Sweet Potatoes are on sale everywhere. Yams too. I'm baking in a dish cool hen scrape nto small freezer bags to freeze for alter use. I'm new at enjoyin them. Love mine with a little cinnamon. I wonder if you can cook them in the crock pot.???

maybe my crock pot on low is lower then they want but it more or less ended up being like boiled onions, but I put them in a pan and slowly caramelized them on the stove, I think that gives better taste anyway.

Well that'd be disheartening, nothing better than onions when they are caramelized.

More Mangoes to can and I got a big box of plums cheap at the local market today. Trouble is tomorrow we are scheduled for works on our power lines so the power will be off for 8 hours. I really hope it's not hot!

I got a crock pot and have been doing some crock pot meals the last week or so, yesterday I put 4 lbs of onions in it to make the Sweet Hot Caramelized Onions, after 6-7 hours on low it was still just a pile of not caramelized onions, so I turned up up to medium, after 5 hours they were starting to be sauteed looking but not the least bit caramelized so I turned it down and let it go overnight. They are still white with a lot of liquid, not sure where that came from but I turned them up this morning, maybe I will put them in a pan to caramelize later if they don't start looking brown soon.

I have to make some more doggie treats as the last triple batch, I bagged some up for 2 other dogs for Christmas gifts.

Jules, mangos are so yummy. I made jam a few years ago and it was wonderful on toast. But I bet you can make it more savory to glaze a pork roast or ham !

Nothing done today, had the Vets this morning and I had to water the garden this afternoon, but tomorrow I might have some time to do some Mangoes.

I'm going to the local market on Monday and with all the Summer fruits in season now and at really cheap prices, I might be able to find some nice stuff to can.

Believe it or not I have to make another batch of Red Onion Relish. This last batch is disappearing quickly, it tasted much nicer than the last lot as well.

I've got some small mushrooms in the fridge that I think I might marinate and can like the Peppers.

Beef Bone Stock...I have it all cooked down to a thick gel...Today it's going in to the dehydrator to dry and then grind to beef bouillon powder.
I have chicken bones in the freezer to try and make chicken bouillon .

What a Great thing those guys are doing !!! That's nice that they are trying to keep canning from becoming a lost art !

I Love Aldi's ! We have an Aldi's and a Save-A-Lot almost next to each other...And another discount store called Marc's...I go to these places before any other BIG store...
It's amazing the differences in price...

Well this thread disappeared from my Sparks list AGAIN!!! I hate when that happens.

Barb I've noticed that lately even the commercially produced onions don't last like they used to. They always tend to go soft and mushy!!

I just put away 10 jars of Sweet Gherkins and have got some Loquats ready to can tomorrow hopefully. My "kindred spirit" handyman thought my Gherkins were fantastic and invited me to come along to a "Canning" course/get together that he and another man are organizing next year. We're hoping to be able to get enough people and recipes to be able to make the produce on the day and have enough for everyone to take home.

Hi I'm going out today to do some errands...I may stop at the dollar store...I'm going to see if they have any small cookie sheets that will fit into my dehydrator...the shelves are 14" x 14"...

I know what you mean...There are so many cool things to try but no time now...

Patti, do you think you could use some disposable foil pans the right size? There are a lot of different sizes, I used to use them to make fruit leather when I had my homemade dehydrator.
I watched the video on bullion a couple of weeks ago, very interesting. The one thing I thought of was all the boiling down, looks like you would have to start with very concentrated broth or you wouldn't really get it thick enough to dry into sheets. My dehydrator has the fruit leather trays but they are only about 1/2" deep and with liquid you can't fill it to the top unless you are sure how level your dehydrator is, and knowing my 200+ yo house there isn't a level place anywhere, not to mention them slopping over if the floor jiggles when you walk by! I usually do the leathers about 3/8" thick to get about 1/8 fruit leather. I was thinking about trying it when I do the beef broth, but I don't want to do it all that way.
So much to try out there and not enough time lol

Me, too Barb ! Having my own stock/broth is one of my favorite things in my pantry.
I use it all the time....
I want to try Ourhalfacrehomestead's way of drying stock to have my own powder.
The problem is that I have an Excalibur dehydrator and it doesn't have the trays with raised sides. They are flat and the stock gel (when it melts) will run all over the place.
I may have to do it in my oven on cookie sheets with sides.

