I'm eating leftovers tonight! (LOL that I'm excited about that.) I made dinner for my daughter and her babysitters on Saturday night, and I haven't even tried the meal I made yet. I used my pressure cooker--a relatively recent addition to my kitchen stable. I like it. It's not a cure-all, and it still takes time, but it's a faster way to get a healthful meal on the table when I don't have time to do it the night before. (I use my crock pot a lot, too.) Tonight's dinner is a variant on chicken cacciatore--boneless, skinless chicken thighs, lots of veggies (more than the recipe called for), and tomato sauce. I will probably make some noodles to serve it over.
I have been trying to cook almost every meal so I can stay on track and make sure I get almost 5 fruits and veggies in a day. Because of working sometimes you just get tired so I try to use my crock pot. My husband loves venison and I have not cooked it since he returned from military deployment, so I decided to make venison stew in the crock pot. I made it like I would normally make beef stew and I think I am going to serve it over egg noodles tonight for dinner. I made sure I put lots of carrots, celery and onions in it.
