Yes, I blanche most of the veggies...
Onions, too !
Just bring them up to a boil and then drain and put on trays with a screen...If diced, they dry really, really small !

Cabbage, blanch 3-4 minutes...

Some recipes say you don't have to blanch but I do anyway...
They seem to dry faster !

Yes. I blanched them. Did you blanch your other vegetables as well? Did you blanch the cabbage? Do you need to blanch onions to dry them?
I also read that my kale, swiss chard, and collards can be dehydrated. I want to try doing them as well... for soups.

Did you blanch your green beans for 3 minutes first ?
They say if you blanch them first, they dehydrate and rehydrate better and they keep more of their color, taste and texture !

Well, I got up early this morning, and I started drying a bunch of the beans that I picked yesterday. Now to wait and see how long it takes...

I also want to try drying some cabbage, peppers, onions, and carrots... like you mentioned CANNINGNANNY.

I agree... these will make great soups... and we love eating soup in fall and winter. emoticon

Hi All...
I dried a Huge head of cabbage and got 3/4 of a gallon of dried.
Also, dried 2 1/2 large bunches of celery and it all fit into a pint jar !
Dried some diced and some sliced sweet red peppers.
3 ears of corn (had in the frig, to old to eat fresh)
and some green beans from the garden.

With this cold weather, a nice pot of soup sounds wonderful ! :}

I finished my 2 bushels of tomatoes yesterday...
Final tally...
19.5 pints of diced
21 pints of Puree
tomato powder

Is it possible to burn things in your dehydrator ????
I forgot to turn it off last night and woke up to REALLY dark brown tomato dried stuff that i was going to make into powder...
Just the top 2 trays !!! The other 5 trays look good ! Hmmmm....
I will put the rest of the slurry into the dehydrator this morning.

I have to go shopping today as I'm running out of milk, cream and pet food.
I may pick up some red peppers and celery to dry !

We had tacos for dinner last night and I used up the rest of my taco seasoning !
Looks like that's on the list to make, too !

Ohhhh..those tomatoes look delicious....I put up 16 4oz jars of tomato paste (or, thick tomato sauce) whatever...it looks great....I'm going to make some pizza sauce, and spaghetti sauce next weekend...

Still cooking down the puree and then bottle it,

dehydrator is full (7 trays) for making powder,



Roasted tomatoes are out of the oven and some in my belly !!! :}

Tossed with olive oil, garlic powder, oregano, basil and a wee bit of salt !

Roasted...

YUUUMMMM !!!!!!!!!!!!!!
I make these for Me ...as a Cooks Treat ! I deserve it after all of this work !!!

I do believe I had put it in the Dehydrating Recipe Box but let me check .......................

Yep, it's there...I copied it for you...

Dried Green Beans...

Wash fresh beans and cut into 1" pcs...
Steam blanch for 10 minutes stiring occasionally so they all get steamed. Don't make them to deep.
OR
Boil Blanch for 2 minutes...
Immediately, take out of steam basket and put on dehydrator shelves. (I put mine on a towel and blotted them to absorb some of the moisture first)
Dry for 4-12 hrs till they are brittle and completely dried.
Store in a well sealed jar or container in your pantry.

CANNINGNANNY... How do you dehydrate your green beans? Can they just be cut, and dehydrated with the green part? Or you you need to remove the seed part and only dry the seed? I would love to have dried beans with the green part, for soups and such... if it works...

Linda...I have a question...
Do you dehydrate things?
I've been trying to dry what ever I can so I don't use up my freezer space...
I shredded my zucchini and then dried it ! When i need it for breads, pancakes, etc..
I just put it in some hot water to reconstitute it and it works perfectly !

I do celery, green beans, onions, carrots, zucchini, corn, green and red peppers etc...

Well, we got another bunch of beans to can up. I think we will make pickles with them. We also have a bunch of zucchini that we have to deal with. I will probably shred a bunch of it, and freeze it. I am also planning to pickle some of the zucchini, and freeze some of it in cubes, for sautéing.

Got my new toy yesterday ! Perfect Timing !!! I Love It !!!
It Surely saved my arm from all of that cranking of the Strainer handle !

Got another half bushed pre-cooked, ran thru strainer and cooked to a thick puree...
Just need to get it hot again and bottle it !

1 bushel to go !!! 1/2 bushel to make more puree and the other half for powder and roasted !

