emoticon

I have more energy now and am less exhausted. I still need to increase my exercise and eat better but I'm not going to push myself as I'm still sore. It will be a while before I'm back to 100%.

I am thinking of what to make for dinner tomorrow as my son is going out.
I feel a lot better today but I had another clove of garlic just in case the cold
and sore throat have a think about returning.LOL.

The crust is thin and crispy. I used one cup of grated cauliflower, 1 cup shredded cheese and 1 egg. I added seasoning and my cauliflower yielded 2 cups so I put the remainder in the fridge and we said if we liked it we would make it again. Next time though, I will let the base cool before putting the filling so it won't be soggy. !5 mins for the base at 400 F and I only cooked the whole pizza for 10 mins.

I think it would be so cool to be able to do that. Those sheets are so thin. A lot of diets recommend phyllo dough over regular pastry.

I have not tried the cauliflower pizza crust. Is is thin too or a thicker crust pizza?

My phyllo doesn't turn out as thin as the bought stuff, but I do get it pretty thin.
My invention today was the cauliflower pizza crust and I added roast vegetables
on top and feta. pretty good and my son asked me to make it again. He was the
one who found the recipe.

I make my own mustard too. When I make salad dressing I also put in
some mustard. SHAWN has found a recipe for ranch dressing and I have
made this as well. It's great. I had some phyllo pastry left after making
spinach and feta pie and so used some fresh strawberries and microwaved
them then put in some almond meal to soak the juices and wrapped it in
the phyllo and made some triangles. Yummy.

The rare times I use any kind of butters like that, it's usually almond butter. At our Market of Choice, they have a machine there and you can make your own and buy as much or as little as you want. I usually buy about 1/2 cup at a time so it doesn't get rancid. And you can do the same with peanuts, but I seldom do that, although i have and it's good. both are so much better than the stuff in the jars to my notion.

If you have a food processor, just buy peanuts. We buy them in bulk and they last a long time in the pantry and making peanut butter is as easy as popping them in the food processor and running it until you have the consistency you want. We store the peanut butter in the fridge where it does not separate.

I buy less and less processed food but still like things like mustard. I know you can make your own but I don't really want to and there are usually so few ingredients in mustard. I also like things like Worcestershire sauce. And cheese. Bacon, pickles, olives. I use some low carb ketchup. These are some of my main ones. I doubt it I will ever give them up.

I wish we had access to fresh peanut butter here. Our health food store is pretty tiny and dismal. I usually just eat nuts and seeds instead of nut butters.

I agree MOONCHILD. My son worked in a big hotel kitchen and saw what goes
into margarine and has told me never to buy it, so we use butter, although not
that often. Morticia, I hardly buy processed food. Even the peanut butter I get
from the health food shop because they do the PB on the spot by using peanuts.
My Greek background has taught me to use everything from home. My gran would
not even buy canned tuna as she said canned foods were 'processed'. When we
were growing up, everything we ate was in season. How times have changed.
I'm so glad we are eating fresh wholesome food and produce.

Thanks, we are always eager to learn new things. I knew that about low fat foods. They often do contain more sugar but there are some exceptions to the rules. I always read labels on everything. Even some good products change over time. I don't buy granulated sugar except for my hummingbirds. I knew that about the peanut butter. It has the same calories too and sometimes more. I prefer to get my carbs naturally too from fruits, veggies, dairy, seeds, nuts, and beans. That is why I tend to try to avoid processed foods but I am far from perfect on it. At least the bulk of my diet comes from healthy foods.

I think low-fat anything has more sugar and other junk than regular. Fat carries the flavor, so they have to replace it with something. Gimme the fat, you can keep the sugar!

From what I see of how 2nd book, he says we should not go for low fat foods from supermarkets (milk is a prime example) as they add sugars to make them low fat. He advocates eating the food in its natural form.It is really popular in Australia and a lot of peple have lost weight by just cutting out sugar. I am still trying to cut out sweets and have lost
almost 3 kilos. It is not hard once you get the hang of it.I went to a Bridal shower on Saturday and was able to bypass the sweets and just had 3 tiny finger sandwiches. I am getting sugar
from my fruit. Do you know that low fat peanut butter has more sugar than regular?
I will post some more whn I find out some more things that make sense.Lol...

