I got some beetroot at the local farmer today so I'll probably be canning these along with more tomatoes tomorrow. My beetroot was pitiful in the garden this year and I haven't been able to grow enough to replace what I've used over Summer

As I'm inundated with Tomatoes, (up to my eyeballs to tell the truth) I'm canning tomatoes. I usually only can them on their own with a bit of Citric acid included. The tomatoes that I grew (mainly Black Krim and other heirlooms) are extremely juicy so I don't need to add any tomato juice to the bottles.

I have to go out and buy some more bottles as I've used all the Fowlers Vacola bottles I had and they are the ones I like to use.

Too bad it didn't work out. I always debated on making those for gifts, but I never do. I guess I do worry that they won't work out.

For me this weekend was about restocking. On Friday I finally made it to the warehouse supply store and picked up more bread bags, pancake mix and cooking spray. I forgot the soup bases though.

Saturday, I bought meat from Costco, chicken thighs, pork loin and beef strip loin. I also stocked up on rice.

I received a "Chili in a Jar" for a Christmas Gift so I made it. I got a huge pot of chili using 2 lbs of ground beef.
I was going to pressure can it in pints but it came out awful !!!
Really pasty and not much flavor...
Hence, it went in to the garbage !

I've never heard of Coney Sauce Patti, will have to look that one up!!

I am having a BUMPER crop of tomatoes at the moment and while we are eating tomatoes with everything, there is so much left over. Will have to preserve a few bottles just as "diced tomatoes" to keep the cupboard stocked and to keep control of all the tomatoes. I've just started picking the eggplants now as well (there are lots of these as well) so I'll be doing some marinated and I might lightly grill some slices then freeze for things like Moussaka etc.

I processed my dehydrated tomatoes into powder. I have become dependant on having tomato powder in the cupboard, I find it more handy than the case of tomato paste I bought back in fall. I processed just over 2 qts tomatoes and ended up with over 1/2 qt powder. I forgot to save some dehydrated tomatoes for a salad I wanted to make.

I also made 4 loaves bread, 16 pizza sticks (using homemade pizza sauce and tomato powder), 3 cups Candied Pecans. My older DD made Cake Donuts with Chocolate Glaze.

We were at an auction last fall and I got a hot dog from the food cart with chili on it.
To my surprise , it was a Coney Sauce just like Dairy Queens old recipe...
It was So Good that I asked for the recipe. She emailed it to me a few weeks ago.
Today, I'm going to make it (only 1/4 recipe) as the original recipe calls for 10 lbs of ground meat. That would last me forever !

We will have some for lunch and I will freeze the rest in small containers !

I just had a look at the Plum Jelly I did the other day and I think I'll have to give it another few minutes cooking. It set reasonable well the other day, but for some reason it seems to be a little runny now. Looks like I'll have to mix in some pectin and reset it.

Got some lamb at the supermarket very cheap yesterday, so today was spent cleaning it up for freezing.

from an 20 oz. jar of minced garlic...minus some that David took home, Maybe 2 ounces, I got 2 ounces of powdered garlic ! I know it doesn't sound like much, but it is really strong and you don't need a lot.

I'm making some garlic powder for my brother. H bought a Huge jar of minced garlic that he could never use in a lifetime !!!!
I'm going to make a puree with it, then dry it and grind it up for him.

I just put on some Beef Stew. I am using the roaster oven,but I filled it just over 1/2 way. Not as much as I wanted to make, but it will make lots of meals. After dinner I plan on freezing some as is for meals later on and some will be made into Pot Pies. Hubby has been asking for pot pies lately.

I and Mom ,did up a bunch of frozen meals before Christmas time. I sure am glad we did. These last few weeks have been rough on Mom and I, and we just have not been up to cooking much, and have been using the meals that we prepared beforehand.

Making your own freezer meals is an awesome thing to do. I work as a school cook, and lately I have been coming home not wanting to cook, thankfully I have a variety of freezer meals to pop in the oven. I know the are healthier than what I could buy, and lots of meals you would never find for sale, and they are catered to our (or should I say my) tastebuds. Plus some things I find in stores I don't like. I never liked Pot Pies until I ate my co-worker's homemade ones, now that I am making them I can't keep up with the demand.

I froze some freezer meals today after I came home from the hospital. Some Beef & Spinach bake, Macaroni Bolognese and some Cottage Pie.

I love these in the freezer, they are great for when I can't be bothered cooking, or when I come home from the shopping or hospital tired.

I'd think once in a blue moon wouldn't hurt. It's not as if you are eating it everyday. Nothing more scrumptious than a steam pudding made with suet.