I will probably try it on the stove, you are just basically caramelizing the onions in the crock pot instead of on the stove, I am going to try some red onions first. Not sure if I am up to it again but I have a bunch of beef bones, actually a whole cooler full to make beef stock, seems like I have been canning stock for weeks. I do love having all that stock though!

My neighbor always grows a lot of what we call turnips here in Maine they are really rutabagas, he left me a bag of 6 and they are huge, but are not rutabagas, but really purple topped turnips. I wonder if it was a mistake when he planted them. I was looking for recipes because they are quite different then the rutabagas, and came across a pickled turnip recipe, you put a beet slice in each jar to make them pink. I think I may try a batch to see how they taste, turnips are kind of peppery and very crispy so it should be interesting.

You can make onion powder....
Just cut up your onion and ship them up to a coarse grind and then dry them and grind to a powder.
I do that with onions, garlic and shallots.

Squash, I can mine and yes it is time consuming. I wonder if you can dry it, too ?

For some unknown reason some of my onions are not keeping, I know we had wet weather when they were trying to dry but there are a bunch that are soft in the neck. So I am going to try the Sweet Hot Caramelized Onions in the recipe section, they sound delicious. I was also thinking of some of the cranberry mustard, or relish, since I have a bunch of cranberries, first the onions though. I am going to have to do something with the rest of the buttercup squash because it keeps for a while in the root cellar but usually not past the end of december. Does anyone have any recommendations? For the past two years I have let way too many spoil, I did can some but it takes forever to can and is probably not really worth it vs freezing.

I love cranberry relish, but I never think to make it. The cranberries were good picking this year! I am trying to tie up loose ends today, get the apples sauce in the freezer, finish canning turkey broth, and get a bunch of stuff ready for Thanksgiving dinner, make pie crust, cut up the bread and onions, celery, apples, and dried apricots for stuffing, and roast the chestnuts for the stuffing. Get the squash ready to cook, and start simmering the giblets if this darn turkey is defrosted yet, I asked my Dad to leave it out on Monday but it was still in the freezer when I picked it up Tuesday, hope it gets defrosted, it is not very big! I want all the stuff ready to cook, potatoes peeled, beans snapped, I am making a extra pie for my neighbor, he does about everything in the kitchen but pies. He usually goes over to his close neighbors for Thanksgiving but this year she is dealing with radiation and chemo so he is cooking for her and her husband. I figure one more pie is not much at this rate lol.

I want to get a coat of stain on my spice rack but that might have to wait for Friday. I always think I can get tons more then is even possible. I have a huge bag of beef bones from the beef in the big cooler with ice, hopefully it will be turned into lots of beef broth but probably not until Friday also.

The Soup starter is just broth and meat that I make for my Dad, he can just dump it in a pan and add noodles for chicken noodle soup or rice and some carrots and celery for chicken rice soup and so forth. I made him a list of different soups and what to add so they can have a variety of soups that are quick to make.
Sorry I didn't make those links clickable, middle of the night and all that lol! I was following some links to see different people drying milk and raw eggs for making mixes. The bullion sounds interesting but long, that is a lot of boiling down. I always like how little space it takes to store dehydrated items, you know like a pint jar of bullion that makes a pint of broth from a tablespoon of powder ends up making about 32 pints of broth, makes for a lot less jars and space to keep them.
I have always like to do the dehydrated foods, we used to backpack a lot and made all our own food. I still have a couple of boxes of backpack food in the freezer, meals all made up and packaged with instructions and notes of any additional things to bring to finish the meal. for example we made Pepper steak with our teriyaki beef jerky,beef bullion, dried peppers, dried onions, a 2x4" square of tomato paste leather and brown rice. We used to bring whole fresh garlic to add to it for taste, and a small package of a couple oz would feed two a hearty meal. With dehydrating your own veggies and meat you can make meals similar to what you cook at home and it tastes miles better then any backpacking meals you can buy for a fraction of the price. One of our favorite deserts was to bring dehydrated apples or a mix of apples and cranberries usually with some brown sugar and cinnamon, add water and simmer until tender then with a gingerbread mix that we just added water make dumplings and drop and top, tightly cover and let steam until done, pretty tasty after a day of hiking with a big back pack!

