I looked up the Fillmore container site, they sure have a lot of different kinds of jars and bottles, I noticed on some of their canning jars they say they are good for hot fill and boiling water bath, wondering it that means they are not good for pressure canning?

Oh I noticed they have the new violet jars, I haven't gotten any of the new vintage colored ones but I like them all!

I have used the pressure canner a few times already, to can soups with meat in them, and for pork and beans. It will see a lot more use, once the season for canning is upon us. (once our garden is producing.)

Yep life's always good with no cat puke on the rugs emoticon emoticon

I'm going to pick the last of my eggplants and freeze some grilled slices ready for moussaka etc. The rest I'll marinate and can. I'm going to prune the bushes and leave them over Winter (after I insulate them of course). They say they will come back in Spring and as they were really good plants that produced a lot, I'll see how they go

Tomorrow we will be doing our shopping, and I am going to get a bunch of smaller sized jars, to use in making my own pressure canned cat food. We will also be looking out for cheaper meats to use in making the cat food as well.

I noticed that when I feed our kitties the cat food that I made from our rejected meat from our freezer, that I canned, they do not puke.. When ever I try to sneak in a can of cat food from the store, they start puking again. Thus... they are getting food that I make from now on. It beats having to clean cat puke off of the floor and furniture every other day.

Yesterday, I canned my pineapple and they all stayed sealed..
Also, beef stock and chicken stock. only one of the beef didn't seal...
I will use it sometime this week for dinner.

pineapple
2 pints crushed and 3 pints chunks
Beef stock 4.5 pints of strong stock
Chicken stock 4.5 pints of strong stock

I just finished our weekends production of maple syrup...3/4 gallon !

Today, my Mother, I and a friend went to church. We decided to check out my friends church. She is Catholic. The Catholic church here, is very similar to the Lutheran church that we used to go to, a few decades ago. The service was beautiful, and reminded me of how the services used to be like almost 3 decades ago, in the Lutheran church, before they started changing their worship services around... I found it refreshing, to experience that style of service again.
Mom and I are planning to go to at least a few more services at the church my friend took us to. I might choose to stay with this one. I felt refreshed, after walking out of the service there, and that is truly what counts.

Yesterday I went to the butcher shop and loaded up on beef and pork for the freezer...
I, also, got suet for the birds and bones to make beef stock.
The stock is on the stove and almost done...Then I will pressure can it in pints...

It's good that you found somewhere with the bottles you liked.

I made crumpets years ago and they are really scrumptious. Trouble is they really do use a lot of butter when you toast them!!

I made English muffins once and they worked out really well as well.

Patti you can buy them in bulk on ebay.au. If I can buy on ebay all over the world surely you can buy them on our ebay!!. I haven't gone through the whole page but the smaller ones I have used would be equivalent to a 1/2 pint I think (1 1/4 cups)

Just click onto the first item and go to the distributors store, check for preserving jars and ask them if they'd ship to the US. I can't hurt to try. With the Aussie dollar languishing around the .75cent US dollar mark you'd get a pretty good deal.

I use the 1 pint bottles as well but I haven't checked the store to see if they have them.

They are labelled Jemark, but as far as I know that is an import company from Australia. To be honest I bought them in the discount store and yes you can re-use the lids and I have a company here in Australia that supplies replacements for all sorts of jars.

Of course if you are using them for preserves with vinegar, you'll need to make sure the lid will last or has the proper cover.

Did I write prior to this that my pork and beans tasted REALLY Good !!!
I think they needed to be boiled a bit more before canning. They are a bit chewy !
We are just used to the mushy ones in the cans.

Lovely looking bread Linda, bread is my kryptonite!!

Patti as it turned out I never got a thing done as I was sick all day. I tried to do some today but thought I better not push it. I peeled and blanched my pineapple slices and cut up the mangoes, but I have not bottled them yet.

I got some really lovely jars from the local shop, the seal really well as I have used them before and they look really good.

We only had 45 gallons of sap from the whole week of collecting.

I also got a couple of Pineapples the other day from Aldi (very cheap) so I'll be trying my hand at canning them in juice as well.

I picked a half a bucket of Crab Apples this afternoon so I'm going to have a look around and see if there is something different to make with them. I usually do Jelly, which I love, but this time I'd like to try something different.

I also bought some more cheap Mangoes, so I'll be hopefully canning them when I buy some more bottles.

I'm afraid to clean out my 3 freezers. I'm sure there are some mystery packages in there ! I should get in there and clean out the frozen veggies and dehydrate them at least !

I just checked all of my pressure canned jars with the Tattler Lids...They all sealed and stayed sealed. What a Relief ! Bonus !

Yesterday, we cleaned out our big freezer, and found a few packages of meat that was just starting to get freezer burned. We decided to make cat food from it, and canned it. We ended up with 9 pints and 2 half pints of cat food. The kitties seem to love it. I love the pressure canner.

We also rescued some meat for ourselves, and made a few quick meals to freeze. We ended up making 2 casseroles of beef stew, 2 casseroles of sauerkraut, and 1 casserole of chilli from the rescued meat. And also today, mom and I made 6 packages of cabbage rolls and froze them.

It sure is nice to have all that work done. We (critters and people) should all have a few nice meals from all this wonderful food now.

Here's a picture of my Pork and Beans...
I used my Tattler lids for the first time emoticon
I sure hope they work after all of this work !

From 2 lbs of dried beans I got 9 pints of pork and beans.