Chicken soup is by far my favourite soup. I love all soups but chicken always makes me lick my lips

I would LOVE to make some pastry with my suet...But the DR. Would Shoot me.
We are both on Cholesterol meds !!!
I can taste it in my mind !

Yesterday, I pulled out some suet for the birds and ended up pulling out some chicken necks and backs...SOOOO, I'm making a big pot of chicken soup. I may boil it way down and pressure can some rich, thick, broth.

Simon, my yard worker dropped me off 4 kgs (@9lbs) of cherry plums yesterday. I was deciding what to do with them all, I ended up cooking the lot and straining the juice and will make some Plum jelly. I can use it in all sorts of sweet and savoury things and might do a small batch of spiced plum jelly.

He also dropped off a couple of jars of Apricot Jam and Plum Relish, I gave him a couple of jars of my Sweet Gherkins (his wife loves them) and a jar of my Moroccan Eggplant Jam.

Patti do you know that suet makes a great pastry? Steamed puddings (like Steak & Kidney pudding or dumplings etc) are made with a suet crust pastry

While I was out at the butchers yesterday, I got suet for the birds and birdseed at another store.
I'm going to make bird seed suet cakes and crock pot soap. I just need the crystalized lye for the soap making.

I made Pea and Ham soup today, with the leftover Christmas Ham bone and a piece of Speck that was in the fridge.

There'll be plenty left over to freeze in serving packets, ready to pull out at a moments notice.

I must say, the Pea Meal Bacon is Wonderful. It's like a juicy, tender ham.
I surely will do this again !

Next time I will slice it before freezing. (par freeze and then slice)
I cut it into chunks and then froze it. It's hard to slice when thawed.

Yes, let it cool down to a really thick jelly. Then cut it up and put on a tray with sides as it does melt in the dehydrator.
I have an Excalibur that is square and no trays with sides to fit...So I bought the round leather trays and just set them on the shelves.
You need to watch Bev's video. She really does a great job showing how to do it. She's such a Hoot !

Did you let it cool to jelly before slicing and putting in the dehydrator, I am afraid it will run over, thinking about warming it and pouring it in the trays. It is VERY jelly like! I boiled it down to just about a quart from a gallon, and the gallon was already double strength. I probably won't get very much but it is interesting!
I noticed the pumpkin discolored the trays, it is the first time I had anything discolor them, even blueberries didn't.

I use 1 tsp per cup of hot water. I cooked down the broth until it was really thick...So I guess it depends on how far down you cook it to determine how much to use...
I used it when I made pot roast and to make gravy.
I'll be making chicken bouillon next...
I was really surprised how good it is...

I thought about it, I still have about a gallon of broth left after canning 7 quarts and 10 pints and may start to boil it down, it is already double strength so it shouldn't take too long to get it more concentrated. Guess you talked me into it!
How are you using yours? And how much per cup of water did you end up using, I noticed in the video that she needed a little more then a tsp.

I have a whole rack of candied orange peel drying, took longer to arrainge on the rack then anything else!

I put off doing the beef broth for days now, I was going to do it last week, but I finally got it out and defrosted, and the pressure canner is about ready to go, probably two batches tonight, one of quarts and one of pints, just waiting for the jars to be done in the dishwasher.

I generally buy the higher thread count flannel sheets (like Cuddl Duds from Kohl's) and they don't pill at all...And They last a really long time. It took me a while to find some that don't pill. Kohl's has them on clearance now.

I like the feel of cotton sheets, I love the coolness of them as well. Flannels always pill no matter what you do to treat them.

More apricots today, so it looks like I'll be canning apricots tomorrow. Just as well the weather has turned cool.

Bread is Rising...Snow is Falling !!!! What a Great Day !!!

Making 2 loaves of Harvest Bread the Julian St. Way...1 for us and 1 for the freezer.

To much snow to go to work at the Food Pantry...Schools are closed so we are too !
I'll get out the sewing machine and sew my sheets...Jimmy like his flannels and I don't mind them on the bottom, but the top sheet, No Way !!! To Hot !
So I take a flannel and a cotton sheet and put them right sides together and sew 2 lines down the center. Then I cut in between the 2 lines and roll each raw edge and sew it down...Voila !! 2 top sheets with half flannel and half cotton ! And then we are both Happy !

Is that Putting Up? I'm Putting Up Extra Sheets for the Linen Closet !!! emoticon

I brought my little Jack Russell home from the vets today so there's not much getting done here but making her comfortable.

I have noticed my garden has gone silly over the past couple of day with the rain and the warmth, I'll be picking a load of stuff and figuring out what to do with it all.

