Eggplant- Peeled, sliced, and blanched for 4 minutes. Chilled it in icewater. Breaded half of it and laid it out on a cookie sheet, so it didn't freeze together. The other half was unbreaded and I just tossed it into ziploc quarts for stews and such. Later when the breaded was frozen I put it into ziplocs of typical meal sizes. When you bread it ahead of time you are supposed to cook it while it is still frozen. FYI

I just put up some eggplant. Yesterday I did salsa and tomatoes...Pears tomorrow if I have time, there's a wedding I need to go to that is two hours away...

I will let you know what happens with the two kraut recipes. In re-reading the instructions for the one calling for 24 hr. fermentation, that is the time frame that the cans are to be looked at for removing scum and then let set for 3 days. This is a German recipe that called for yellow mustard and caraway seeds.

We have used Rreecycle to get rid of items we had no use for and it made the new owners very happy. Had not occurred to me to use for posting for veggies. People with large gardens usually have lots they can't use.

Freecycle is an awesome program that allows people in an area to post things they want to give away or things they are looking for--all free. It keeps stuff out of the landfill and helps with our budgets, too.

The Freecycle group I belong uses a Yahoo Group, but here is the link to the Freecycle website:

We have given away an artificial Christmas tree, a jigsaw puzzle, a bread machine (my insert didn't work, and his motor didn't work) and a bunch of art supplies (to a homeschooling mamma). We've gotten apples, windows (when someone remodeled--we used them for cold frames) and compost materials. It's a very cool and fun program.

Started fermentation on 12 qts. of sauerkraut. Trying out 2 recipes, one ferments for 24 hrs. and the other calls for 2-3 weeks; both in qt. jars; then both call for processing in hot water bath.

putting up tomatoes. Lots and lots of tomatoes. I have put up 3 batches of ketchup. I will do one more today. Roasted pepper tomato sauce, diced tomatoes and crushed tomatoes. Still need to do salsa and enchillada sauce. I also do a basic tomato sauce for things like pizza.

I froze some green beans and some tomatoes (for making sauce when i get enough)

I love Pear Honey. I just haven't gotten any pears this year. My brother came to visit last fall. He ate a quart of it in a week. I sent him home with 2 quarts. I guess he is out by now.

I made the pumpkin butter with cooking pumpkin, and it is wonderful. I think I will probably use most of it mixed into my morning oatmeal, but it is also good on toast.

I cut the amount of cinnamon in half, and it is still very cinnamon-y.

I am in South East Connecticut. Pretty soon it will be time to pick Macouns, an old fashioned apple that is getting rarer and hard to find. The local orchards have old trees of it so there I can get some soon. They have a crispy, not-too-sweet flavor, a thin skin and fine flesh ans are on the small side. They are actually a bit like a Mac -- but not as washed-out or sweet. This year I have a freezer and plan to prepare a lot of frozen pie filling with these lovely apples! Yum, I can taste them now. The big discussion is always how to pronounce Macoun with no decsion that I know of in my 30 years of eating them.

How you anything is how you do everything...but don't let perfect be the enemy of good.

What apples are available to pick in your area? I went yesterday and there were only Macintosh to pick. I missed picking the summer apples and the fall apples are just starting. The Macs are a bit bitter at the moment being early and all. Macs are not my favourite, so I took a pass. I'll see what I can pick up at the market either tomorrow or Saturday.
