Rasp. jam--mmmm....I am doing apple sauce and maybe making a ground cherry pie. Do you use a pressure canner to can pumpkin or can you cold pack it? Things are pretty crazy here as we are getting close to moving the cows into our new barn. I really need to pick my popcorn, but Ike blew it all down so it's a pain to pick now.

Cchazz, I always cook grapejam. I am from South Africa, so our summer is just starting and I don't have much to can or freeze at the moment. Also have a 12 hour/6 days a week job, so not much spare time. Plan to do someting different soon, then I will have more time!

emoticonHi, I'm putting up squash, "Blue Hubbard". For pumpkin pie, soup and just eating. I freeze it, I freeze everything.

What can you do with grapes? I have so many white seedless grapes we could never eat them all. Raisins don't appeal to me, but I have no other ideas. Wine sound good but sounds like too much work.

I also made Pear honey! Thanks to Kapasson "Net". It's so good.

If Attitude is everything! I got it all!

The apple pie filling turned out wonderful, but it was the messiest thing I have ever attempted in the kitchen. Every pot, spoon, measuring cup, knife and peeler was covered with sticky goo by the end.

The apple butter turned out really good - we had three people working together to make it. We cooked teh apples in apple juice instead of water and used extra cinnamon.

Blueray and Swimminglaps,

I have been doing an apple pie in a jar for a few years and it always turns out really good. I haven't had any problems with it. I do use corn starch instead of suregel though.

Lisa, I've also thought about doing pumpkin, so you'll have to let us know how your's turns out! I would just do the pumpkin and add the spices when you make your pie. The canned pumpkin in the store doesn't have spices in it.

I've also thought about doing banana squash if I can't eat mine fast enough. The best pumpkin pie I ever made was from banana squash. It tastes the same, but is just a little more orange and less brown in color. I just baked it in foil, took out the flesh and pureed it. I also let it sit in a sieve over a bowl for a little bit. It seemed to have quite a bit of water in it. When it looked about the consistency of canned pumpkin, I made it into a pie. Yum!!

Slates - we are trying wine for the first time this year as well. The directions we are following are in a book called "From Vines To Wines" but I am sure there are several out there. We felt we needed a book because we need the directions right there in front of our face while doing it!

I havethe ichiban eggplant and I just peeled and blanched them before either drying or freezing.

I have some tomatoes in the freezer from last year that I would also like to get out of the freezer. Does anyone have any ideas on what to do with them? I'm not sure if they will still process well into anything?

Today, I canned tomatillo salsa and regular salsa, plus jalapeno jelly and bbq sauce. Tomorrow, I am planning to do some tomatoe sauce in the afternoon.

I am starting my day early tomorrow as I will be going to look a some cows before church (I must admit that it sounds rather strange). lol Thankfully I have everything picked for tomorrows canning session.

My mom told me i could freeze the tomatoes and process them at a later time. i did it once and it worked. I now have about 12, 1 gallon-size bags in my freezer. i would like to get them in jars and out of my freezer. i only have a small chest and it is getting full.

I peel mine, dice them, cover with water, cook till tender enough to mash. Mash and drain water off. Cool and freeze in baggies. When I get ready to use them [ family of 3], I thaw out a pint bag and make eggplant patties. If you do not do this I can explain. Or, you can peel them, cut them into strips, blanch and freeze. Hope that helps.

I had a busy summer and didn't do much canning/freezing during the summer. So I am trying to make up for it now. lol.
This week I: froze pesto base, corn and green beans; dried cherry tomatoes, basil and eggplant; canned spiced peaches, pickled beans (2 types), beans, plum syrup, green tomatoe mincemeat, piccalilli, and three bean salad.
It was a crazy week. This week I will pick up apples and pears at the end of the week and I hope to get some tomatoes canned and some tomatillo salsa.

So glad you liked itemoticon. I made an 8 qt. pot one day then put it in the frig to can the next day ( I had to work that night and hadn't been to bed), well when I went to can it I was down to 4 qts. and 1 pt. left to can. My family had eaten that much. Hmm, the cinnamon sounds yummy, I may try that and leave out the cloves, next year that is....

I am trying the recipe for "Vanilla Pear Sauce" that Lisa posted.

Update: cut the water to 1 quart, left out cloves, added cinnamon. It made 6 pints. Gave 1 pint each to the lady who gives me the pears, & my Mother-in-Law. Hubby ate half a jar for dessert at supper. He now has plans for me to make him turnovers with it. Also, will be making more. We all like it alot.

I syill have tomatoes. I forgot to plant any cherry or 1-bite sixed ones. Last year i had some tomatoes that must of been buried so i did get 2 new plants and i am waiting for them to turn yellow or red.

You are welcome Lisa. Try it and let me know what you think. I got the recipe from a sister of a Church member. My family loves it on toast, biscuits, pancakes & straight out of the jar. My brother came for a visit and ate a pint jar of it in 2 days. Needless to say, on his next visit he took 2 quarts home with him. I also, make a mean pear relish. We use it on peas...a great veggie topped with more veggies and fruit, yum. Night..Net

PEAR HONEY
9 cups grated pears
5 cups sugar or splenda
1 can crushed pineapple with juice

Cook untill clear and desired consistency, stirring often.Add 1 tablespoon lemon juice just before putting in jars. Water Bath for 20 minutes.

Enjoy !!!!
