Well, we made our bologna and it tastes WONDERFUL !!!! BUT..................
It's a bit grainy in texture and hubby hate everything about it... emoticon
It tastes more like a Trail Bologna...
What to do with 13 lbs of homemade bologna ??????????????
We had a Blast making it, though !!!

I made a large pot of Cabbage, Bacon and Onions (I don't do the noodles)
I will put it in lunch size containers...and freeze them. I tried pressure canning it before but I didn't like the texture.
All Mine as Jimmy won't eat cabbage !!! emoticon

I finished Dehydrating my greens...Kale, Spinach and Collards...

I washed them and soaked them in a salt water bath for 5-10 minutes, then rinsed and spun them dry in my lettuce spinner.
Laid them out on the dehydrator trays with a mesh screen.
Dried them for 3-4 hours on 125F

Then ran the dried green thru the food processor...

Put the processed green thru a fine stainer. I tossed the stems !

I had to process and strain a few time, then finished the last bit with my coffee grinder.
Look at this Pretty Green Powder...Almost a whole Pint !!!

Can't wait to try it in my soups and sauces and MAYBE My Smoothies !
Still can't get down a Green Smoothie !!! :}

I wanted to be busier today. But as I waited for the kids to do their chores I got too comfy on the couch watching tv with hubby.

I did get up earlier this morning to drain, rinse and start slow cooking pinto beans (was 3 lb dry). Then after 2 I finally cooked up the 3 lb bacon, drained the grease. Cooked up 5 lb hamburger and seasoned with 4 packs taco seasoning. Made Refried Beans using the pinto beans and bacon grease. Yum. Used the refried beans, taco seasoned hamburger and cheddar and made 51 Burritos. I still have enough filling for 4 more burritos, but I ran out of wraps. We ate 10 for dinner. The rest went to the freezer. I was hoping to made bread today, but the house was just too chilly.

Made 20 suet cakes for the birds !!!
I saved the plastic forms the store bought one came in that my DH bought for me for Christmas (2 yrs in a row) He couldn't understand why I would save them !!!

Then I need to bottle the 2 gallons of syrup we made yesterday and pressure can the chicken stock I made in my pressure cooker.

At the Amish butcher shop, I got some ground pork to go with the ground beef I already have to make a freezer batch of meatballs....
He gave me the chicken necks and backs (and 2 huge pieces of suet) for free as I keep bringing him new customers... Bonus !!!

I'm trying to get my freezer staples and canning things that I can get done before the gardening and Putting Up season starts...

Boiled sap yesterday and got 1.5 gallons of syrup.

Some of the water in the buckets froze so we took off the ice ...BONUS !!! Less water to evaporate !!!

Froze 15 lbs of Pork Shoulder Steaks. Found them for 1.49/lb.
Also, bought a half Sugardale ham for .99/lb. Will cook that up today and freeze packages for lunches and sandwiches and use the bone for some sort of bean soup.

I made the crock pot bread !!!
I made and kneaded it in my Kitchenaid mixer ...
I finally found a bread pan that would fit in my crock pot !
Used crumpled foil in the bottom.

Pan that fits crock pot...'

bread dough in pan...

Covered with foil...

I peeked but water was under the foil !

I covered it all with a towel to help absorb some of the condensation !

My Whole Wheat Crock Pot loaf !

Looks Good !!!
My 2 problems are...
1. my pan was to large as it rose up to the lid.
I will use 2 smaller pan for this recipe next time...
2. my wheat flour must have gone a bit rancid.
make with fresh flour next time !!!! :}

Super Easy ! You All have to try this !

DON'T DO IT !!!
It tasted very good but the sausage patties were mushy after refrying them !!! :{

I'm RE-Putting Up my strawberry jam !!! It was kind of runny and hubby likes it thicker...

You sure are a big baker young lady !!! I'm Drooling !!!!