I I did 15 pints of soup starter, with "chicken substitute" lol. A jar broke in the pressure canner, that hasn't happened for a long time. Also finished about 8 quarts of turkey broth to can for tomorrow, no time for today, the soup starters take so long. Yesterday I had an applesauce day, where I sauced the remaining two 5 gallon pails of Alexanders, plus a basket of Maidens blush wild offspring and a basket of the wild green apples that I like to make cider or sauce from. I accidentally left 3 pails of the Maidens Blush that were supposed to go to the root cellar in the shed and they froze, the cows were happy to munch them down, but I was sad to see them ruined. There was just so much stuff to bring in that they got overlooked. Tomorrow the beef is being cut, so I made sure there was room in the freezer and with it will come a load of bones for beef broth, so I will be doing that this coming week.

Out of my 2 huge stalks of celery, I got 3/4 of a pint of dried and from the bag of parsnips, I got 1 half pint.
I think I'm hooked on drying....So nice to not worry about it going bad and it surely doesn't take up much space...

I just pulled out a serving of Moussaka and a serving of Stuffed Shells for a quick meal for the boys here. I had leftover fried rice. I think I have a couple more serves of Moussaka or Lasagne in the freezer, once they have gone I'll have to replenish.

I just put away the Mangoes and Kiwifruit I did the other day. I really need to put together my long cupboard, I've run out of places to put my bottles.

We canned 11 more pints of tomatillo salsa. I think I may finally finish my canning this weekend after we make a few jars of horseradish, tomorrow. It's been a long haul this season. If only I could take a week or two off from work... :)

My poor Sammy Dog has been itching constantly. I changed his food to have no artificial coloring and that seemed to help. His treats had coloring so I made a batch of banana peanut butter treats with oat flour.
I made a double batch hoping he would like them...
Well, he does and a lot !!!!
I had the second round in the oven and he came running in my office, jumping all over the place. I thought he wanted to go outside (mother nature calling).
As we ran into the kitchen to the porch door, he took a left and ran to the oven...
Here the timer was going off and I guess he didn't want his treats to burn !!!

I didn't roll mine out. I just dropped them by teaspoons on to a cookie sheet and them pressed them with the bottom of a glass dipped in water. When I made them to big, I cut them in half while still warm.

When we had a mama cat leave her 5 babies in our wood shed, they would stay in between the logs and only come out when I brought food and left it there.
Then I thought. if they want to eat, they are going to have to come out while I'm there.
So I got a 5 gallon bucket and sat there with the food bowl out for them to eat.
If they didn't come out, I took the food and bowl with me.
Well, the first and second day, they didn't come out...But the third day, they were so hungry, I guess they didn't care that I was sitting there.
I did that for about a week and then I brought out a toy for them to play with.
Well, as the story goes, 3 of them went to a farm as I couldn't capture the last 2 of them.
They are now My Hoot and Skoot and that was in 2009 and they still play with that same toy.

Chickens make great pets, not a good think if you are thinking about soups or casseroles though. I've had pet chickens and they are very loving.

I'm with you Patti, if I had to kill an animal I'd be a vegetarian for sure.

help, I scanned and couldn't find the thread on the food saver bags.

I know what you mean about the animals, I guess in my mind I separate birds from the other animals, the birds rarely really get to know people well, but having said that this batch of laying hens are really into me, I go in there and they crowd around me like I am mama, and when I was on vacation, they dropped their egg production until I got back and the same thing when I was in the hospital for 5 days. I have to allow myself to only get attached to the ones that will stay, my ewes, the ram, the brood angus and the jersey milk cows. The Steers for meat are usually big babies but I try not to get attached to them, sometimes there is one that gets under my skin though. I was reading your post and thinking of how bad I feel over a kitten that died tonight before going to work, it just broke my heart, I got the two kittens last sunday, the little one was not doing so well, they are young and the mother apparently abandoned them, the friendly cute one died, the other one is kind of wild, he escaped the cage and is living in the wall in the barn, I am trying to recapture him but can't figure out how yet, I am feeding him over by the whole in the wall, it will take time I guess.