I, also, did the caramelized onions in the same pressure canner.
From 5 lbs of onions, I got 5 pints.
So 14 pints in one full swoop !!! Gotta Like That !

I didn't finish the onions as we went out with friends and got home late.
I turned them off as I don't like to leave it on while I'm not home...
I did gather my dry goods from my pantry and oven canned them...
Whole wheat pastry flour, whole wheat berries, split peas, Fava Beans and brown rice.
I did it like the video I posted a few days ago and it worked perfectly.

Today, I'm going to finish the onions and make some baked beans and can them.

I am itching to can up a bunch of caramelized onions as well, but I will have to wait until the end of the month, when I can afford to go out and buy a bunch of onions. I have enough onions to last me the month for regular cooking purposes, but not much more.

I need to watch my spending for the next few weeks, in order to stay on my budget. I do not want to go over budget now, or I will have to cut back on my spending next month, when I will be needing extra money for when I really get into starting my planting.

Now that is what I am really itching to do... start planting my seeds, to get a head start on my garden. I still need to buy all my seeds. I have a couple items, that I carefully stored from last year, but most of what I have planned for my garden this year, still needs to be purchased.

Well, I bought my 1 pineapple...way to expensive to buy more than 1. But I can at least make a small batch of canned pineapple for my first time.
I, also, got 6 lbs of onions to caramelize. I will do that tomorrow as I have to work at the food pantry today.

Mom is baking a couple cakes today, while I do a few chores around the house. She will then portion them into sizes that are manageable for her and I, and then wrap and freeze the portions. This way we can enjoy the odd peace of cake, from time to time, and not overdo the sweets.

I need to start making things again. We had been so ill, for such a long time, that we ended up using up a bunch of the stuff that we had pre-made. That is OK tho. That was the whole reason we made the stuff... so that we would have easy stuff to cook, when we do not feel up to cooking.
Seriously tho... I am itching to do some pressure canning. I have the ingredients, I just need to find the physical energy, to get started and do it.

Fabric Softener...

5 cups HOT Water
1 cup cheap hair conditioner
3 cups white vinegar

Heat the water in a pan. When hot, add the conditioner and whisk until blended smooth.
Add the vinegar and stir.
Put in a container after it cools. Use as you would your regular fabric softener.

I'm starting to look like a tomato here at the moment. I've just skinned and cut up a BIG dish of tomatoes, now I have to put them into bottles and preserve them.

I've cooked a batch of beetroot and I have to cut this and put these into bottles for preserving as well.

Also I sliced 6 eggplants and grilled them. I'm going to freeze these for use later on. The next batch I do will be marinated.

I've just had a look at my parsley, mint, basil and oregano and I think I need to dry some of it before it goes soft and manky

It amazes me that even in the winter there is so much canning going on! I remember the days of making dog treats, but no dog right now. That is too bad about the Chili Gemini Sky, waste of hamburger too.

I have been working the last 3 nights, so not getting much done. Then only 2 days off. I baled on taking the lambs to market in Dec and have been procrastinating ever since. I need to find a day where I can take them and then a day I can pick up the meat, Usually 3-5 days apart, which doesn't work out well when you work 3-4 nights in a row. But it needs to get done soon because the middle of march the ewes are going to be lambing again and I will need the room.

I got some beetroot at the local farmer today so I'll probably be canning these along with more tomatoes tomorrow. My beetroot was pitiful in the garden this year and I haven't been able to grow enough to replace what I've used over Summer

As I'm inundated with Tomatoes, (up to my eyeballs to tell the truth) I'm canning tomatoes. I usually only can them on their own with a bit of Citric acid included. The tomatoes that I grew (mainly Black Krim and other heirlooms) are extremely juicy so I don't need to add any tomato juice to the bottles.

I have to go out and buy some more bottles as I've used all the Fowlers Vacola bottles I had and they are the ones I like to use.

Too bad it didn't work out. I always debated on making those for gifts, but I never do. I guess I do worry that they won't work out.

For me this weekend was about restocking. On Friday I finally made it to the warehouse supply store and picked up more bread bags, pancake mix and cooking spray. I forgot the soup bases though.

Saturday, I bought meat from Costco, chicken thighs, pork loin and beef strip loin. I also stocked up on rice.

I received a "Chili in a Jar" for a Christmas Gift so I made it. I got a huge pot of chili using 2 lbs of ground beef.
I was going to pressure can it in pints but it came out awful !!!
Really pasty and not much flavor...
Hence, it went in to the garbage !

I've never heard of Coney Sauce Patti, will have to look that one up!!

I am having a BUMPER crop of tomatoes at the moment and while we are eating tomatoes with everything, there is so much left over. Will have to preserve a few bottles just as "diced tomatoes" to keep the cupboard stocked and to keep control of all the tomatoes. I've just started picking the eggplants now as well (there are lots of these as well) so I'll be doing some marinated and I might lightly grill some slices then freeze for things like Moussaka etc.

I processed my dehydrated tomatoes into powder. I have become dependant on having tomato powder in the cupboard, I find it more handy than the case of tomato paste I bought back in fall. I processed just over 2 qts tomatoes and ended up with over 1/2 qt powder. I forgot to save some dehydrated tomatoes for a salad I wanted to make.

I also made 4 loaves bread, 16 pizza sticks (using homemade pizza sauce and tomato powder), 3 cups Candied Pecans. My older DD made Cake Donuts with Chocolate Glaze.