Patti, that is funny it is the same link I found, thanks for looking! I want it to be a little thicker so I will try reducing it more or maybe adding thermoflo to thicken it slightly. I looked at several web sites and some add a small amount of pectin, but I see in the comments that many people got jelly instead of syrup lol

I have seen the recipes you speak of. (Or similar ones.) I would normally jump at making the cabbage rolls using the chard or collards, but I am just not up to it this week. I have been very ill the last couple weeks.
The greens should be coming in fast and furious over the next few weeks, so one day, I plan to do some rice and meat rolls, in the way dalmas or cabbage rolls are made, using the chard and collard greens. For now,,, neither mom nor I, are up to doing it. At least we are getting the greens we have picked, saved up in the freezer. They will be nice to use in soups and stews.

Linda, I use Swiss Chard instead of cabbage when I make Cabbage Rolls. Less steps, because all you have to do is cut out the vein, then wrap your favorite meat filling in it, top with your favorite sauce and bake or freeze. I started making them one year when I was getting Veggie Boxes from a local grower every week and I had no idea what to do with all the Swiss Chard leaves I was getting. I went online looking for recipes and seen Swiss Chard Rolls and must have confused it with another recipe that looked like Cabbage Rolls, because when I went back to look at the recipe it was more of a Reuladen (spelling) recipe. Oh well my family eats it up every time I make it.

I also make Swiss Chard and Italian Sausage Lasagna that they love.I found the recipe on Food.com, but it is a Martha Stewart recipe.

I picked up my 2 bushels of roma tomatoes yesterday !!!
Don't they look Wonderful ? and they were grown right down the street from me !

I will be making powder, diced, roasted and stewed with these.
Since they looked so good, I ordered another 2 bushels for next week to make juice and then some cooked down to a puree for chili, etc...

I just was outside picking beans. I must have picked at least a good half a bushel... and there are still more on the vines, that are still small. I am surprised that I am still picking beans, this late in the season. God is good. emoticon

Today, I'm picking up 2 bushels of roma tomatoes to Put Up !!!
I usually do 4-5 bushels but we didn't use up all that I put up last year.
So I will see how much this makes and get more if I need them !

I just bought a motor for my Roma Strainer this morning ! I'm So Excited to get my new gadget and it will make my job so much easier ! :}
These old arms are getting weaker...
Maybe I need some mini hoops to strengthen them a bit !

I just picked some chives, parsley and mint...all to be dried or frozen. And watered the gardens ! We surely need some rain !

I am thinking the tomatoes weren't dry enough to powder. When I made powder last year it was from tomatoes I dehydrated a few months earlier.

Tammy, Bev says that she had that problem...
So she sifted the powder and what didn't go thru the sifter, she dehydrated it more and then ground it again !
She got most of it to grind into a fine powder.
Hope that helps !

She, also, starts with a puree of tomatoes, rather then (like I did) start with fresh diced tomatoes and then dried the tomatoes.
She just ran them thru her food processor and added enough water (if needed) to make a nice puree. Then dried the puree on fruit leather trays.

Tomato Powder, and lots of it. I have a quart of powder. 1 quart and 1 pint dehydrated tomatoes and still 3 1/3 trays of tomatoes in the dehydrator. I couldn't grind my powder fine enough.

I diced 3 red peppers, 5 purple peppers, 6 white peppers.

I froze 11 lbs cherries and 10 pints strawberries.

Thank You Linda...But I do have a ton of apples on our tree, I just have to wait until they are ripe !!! :}

Kathy, I just brought some seeds in from my 1 plant (that I don't do anything with !)
I don't know if they will grow but I'm giving the plant and the seeds to my neighbor that wants them...

Well, I have the apple butter all cooked down...now to bottling it !!!
Surprisingly, it came out really good !!!
I need to thin it out a bit so I can jar it without to many air bubbles !

I'm jealous about the rhubarb. My plant died last year and I haven't gotten another. It's on next years to do list. We have had an over abundance of jalapeno so we chop and dehydrate them. I have learned to do that outside in the carport. The first year the fumes had us coughing so much we had to leave the house in the middle of the night. Hubby was less then impressed.

Awww... I am so sorry about your apples. I wish I could send you some of ours. They are just falling off of our tree, and I can only do so much work. My head is still bothering me from the seizure I had earlier this month. Luckily, I had gathered enough apples for our wants, before I had my seizure.

Today, Mom gathered some more rhubarb, and using some of the apples that I had gathered, made a rhubarb - apple coffee cake.