I only do chickens every other year, and one turkey a year, the small one was for me, and it is all cut up and vacuum packed in small portions of breast meat cutlets about 4 oz to a package, one wing in a package, one leg for making stew or soup, some stew meat packages of 1/2 lb or less. It will last me a whole year with about 35-40 packages of meat. The carcass of the turkeys which is a lot of the weight was all made into stock, and I will take the meat from that and make some freezer meals for my parents because I will never eat it all. The real reason I grow the chicken, turkey, and other assorted things is the huge taste difference. A home grown turkey or chicken is as far from store bought ones as canned spinach is from fresh green leaves, they are very flavorful, make twice the stock or gravy (not that I make gravy much except holidays) and are moist, never dry. My home grow beef is the same, I was out for a while and couldn't believe how much a really poor steak cost in the store, no flavor, tough and dry. There is a huge difference in home grown pork it is nothing like the salt infested stuff they sell in the stores now. I sell a lot of the meat I grow, or barter, one turkey was sold and one was exchanged for a new born calf I got in July. Usually I only keep a hind quarter of a beef about every other year, that boils down to about 125 to 200 lbs of meat, usually closer to the 125 mark, and when I sell it to people it is dependent on "hanging weight" . The going price for beef this year is $3.50 lb hanging plus slaughtering costs, a huge difference from paying 8, 9 or 10 bucks a lb for marginal meat with growth hormones and antibiotics all through it.
But growing your own meat is a personal preference and most people don't have the time, place or interest in doing that, just like growing your own veggies and fruit. I would probably eat a lot less meat if I didn't grow it, because of the lack of taste and the expense, and I wouldn't be able to afford to do so much cooking for my parents.

I honestly wouldn't know what to do with all of that Turkey (or Chicken for that matter). Sometimes I think I'm a borderline vegetarian, I eat meat and like it for dinner but I'm quite happy with vegetables for a main meal and I think that you have to be more creative when you are making meals out of just vegetables.

I am waiting very impatiently for the last canner load to cool down, I ended up with 9 quarts of turkey stock, 8 pints of chicken stock and 8 pints and a half pint of duck stock, all of them were double strength. I don't usually do the quarts anymore but ran out of pint jars, who would have though I would ever run out of jars lol. Just the rabbit left to do next week, when the rest of the rabbits are done.

I have heard of a winter banana apple, someone at Fedco thought my Maidens Blush was a Winter banana, but I think they are wrong, the winter banana tends to be later here in Maine then the Maidens Blush. The Maidens Blush used to be a common apple for growers long time ago and I read where there are still big old trees, guess I have one. I have a lot of weird apple trees because we have Fedco tree sales every year, and I have planted two orchards worth already. It is a good thing I have 70 acres!

I am glad you mentioned the Chicken a la king, I have about a gallon each of turkey and chicken after making the stock and soup starters I will make some freezer meals of Chicken a la king for my parents, they really like it. I always pick out the meat then wonder what I am going to do with it all. I think I would like your turkey soup with the stuffing in it, I love turkey sandwiches with stuffing on them!

Yum, I am jealous, I would love that much turkey in my freezer. I didn't get any back-up turkeys this Thanksgiving, hoping to get a second one at Christmas time. I love turkey but it is too expensive to buy when it isn't on sale.

Barb, I never heard of Russet Apples. I had planted a Winter Banana Apple tree years ago and last year was the first year we got a bumper crop....And were they Good !
This year, we didn't have any apples on any of our trees...
These are a mid season apple and indigenous from our region.
They have a slight banana scent, hence the name...
Well, I must say...THAT'S A LOT OF TURKEY !!!!

I love my Turkey Dump Soup because the dressing I add make it taste like Thanksgiving...
Maybe Dad could add sage croutons to his soup...
He could add cream of mushroom soup and veggies to a jar of your mix and put over toast (Chicken a la King) !

Well you know what they say about good intentions, my hip was aching so much I couldn't stand around for long, I ended up at the Chiropractor this afternoon. I will get it done somewhere in the fullness of time.

I have to say I'm not a fan of Turkey, I can eat the breast in small amounts but it's never really been a favourite of mine.

Actually they are russet apples, it is an old apple, they are small and green and the skin is very bitter when they are not ripe, they ripen very late, a lot of years they freeze first. When they are ripe they are perfect, Very sweet inside and the skin turns all brown and ugly looking, I picked a 5 gallon pail when we got our first blizzard, I stopped the other day and found they were still good. They are a keeper apple and in the root cellar they can last until June easily but they never do because I eat them all!