Very interesting though I find his train of thought confusing. Can I assume he is advocating training the palate to prefer less sweetness by giving them a less sweet form of sugar? The name is kind of confusing in reference to what he is saying. Sweet Poison would be correct but still sugar is still sugar. Glucose can be used by the body immediately. Fat and protein have to be processed so they are metabolized over a period of time at a slower rate. Glucose tolerance tests are used to see how fast and how much your blood sugar spikes in response to a bolus of glucose. Out of control blood sugars are very damaging to the body. In paraphrase, you consume massive quantities of glucose, your blood sugar soars, you get a dump of insulin, your blood sugar crashes, and you body is triggered by hunger for more sugar. Do you think he advocate a continuous supply of sugar like some people do in order to prevent crashes? This is old school and M.D's are getting away from that method more and more by carb counting and lower carb diets. I'm looking forward to what you find out when you finish the books. I have not seen these books.

I was just going through Gillespie's book "Sweet Poison' and he says , quote"It is glucose the other half of sugar. Your body converts all carbohydrates (except fructose) and most protein
to glucose anyway. Your appetite-control system is perfectly adapted to dealing wth glucose. In fact it has evolved on the assumption that what you eat will either be glucose or be converted to it." He goes on to say that it is hard to find pure glucose and that it is sold as dextrose. H has recipes in the book which also have been made with dextrose and mentions it is not as sweet as sugar or artificial sweetneers. So there is a bit of an explanation. He is not a doctor.
Anyway I was given this book to read (borrowed) and a lot of the statistics make sense.
Anyway when I finish both books i will be able to have a better understanding. His second book is called 'Big Fat Lies" and refers to the myths about low fat foods...I'm still learning.

OK, I looked back and this David Gillespie, author of Sweet Poison, doesn't claim to be a doctor. He's really against fructose, so that's where the dextrose comes in. You have to pay to see most of his site (or buy his book for more info). Don't think I'll be doing that...

Dextrose is a simple sugar - a monosaccharide made from starches, usually cornstarch but it can also be made from rice, potatoes, etc. It's glycemic index is 100. LOL.

Thanks Linda, I'll have to check out those websites. I'm just now coming off of a strict elimination diet, so haven't done any exploring. I get to add one new food a day starting tomorrow. I'll finally get to eat some of the veggies in my garden besides tomatoes!

Goanna, I don't know why your cream curdled. I'll have to ask my doc about dextrose. It certainly is more affordable.

Moonchild, that is an interesting website. I subscribed to it even though it's not dairy free. I'm not sure how well I'll do with GF/low carb baking, but DH is a snacker, and he's going to end up diabetic if I don't do something. I hope we can get out of Costco today without buying huge boxes of cookies and grape juice.

I think stevia brands vary wildly. I don't usually mind the taste. At the beginning of this weight-loss protocol when I was very hungry, my doc suggested eliminating it on the theory that anything sweet can cause hunger and/or cravings. I did for awhile but I'm using a little of it again now. When I get really sick of plain water, I put half a lemon or more in it and a few drops of stevia and it really helps to get the water down.

I've seen Steviva mentioned quite a few times but have yet to try it. so far I've shied away from low-carb baking, but I'd really like to try those oopsie rolls soon. I just saw a recipe using them for French toast that looked great. I'm really enjoying this website for great, creative low-carb recipes, and she's really funny, too:

I just want to say that I tried heavy cream in my coffe and it curdled. Anyone know why?
Also, about artificial sweeteners. I have just read a book called sweet poison (sugar) and the author, David Gillespie says sugar and all sweeteners are a no no.He says stevia is ok but reccomends dextrose which is $2 a kilo in the supermarket. I haven't tried it yet.

I don't drink sweetened tea or coffee either, but I do like cinnamon sugar on my toast and there are some recipes that call for sweet glazes or sauces. My doctor has strongly recommended that I avoid all artificial sweeteners and sugar. He wants me eating fruits and lots of veggies, but if I must have something sweet, then I'm allowed to have stevia.