Well, my apples were a disaster !!!
They were not ripe enough !
The dehydrated ones are rubbery and won't dry hard and the apples didn't let out any juice...only about a quart !!! :{

Made 5 1/2 Qts. of BBQ Sauce
Using my canned pineapple, our maple syrup, homemade brown sugar, my onion and garlic powders,
Drying apple for 1 pie to see how they work out.
Steam juicing the rest of the half bushel.
Herbs are in the dehydrator.

Yesterday, I picked oregano and basil and am letting it dry naturally...I may dry it in the Nesco to make it a quicker job... :}

Also, so far, I picked a half bushel of apples from our 1 tree...There are so many apples that the branches are touching the ground !!!
I have them all washed, so today will be pressure canning them for future use.
(mostly pies and crisps )
After I can what we need, well, the rest of the apples I will pick and save for the deer in the winter !

My older DD decided she would make Fruit Leather. She drained a qt jar of fruit and pureed the fruit with the hand blender. Attempted to spread it on the silicone mats I cut for the dehydrator. She got frustrated and even eventually called me over. I did up a second jar of fruit and we ended up with 3 1/2 trays of leather.

I have never tried pickled zucchini before, I have wondered how they would taste!. I got several in the bargain bin at the produce store and considered it. Instead I made zucchini "noodles" which were good...the kids weren't all that impressed though!

So far this morning, I picked a big grocery bag full of beans. We plan to make pickles with those. I also pulled some young carrots from our garden. We want to mix those with the beans, cauliflower, peppers, cucumbers, and onions, to make some yum-yum pickles. I also want to make a batch of mustard pickles with some of the beans.

I also checked out my zucchini plants. I ended up picking 4 good sized zucchini. They got a bit ahead of me, and so a couple of them will be shredded for baking. LOL

I also gathered a bunch of crab-apples that were falling from our tree, as I was outside. I will use those to make juice with, and make that into crab-apple jelly.

Jen, this I am also relying on other peoples gardens to do my preserving. This is my first year without a garden to tend since we moved in 12 years ago.

Since my last post:

I froze:1 Nectarine Crisp. 3 1/2 pints Strawberries. 2 Zucchini Chocolate Chip Cakes, 2 dozen Zucchini Chocolate Chip Muffins.

Canned:
32 pints Diced Tomatoes
10 qts Diced Tomatoes
2 batches Salsa, 1 batch I put through the meat grinder for a pureed salsa, the 2nd batch I left chunky)
2 batches Pizza Sauce

I still have 26 lb Tomatoes to deal with, 14 purple and white peppers to freeze. Also I need to bake some bread. I have been buying it from the store lately, or atleast attempting to buy bread at local stores.

I canned 15 lbs of green beans yesterday...that made way more than I thought and I nearly ran out of jars!! I ended up with 20 pints, 1 quart, and a 1/2 pint, plus enough for dinner last night. Since I don't have a garden this year, I plan to spend the rest of summer buying in bulk and canning for the winter. Next week, I'm taking on a 20 lb box of tomatoes.

Canned 7 pints of green beans yesterday. I've frozen them, too, and didn't like them. Hope you do, it's a lot easier. My mom freezes her peaches but I've never liked them that way either. I water bath mine.

I am glad you are only trying that with one bag. I made the mistake of freezing them in zipper bags without blanching them one year, and they turned out awful. They were all rubbery. Maybe they are doing something different?

I usually, leave my carrots in the ground until after the first frost...
I always remember hearing that they are sweeter then! Some people keep them in the ground thru the winter.

Probably Thursday I will be pulling my beets and getting them ready to can. It will depend on the size and number I get from the garden before I know if I'll just pressure can them or pickle the.
I also have a ton of carrots that need to be pulled and processed. I found a recipe on Simply Canning website for sweetened carrots that sounds yummy and I might try. I'll put it in the recipe box in case anyone wants to try it.

I have had a few people ask me how I make my cat food. I only follow a few guidelines. Here they are. emoticon

Basically, choose the type of meat your cat likes. You can even mix different cuts of meat. I boil the meat with just enough water to cover it, with just a touch of salt. Stay away from flavouring it with either onion or garlic. Those are not good for kitty.

Remove the meat from any bones. Purée the meat with enough water to make it smooth. (Water is good for kitty.) Many kitties also like the addition of parsley and rosemary. (test first, to see if they do.)

I also add some vegetable or whole grains for up to 1/4 of the volume. It is important to include something to add some fibre, or kitty may become constipated.

Items that are good to add include:
sweet potato
yams
green peas
brown rice
pumpkin

Other vegetables are also good (check the internet), but I have not tried other vegetables.
Purée the vegetables with the meat and water, to form a smooth pate'.
If your kitty likes gravy, you can make a home-made gravy and chop the meat, and add the gravy to that.

