I don't know that I've ever eaten an omelet. LOL.

Hi Morgan! Cat pic is of my kitty, Moonshine, who passed in Jan. 2009. I love spinach and tomato omlets! I can add some of the Lasagna we had tonight into the mix for the cheese and meat too. Thanks! I wouldn't have thought to add the Lasagna....

minute muffin, sounds yummy! emoticon

Hi peanut. I love the cat pic. I just set aside some ground turkey with tomato sauce that I had left over from some lasagna that I made. I'm going to add it to some eggs and spinach tomorrow for an omlet for breakfast tomorrow morning. It's hard to get creative with low carb breakfast. The same old bacon and eggs get boring. Peanut, you might also want to try the minute muffin. I mix mine with low carb flour along with the flax seed mill. It's yummy.

Smart Carber.

Thanks everyone for your ideas! I have lots of different fruits and veggies in the house and measure them out according to the Spark Nutrition guide. I just read a Spark article on carbs and it has a list with low carbs AND how much of each food.

Called: Carbohydrate-Counting Chart for People with Diabetes

I'm going to print it and keep it with my Carb shopping list!

Again, thanks for your ideas! I like no sugar apple juice. And occasionally eat leftovers for breakfast, just have to be sure it's MY left overs! LOL!

If you should get tired of fixing your microwave oatmeal with water or milk, try using Sugar Free Apple Juice. I do that once or twice a week and have my milk on the side. Once cooked, I add fruit or some applesauce. That gives me help in getting my fruits in for the day.

When the heat index was so high this summer, I would fix it that way for Dinner. I can eat breakfast foods any-time.

Now that I know that carbs are the enemy, and I have my GI food list, I found a good breakfast for myself and got down to basics. I remember this from when I was a little girl and my Dad still eats this almost every day! Oatmeal with applesauce and cinammon! I got out the box, read the directions for the microwave and it couldn't have been simpler. And it sure filled me up. I thought I would hate it, but it was good with the applesauce and cinammon in it. (all measured, of course) And I lost 2 lbs. in 2 days using the GI food list and my Nutrition Tracker! I'm Sparkin'! emoticon

I can't wait for my doctor to see I'm losing weight (see him at the end of the month)!!!! Thank you, friends!