Turkeys that size take a lot of muscle to wrestle around and cut up, getting the legs split off the caresses was a hassle. It took me 3 hours to get the big one all done for my neighbor. When I was done there was 16 lbs of turkey breast cutlets, 3 packages of turkey stew chunks, the legs were wrapped for stew they were over 5 lbs each, and each wing without the tip was 3.5 lbs. I bone out the huge thighs and they make a great roast spread with stuffing and rolled up and tied, the ones to the large turkey were 6 lbs each. The carcess took up all of a 3 gallon pot after getting it broke down, so I had two of them simmering. I love that my fresh herbs are still around, so I had fresh parsley, thyme, and celery to add. I usually do my broth double stealth so when it is ready and tastes good I boil it down by half, so now I have a 3 gallon pot full of double strength turkey broth to can today.

I got to the point that the turkey broth is ready to can today, the chicken and duck broth is ready to de-fat and de-bone the meat. I didn't get the rabbit out yet because there are 17 bunnies ready to go to the freezer when my neighbor gets home from polar bear gazing the end of the week and I thought it would be best to do it all together when I have my half of the rabbits.

I am going to make up a bunch of soup starter for my Dad. I have loved having the pints of about 1/3 meat and rest broth. Dad is very cooking challenged so what I have done is make up a sheet of recipes to make different chicken type soups and stews. He will be able to make chicken noodle, chicken rice, tomato chicken rice, chicken stew with barley, chicken vegetable, and chicken tortellini with the addition of different ingredients. Can anyone else think of other kinds of chicken soup you could do this way? I have typed instructions for each, it is hard to think of making such a small batch of soup but it should be easy for him to chop a carrot a stick of celery and add 1/3 cup of rice and simmer for 20 minutes for chicken rice soup.
I didn't get started on the Brussels sprouts yet, ran out of time and today is my last night off, so I do need to get them done, they take so long to clean up, but keep in the fridge for a long time so it is worth it.

You made me laugh at the "russets on the tree."... I kept thinking...Potatoes don't grow on trees !!!???
Russet Pears Do tho ! It took me a minute to figure that out !

I did 14 pints of chicken stock and 2 dinners of chicken croquets are in the freezer.

I guess today is cut up the turkeys and do stock day, maybe it will take most of the day but hope not, still need to do Brussels sprouts, and finish some apples, and maybe pick some russets they are still good on the tree

I never got a chance to do my Mangoes and Kiwi fruit, I spotted a parrot in my apple tree and once the birds start in on the fruit, they never stop. Had to pull out the netting to cover the tree, not a small job I tell you. Once we did all that and I did a couple of loads of washing, I'd run out of day emoticon

Thankfully hubby stayed home today and didn't come shopping. He wasn't feeling well so he sent us in. We did some looking around the mall, used some gift cards me and the kids had. I picked up a new KA stick blender.

Then a few more stops and THE stop he hates with a passion. Costco. For meat shopping, I broke down and bought a beef strip loin, been craving steak, picked out the smallest one, a pork loin, a couple packs of chicken thighs and a pack of hamburger, but forgot the wraps to make burritos. Time to restock the meat in my freezer, I still need cooked diced chicken, hoping to put in a pick up order for that on Wednesday.

Today the Turkeys are going to be processed, did one Friday night about midnight so I could take it to my nephew and niece on Saturday, that turkey was HUGE! It dressed at 48 lbs and was quite a struggle to get finished, lifting them up to hang them is not fun when the live weight is probably much over 65 lbs. I will cut up mine to freeze in parts and make broth of a lot of the bones. I already took out the chicken broth packages and will combine them with the turkey and some rabbit to make a mixed stock. My neighbor will also have his cut up, so that is tomorrows project after they sit over night.

I'm drying about 8 lbs of the 10 lbs of potatoes I got...Almost dry.
Will try Scallopped Potatoes dry mix for some of them, the others will be Au Gratin.

Making chicken stock with 10 lbs of legs and thighs I got for .59 / lb.
Will pressure can it.

Finally did my Dill Cucumbers, 8 small bottles, the pickling brine tasted really nice too.

I got Mangoes and Kiwifruit on special yesterday but I just didn't get the time to do them today so tomorrow I'll be canning Mangoes and Kiwifruit in Passionfruit syrup!! If I have any more time I might try the dried tomatoes in the marinated style of the peppers.

Results of the dried potatoes from 3 lbs of potatoes from our garden.
Made 3 meals...

Put in quart jars and sealed with my foodsaver vacuum lids.

I should buy a 10 lb bag and do this again...