If you want it to be shelf stable, you will need to pressure can the food, for the required time of the meat. Otherwise, you can place serving size portions in Ziploc baggies, or containers, and freeze it. Just thaw it to use.

I canned Nectarines today. I did 16 half pints and 8 half cup jars. I also smoked 4 whole chickens. We ate 1 for dinner with pasta salad. I froze the other 3. I also froze the bones. I wonder if it will make good stock.

I also bagged the cheddar I shredded yesterday.

I made Kiwi Jam at the school. I had seen a recipe a couple years earlier, but never made it as they are a little pricey. We had them at the school as part of our Fruit and Veggie Program. I called it Frog Egg Jam. LOL The original recipe nicknamed it that. I laughed when I made it because the green color and black seeds.

I am still at my home community camping. I hope to pick up some fruits/ veggies on my way home today.

Well, we finally got our kiwi jam made. Mom made 7 jars (1/2 pint) of kiwi jam. Oh my! Does it ever taste good. Tomorrow is my day to pay bills and shop, but the next day, we plan to can some grapefruit in syrup.

We have been doing so much canning lately, that our kitchen and other spaces, were drowning in canned items. Today I set up a shelf unit in our basement, and moved all our recently canned items onto it. What a job! Especially in this heat that we have been having. I must have went up and down the stairs to our basement, at least a dozen times. LOL
emoticon Talk about sweaty work. Phew!

Done with 20 Qts. of Sauce from my 6 gallons of juice, 1 pt tomato paste, 3 qts. of stewed tomatoes, garlic, onions, oregano, parsley and basil, all from my garden...and diced sweet red peppers...not mine, but were in the freezer...

OK I went thru my pantry and I have 12 half gallon jars of juice !!! = 6 gallons...
I just put it all in a pot to boil down to sauce.

One of the ladies on a facebook page talked about an Electric Canning Burner ???!!!
I've never heard of it so I checked it out and bought one.
It has a ring that raises the burner so you don't scorch your stove top.




And I get to use my Grandmother's Canning Spoon that I only use for canning tomatoes !

Oh My !!! That's a lot of raspberries !!!

I'm going to the Amish Farm Market to check out Roma Tomatoes to can !
(after I check out my pantry to see how much of juice, sauce, stewed and diced I have left over from last year !!!)
I Put Up way to much last year !

I am drowning in raspberries, last week I made a couple of batches of strawberry freezer jam, I love the taste of the freezer jam, one was low sugar and one regular for my parents, This week has been raspberries and more raspberries, I have 10 gallons in the freezer plus two batches of freezer jam, I also made two raspberry pies. The blueberries are ripening, but there are still tons of raspberries out there. I took a batch of strawberry shortcake biscuits to work the other night with 2 1/2 quarts of raspberries, they sure disappeared quick!

Apricots sure sound good, I have tried and tried to grow them up here but they just don't survive

Yesterday, I dehydrated celery and sweet red peppers...
1 1/2 Huge celery stalks made 1/2 pint dried
And 6 Large red peppers made 1/2 pint dried !

I put up: 22 pints Apricot Nectar, 9 pints Apricot Juice and 1 1/2 sheet pand frozen apricots.

3 Raspberry Quick Bread, 3 Blueberry Quick Bread, 12 loaves Bread and 3 pints and 1/2 cup Caramel Sauce.

Rodger, how did you jam made with Stevia come out...I've never tried to make anything with Stevia...Is there that awful after taste ?

You're going to LOVE those dried tomatoes !!! I like roasting a few cut in half and tossed with olive oil (good fat), basil, oregano, a titch of salt and garlic ! Roast at 350 for 1 hour or so on a cooling rack on a cookie sheet...until they char a bit ! My mouth is watering !!!!

Peaches are coming in now and I need to get to a You Pick It farm soon so I can can some for winter pies and to eat with my cottage cheese !!!

The strawberry jam and kiwi jam will be made on Thursday (tomorrow) I ended up going to an appointment today, and then went up town. I did not get back until after 3:00 PM, and we were too tired to start making jam...
Uptown, I scored a bunch of nice plums, for plum jam, some yellow plums for canned plums, and a bunch of field cucumbers for icicle pickles. I also bought 2 cases of mangos, for canning. We are going to be busy over the next week.

Linda, Yesterday must have been a radish day as I, too, canned radishes. I made Radish Relish ! I haven't tried it yet, but it looks good ! Like Pink Horseradish !

Our pantry is looking good. :)