I did my Peameal Bacon yesterday...out of 9 lbs. I made up 11 packages for the freezer.
I taste tested it and "I'M SOLD" !!!! It tastes like ham and it's moist, not salty and really good.

After the kids leave today, I'll be taking down the Christmas deco's and making bread.
I hate to say this...But I'm glad the Holidays are finally over !
Now back to Normal...Winter Sewing and planning my gardens and making maple syrup in the middle of February.

We had a night of rain last night and the weather has cooled down quite a bit. Amazing the difference after some water on the garden and for me!!.

I preserved the Apricots this afternoon and planted some more Basil and Sage into pots. I planted Garlic yesterday and tomorrow I'll get into the garden and try to fix up the bean bed. I've got the Sulphate of Potash so I'll replace some of the soil and sprinkle with the Potash and then I'll plant some more beans, corn and lettuce.

I'm hoping this will make a difference. I found a shade sail in the garage so I think I might put that up over the bean bed, it seems such a hot part of the garden so I think a little cover might make a difference.

I did my onions and potatoes yesterday. They are just finishing in the dehydrator now.

I had to pull out my corn I planted from seed and replant with seedlings this year. I don't know what happened but it grew then produced the seed heads but with no corn cobs???

I'm sure getting good use out of the summer sweet corn we cooked then sliced off the cob and bagged in single serving bags for the freezer.. Oh it's so very good. Did I tell you I love my new well since August... Kenmore floor freezer?

Elderberries also need to be ripe when you pick them, dark purple not red. I make my juice in the steam juicer so it is heat treated, I guess you can also dry them and that takes the toxicity out of them too. I wasn't thinking about the auto immune diseases, but that is a good point, wonder if I shouldn't be taking it with the ITP. My Dr has been slowly decreasing the prednisone over the last month and yesterday was the last dose, we will see what the platelets do in 7 days, hopefully they remain steady.
Guess I am off to bed for the rest of today! Tomorrow I am going to thaw the beef broth and can it, the last batch of broth for the season!

Barb, I put your Elderberry Syrup Recipe in the Misc Recipe Box so we can find it later.

I did my carrots and celery yesterday !
Carrots I cut 3.5 lbs for soup and 2.5 lb a bit bigger for stew.
Soup carrots = 1 1/4 cup
Stew carrots = 1/2 pint jar.
Celery (1 bunch) = 1/2 pint jar.
Look at all of the freezer and pantry space saved !
Today is 3 lbs of onions and Potatoes (before they get sprouting !
And Sewing my grand daughter's sewing machine cover.

They are only poisonous raw, even the juice should be heat treated. It's also said to stimulate the immune system so people with autoimmune diseases like MS, Lupus etc should stay away from it. Other than that I think that Elderberry jelly would be lovely

Elderberry syrup
I juice my elderberries when I pick them, using the steam juicer, so I have a bunch of canned elderberry juice, when that is gone I will use the frozen elderberries, I have about 4 gallons of them in the freezer plus an extra 1/2 gallon of the juice that I just pulled out and made syrup from on Saturday. I use 1 quart of juice, 2 TBS of fresh grated ginger, two cinnamon sticks, 1/2 tsp whole cloves. Bring the juice to a boil and add other ingredients, then simmer gently for about 15-20 minutes. Allow to cool to room temp and add 1 cup raw honey. I also get my honey for free because my neighbor gives me quarts at a time, he gave me 3 quarts this fall, and another one before Christmas. I think if you are going to buy dried elderberries and honey that this would be rather expensive, but with those being free it is very cheap!

I take a shot glass of it daily, they say to take it several times a day if you have the flu or a cold. I ran out of the stuff the week before Christmas, then got the flu the week after Christmas :( There are a lot of recipes out there that use dried elderberries but not so many that use the juice or fresh elderberries. I even read some sites that said how dangerous picking your own is, and how they can be poisonous. Wonder what they would think of Elderberry pie? I make one occasionally for my neighbor the Veterinarian, because he does stuff like coming over to vaccinate my kittens the other day. Elderberry jelly is one of my favorite jellies, tastes like a not so sweet blackberry jelly or a blackberry jelly with a little bite to it. When we were kids we used to make Jelly omelets sometimes, just a regular plain omelet that is spread with jelly and rolled up. I made one last week with elderberry jelly yum!

I bought 2 gallons of OJ yesterday (on sale and I had coupons) They are in the freezer.
Also, got 5 lbs of carrots and 2 stalks of celery to dehydrate. Will get them going this morning.