I've stuck to his recommendations for a month now and the changes are amazing. Can't wait to see what happens in the next month.

I've never tried Stevia, I do have a couple of packets (free samples) here, but have never opened them. I drink coffee and tea without sweeteners in them and the Torani syrups are all I use and they are sweetened with Splenda. And I don't use much of that either. To me, they're moreof a flavor enhancer.

I seldom drink any soda's either, they just don't appeal to me anymore.

I didn't like stevia at first either. Then I bought some Sweet Leaf Valencia orange flavored drops. This week I put just a couple of drops in a pot of red cabbage to make sweet and sour cabbage and it was excellent. I find that I have to use a fraction of what most people use and then it tastes great.

I've since found out that most people recommend Sweet Leaf drops for liquids and Steviva for baking. I had to order the Steviva from Amazon, so won't get to try that until next week. In the meantime, I'm going to get some Sweet Leaf chocolate flavored drops to try in a barbecue sauce recipe. I can get Sweet Leaf locally.

My first and only (so far) baking experience with a stevia blend was horrid. I had to throw the whole batch out. But, I'm not giving up yet. Fit_Artist on the Nuts for Coconuts team has some recipes that I really want to try.

I'm not a person who likes bitter tastes much like some people do. I have a lot of dislikes as far as foods go. Things that most people love like Ranch dressing, mayonnaise, sour cream, etc.

I think the trick with stevia is to use very little. If you first train your sweet sense to not need things very sweet, you will be able to use a small amount of stevia and it will taste good. If you try to use the amount of stevia that would be needed to make things as sweet as most people want, it tends to be bitter.

I was disappointed in the taste of stevia. I don't like it at all. I use sucralose but I don't use a lot of artificial sweeteners period. I don't think drinking diet soda all day and artificial flavored snacks is a healthy diet. I'm the same way about foods flavored with olestra and sugar alcohols. I gave them a try and my body hates them. To me that's a good judge of whether it's okay to use something or not. Do you personally tolerate it or do you have cramping, blood sugar spikes, hunger? I know plenty of people have no problems with them but I do.

I'm a little ambivalent about stuff with sucralose, so I think I'll invest in some flavored stevia for my shakes and see how that is. I used to have a restaurant, so I did a LOT of cooking. Now I mostly cook for my daughter's family over in the house. I rarely eat what they do, so I do some simple stuff for me. I really like doing soups and stews. I have some nice grass-fed short ribs in the freezer that are calling my name!

The protein shakes have helped me a lot... It's always there, ready to whiz in the blender, I really find it comvenient. And there is a multitude of flavors since I use the Torani SF syrup which gives flavors and fruit.

We won't discuss the fact that I'm usually too lazy to cook... It just seems to not interest me anymore, I think because the things I used to like to make weren't low carb by any stretch of the imagination, so guess this is better way for me. I do cook more during winter, but it's usually crockpot stuff. You know - cook once and have a weeks worth.

I only do the really low-carb ones, so not much sugar at all. I add a little stevia to the pea protein one, which is not sweetened at all.

I'm somewhere in the middle, and it may depend on the amount of protein and fat. I tend to do better with them later in the day. They don't hold me really well at breakfast, or at least I seem to need lunch a bit earlier.

I'd imagine beets would work okay in a smoothie - at least they wouldn't turn it green! :)

I prefer to have my spinach on a plate with some salad dressing on it -

the chewing or lack of chewing doesn't bother me for one or two meals, but couldn't do it all day. Even when I do a smoothie at another meal besides breakfast, I'll usually have something crunchy with it - bell pepper strips, carrot strips or something like that.

I prefer to eat my vegetables as well and my fruits for that matter. I get great pleasure from the chewing sensation and it helps my satiety by taking longer to consume so I have time to know I'm full. I'm not a sipper of liquids so I could down one of these protein drinks in a couple of minutes and still be looking for something to eat.

