The rest of the cherries went to the dehydrator. Yesterday was meat re-stocking day. The past couple weeks the family has been suggesting things for dinner and I have been saying we are out of that. So I bought a pork loin, 2 packs chicken thighs, 1 pack hamburger, 3 packs bacon, 3 packs hot dogs.

The Blueberries became mainly pies. I sold 6 and put 1 on the freezer for us. We got 13cups mashed bananas, I made 6 banana bread, which I also sold, the rest was frozen for another baking day. Cherries, I froze an industrial sheet pan worth, made a Glazed Cherry Pie. I really need to deside what to do withe the rest of the cherries.

Poke each and every blueberry with a skewer, I have a small one that came withe the tukey baster, it took me about 2 hours to fill my 6 tray dehydrator. I tried the blaching method and too many popped and sagged over the trays and made a mess. The raspberries I just wash and put on the trays, you really have to check them as most won't shrink. They do become smooshy when warm too, so careful when moving them.

How do you dry your red rasp's and blueberries ?
I heard blueberries have to be poked with a pin and then boiled until the skins split.

I went to the Farmet's Market yesterday, and a local store that specializes in local fruits wnd veggies and came home loaded. I picked up:

2 cases Raspberries, 24 pints
20 lbs Cherries
10 lb Blueberries
And almost a ton of Bananas, yeah not local but make great Banana Bread.

I put 1 case of Raspberries into the dehydrator, it only filed 3 1/2 trays so I filled the other 2 1/2 trays with Cherries, then prayed yhe power wouldn't go out as a wicked thunderstorm started.

I also made a batch of jam after the thunder stopped, put 1 1/2 pints of Raspberries into he frig to eat fresh, then froze yhe rest of the raspberries.

Today I have plans on making Blueberry Pies, maybe some syrup too. I still want to d3hydrate some more Blueberries and Cherries. I also have plans on making Banana Bread and freezing the rest of the Bananas.

I've already made 28 pints of blueberry jam. Today I made 8 12 oz. jars (2 batches) of peach jam. I have some leftover peaches that I'll just eat. Next time I buy peaches I'll need to buy twice as much. I'm thinking about going out and picking my own. I missed sour cherry season this year, but I'm thinking of doing something with figs in the fall, or plums.

I bought 20 lbs Blueberries at the Farmer's Market, some colorful potatoes, mixed lettuce, sweet onions, and carrots.

I made Blueberry Jam 5 half pints, I have blueberries dehydrating, and 2 industrial sheet pans of blueberries in the freezer, I stil have some berries to deal with.

Well, I have a lot in the freezer--so much so that all of my freezer space is occupied at the moment. I picked/processed 30 lbs. of fruit for my parents, so that will go to their house soon and I can get to work again when the space is freed up.

For myself, I have frozen raspberries, blueberries, strawberries and three kinds of cherries. I need to get more of all of those where possible.

My canning priorities this year are:
--tomatoes: growing more this year and want to try sundried, ketsup, paste, etc. in addition to sauce and whole
--relish
--salsas (mostly tomato based)
--maybe 25 pints of jam--still have lots left over from last year (already canned some raspberry; want to try red cherry, plus do blackberry (canned) and strawberry freezer jam)

Dances: salsa (standard/LA), casino, rueda de casino, cumbia Colombiana, bachata, mambo, cha-cha-chá, merengue, reggaetón.

Currently learning: Mexican cumbia, danzón, Cuban rumba

Dances to Learn in the future: flamenco, tango Argentino, samba, belly dancing, bhangra, ballroom rumba

I froze the rest of the cherries yesterday. I also baked 10 loaves White Bread, 9 Pepperoni Pizza Sticks and 6 Pizza Sticks and while I was putting all the bread in the frig I found the rest of the rhubarb. I guess I better chop it up and freeze it for muffins later in the year.

We head to town tomorrow for Eye Dr. appointments, then we will hit up the farmer's market after that.

ANTHEAMS... I make a 9 Day sweet pickle which I think are gherkins but mine are sliced, not whole. They come out so nice and crispy...with a bit of spice flavor

On the eggplant bacon, I cut the eggplant into 4 big slices, then use a mandolin to slice it into thin slices about 1/8 or less. I only use 1T of oil and sub molasses for the agave. My dehydrator is a cheap unit without a temp gauge I bought from Menards. I just place the slices on the shelves and don't use the parchment paper. It usually takes 9 1/2 hours to crisp up. It is worth it to make it.

Finished my 9 day sweet pickles and got 20 pints and 20 half pints...

I have a question about the eggplant bacon...
How thick do you slice yours and Does it come out really hard ?
Can you do it to a more dried apricot like dryness (a bit chewy) ?

Lucky ...
You always have a way of getting me to try new things !!!
I have dried potatoes before, to use in casseroles but never to eat as chips...
And I always have par cooked them so they don't turn black.
Love the vinegar trick !!!