I agree. The color is awful!! I drink it in a large plastic cup with a lid. Then once I start drinking I forget all about that horrible green slime color! LOL I just like knowing how healthy it is and the spinach or kale (middle stem removed as that is what is bitter) don't add any kind of taste. So it is an easy serving of greens, iron, etc... I also like a red smoothie:

1-2 cups water
1/2 beet
1/2 lemon peeled, keep white pith
1" chunk ginger root
1 cup strawberries
2 tbsp. flaxseed meal
1 scoop vanilla protein powder
1-2 handfuls spinach or beet greens

More like a berry lemonade.

I do add 1-2T flaxmeal occasionally, but not always. I did the spinach a time or two and it's not the taste that bothers me, it's looking at the horrid greenish color.. Looks like something from the Exorcist!! :) - The Torani's are sweetened with Splenda, so my personal thoughts are that it's okay. I don't use it in general for anything else as I drink coffee black, so a TBSP or two a day I don't worry about. And I like my avocados too well with salt & pepper on them to hide (?) them in a shake! I've never tried them in a shake actually.

EWEFLUFFY - Thanks for sharing. That is pretty much the shake I've been making, but I also add about 1.5 cups of spinach or kale and 2 tbsp. flaxseed meal. I don't add the egg, but often put in half and avocado as it helps to make the smoothie creamy. I guess your flavor is coming from the Torani syrup. I have been trying to limit my artificial sweetener to 1 packet in my morning coffee. However I know it would give the smoothie a bit more flavor. I'll add it this week and see.

Right now I am using the EAS and Muscle Milk brand of whey protein powder. I like them and get them for a reasonable price at our Costco. Thanks for the info. on the strawberry flavor because I was going to try that, but will stick to the other flavors.

Karen, I start out with one scoop of Precision Engineered Protein Isolate powder (I get it at the Vitamin Store. It's really good! I use water usually as a base to put the powder in. To that I add one raw egg, 2T HWC,sometimes 1/2 cup strawberries, mixed berries or blueberries a little Torani SF syrup to enhance flavors, often times I'll add a TBSP or two of Flax meal. (or sometimes I put in about 1T coconut oil). Then I whiz it all in the blender until it's creamy and smooth.. Very good! ( I don't use both coconut oil and HWC, I choose one or the other).

I keep the powder here in both Chocolate and Vanilla (if you find it do not buy the strawberry, very artificial tasting and I see now they have a fruit punch flavor as well, I've not tried it) With the chocolate and vanilla I can make almost any flavor imaginable -

I change it around and put different things in it as the notion strikes me. Sometimes I'll sprinkle a little Crystal Lite for flavor, occasionally I will use 1/2 cup sweet cherries, but more carbs with those. If you eat bananas you could add 1/2 banana, etc.. use your imagination.

As I said, I get the protein powder at the Vitamin Store - you can order from then online. I don't know if the "Precision Engineered" is their brand or if you can buy it other places - we have a store near me, I just buy it there.

Hope that helps you - I've been doing them for breakfast for several months now and still am not bored with them. A blender or even immersion blender gets them nice and fluffy and you can add ice to thicken as well.

If I use cream in anything (and I love cream!) it's always heavy or whipping cream, and I try to find one without carageenan, which is pretty difficult. I don't think I'm sensitive to it, but some people are.

I don't use cream in my morning coffee, but sometimes in the afternoon I'll make a coffee drink with protein powder and I'll add 2T heavy cream for the creaminess. and I do use a TBSP or two in my regular morning protein shakes too sometimes. Either I'll put some cream in them or I'll put an egg (raw) in them and blend it all up.

When I was drinking coffee, I used half and half. More carbs, but heavy cream was just too much fat for me to tolerate in the morning.

Remember, nobody can go back to the very beginning and make a brand new start, but anyone can start here and make a brand new end.

I use half&half, because I don't really like cream. I like to taste my coffee, but I want to put enough in it to cool it off a little. If I used cream, it would only be a couple of drops.

I will get the fattest stuff I can find. Costco sells a half gallon of heavy whipping cream that tastes great in a breve.

What kind of cream do you add to your coffee? Is it whipping cream, light cream or what. I assuming we're looking for the most fat. I looked at it at the grocery this morning and got totally confused. Appreciate all input!