I dehydrated some fake-bacon. It's eggplant with soy sauce, a bit of oil, and smoky paptrika. I use it in BLTs and as bacon bits. I am going to try making it with shiitake mushroom. I got the recipe from helynkitchen and she says it even smells like bacon. I'll report back how it went. emoticon

Sorry I have been MIA lately. I was able to get 2 flats of strawberries, 3 qts cherries, 1 lettuce, 2 bunches of rhubarb, of and 4 baked goods on Wednesday.

I made 1 batch Strawberry Freezer Jam, 1 batch Strawberry Jam, 1 batch Strawberry Rhubarb Jam, 1 batch Cherry Jam. Then I froze the rest of the strawberries as they weren't the best quality because it is end of the June berries and the insane heat (35 C). Plus hubby wanted to go to dinner for my b-day. I still have cheries and rhubarb to deal with. Probably freeze those too. We have been on the go since Wednesday, first in town picking up everything, Thursday was canning and back to town for dinner, Friday was in town just wasting time as we waited for SIL to come visit and then to FIL's house for dinner and a wade in the creek. I didn't dunk myself. Today is back to town for grocery shopping, and we will see what the rest of the day will bring.

PS, we did make the popsicles, I just blended canned peaches with yogurt and added some frozen fruit to it before adding the sticks.

Right now picking raspberries and freezing what I cannot use straight away. Some on a tray so they stay separate and then, when frozen, I put into bags or boxes and others with a sprinkling of sugar and I use this for a sauce for icecream or yoghurt or kefir.

I love these soft fruit days when breakfast can be a bowl of kefir with strawberries, raspberries and blackcurrants - the red currants are not quite ripe yet - just picked from the garden.

Harvested my garlic yesterday...(I posted pictures)

The garlic I planted last fall never came up this spring...I usually save some seeds and sprinkle them around the gardens to deter the deer...
I went around and pulled some and what a wonderful surprise !!!
I got 20+ heads and some were almost 2 1/2" in diameter....

I'll roast some, make garlic infused olive oil and save some for fresh...
The smaller ones, I may make some garlic powder...

No putting up yet, unless you call the meat I bought last week putting up. LOL. I just cleaned one of the freezers, been 2 years since I last cleaned it, letting it cool down right now and I will get the other one cleaned out. Then make some popsicles for the kids. Poor kids I woke u and asked them if they wanted to make some, then decided I better clean the freezers first.

But once the freezers are cleaned I will be able to start stocking up again. I will phone later tonight for some strawberries and cherries.

Picking and freezing Blueberries

I scored 6 pecks of pickles yesterday from Becky at 6.00/peck...Last week she had them for 14.00/peck !!!!
I did 2 of them so far as Bread and Butter Pickles.. 17 pints and 25 half pints...
I 'll probably do one more as Br & Butter and the rest as Dill and 9 Day Sweet Pickles.
Doing good, so far, selling my Canned Goods at Becks Farm.

Thankfully I didn't pull my strawberries. I planted them 3 years ago and have been fighting with the ants and birds for them since. I picked 1 cup a week ago, 4 cups last weekend (which I made into Glazed Strawberry Pie), then 3 cups yesterday (which I made into Strawberry Sauce, which we had some on Ice Cream, and lots leftover for other things).

I am so jealous. My garden is still in sprouting stage. I put it in almost a month late. My apricots won't be ready until the end of July. I haven't had time to buy any strawberries, or cherries.

I decided to make the turkey that was in the freezer, not only for Father's Day, but to clean out the freezer a little more.

I realized that I was out of Jellied Cranberry Sauce yesterday, so this morning I pulled some frozen Cranberries from the freezer and made a double batch. I was originally just freeze the jelly, but remembered why I pulled the turkey from the freezer to begin with, so I canned it, 4 pints worth.

I really need to get the freezers at least half emptied so I can clean them out. Can just put everything into one while I clean the other. But then I turned around and made 10 loaves White Bread, 2 loaves Cheddar Cheese Bread and have 5 loaves Sourdough rising.

That's after emptying all the jars from last year and washing them and getting off the labels...That took most of the day.

You are So Great at dehydrating !!! I just usually break my teeth when I dry anything !!!
I do like dehydrating veggies for soups, tho !

My fruits are doing good...I find that mulching really helps, esp for the berries. Most like an acid soil !

I was told that Rhubarb is the easiest thing to grow, just plop it into the ground. Not for me. I am amazed that the Strawberries are growing, I have had no luck with any other kind of fruit over the years, Apple and Plum Trees, Raspberry (white, black and red), and blueberry bushes have all died on me.

I totally forgot until older DD asked about the bananas I brought home on Friday, I almost had 1/4 case of them in my kitchen closet.

Besides dehydrating them I also made 6 loaves Banana Bread (3 plain & 3 Chocolate Chip), I put all of them in the freezer because DD made Oatmeal Cookies on Saturday and Banana Chocolate Chip Bars on Sunday.