Yesterday, I got out my new pressure cooker and made beef stock !
It said it would take 60 minutes in the recipe...
But you have to cook the bones and veggies for 50 minutes in your oven, then add it all to your pressure cooker along with 8 cups cold water...
Turn it on and it took 25 minutes for it to come up to pressure, then the 60 minutes started....When the 60 minutes was over, it took another 30+ minutes for the pressure to go to zero !!!
So that's a total of 165 minutes !!! (that's 15 minutes short of 3 hours ) !!!!!!!!!!!!!!!!!!
But I must say, it was the richest beef stock I have ever made.
After all was done, it made 6 cups of stock...SOOOO...
On with the experiment...
After straining the veggies and beef from the first batch, I added another 8 cups of water and ran the pressure cooker again for a second time to see what kind of stock I would get. I got 8 cups this time and It was not bad so I added it to the first batch that was way to strong and now I have 14 cups of stock... I may boil it down just a bit and then pressure can it today !

I just went and got the pot our of the frig and scooped off the top layer of fat...
AND tasted the stock ... YUMMMMY and Rich...So I guess adding the additional water and running thru the pressure cooker a second time did get a lot more flavor out of the meat and veggies...
RESULTS...
1. if I run it thru the pressure cooker once, I get a really rich stock where I would only have to use half of what a recipe would call for....
2. if I add 8 cups more water and run it thru a second time, I get more flavor from the beef and veggies, but will have to use what the recipe calls for.
3. Next time, only add 4-6 cups of water and run it thru the second time and still have a really rich stock.

I baked like a mad woman.
3 loaves Banana blueberry Bread
3 loaves Gingerbread Loaf, Starbucks clone without the cram cheese icing.
3 dozen Zucchini Chocolate Chip Muffin

I put 2 loaves of each brrad and 18 muffins into the freezer.

Well, I had to get out my new pressure cooker and try to make some beef stock to can.
It says it will only take 60 minutes !!!???
Well, first you have to roast the veggies and beef for 50 minutes and then put it all in the pressure cooker. It took 25 minutes to get up to pressure and now it's on it's 60 minute pressure cooking time !!!
I can't wait to see what it tastes like !
I've never cooked in a pressure cooker before...
Does anyone have a favorite recipe they would like to share ?

Here is the recipe I am following...

Beef Stock – 8 Cups

Ingredients
2½ pounds beef and/or veal bones
1 pound beef chuck or other stew beef, cut into 1-inch cubes
2 large carrots, peeled, cut into 3-inch lengths
2 ribs celery, cut into 3-inch lengths 2 large onions, peeled and quartered
2 tablespoons olive or vegetable oil
6 chives 6 sprigs parsley
6 sprigs thyme
3 cloves garlic

Instructions
Preheat oven to 425°F. Arrange bones, beef cubes, and vegetables in a shallow roasting pan. Drizzle with oil and toss to coat. Roast for 25 minutes, then turn and roast for an additional 25 minutes. Tie chives, parsley and thyme into a bundle using butcher’s twine. Transfer browned bones, meat, and vegetables to the ceramic pot of the Cuisinart® Slow Cooker. Add bundle of herbs, garlic cloves and peppercorns. Cover with 8 cups cold water. Cover and press the on/off button to turn the unit on. It sure Does !!! I keep trying to make a GOOD meatball, but mine always come out dry and not light and fluffy like my mother's used to be !!

Yesterday, I made a huge pot roast and a large pan of mashed potatoes. I'm going to make freezer meals with the leftovers...:}

The recipe calls for onion soup mix (which I make myself with my own dried onions, onion powder, my dried parsley, garlic powder, etc.)
Well, I used up what I had, so I made a new batch...
It was so nice to have everything on hand,,,The recipe is in the Dehydrating Recipe Box ...Onion Soup Mix 4-13-13 !

Does freezing count? I made a double batch of meatballs (venison) today. One batch of small ones for spaghetti and meatballs, the 2nd batch of larger ones goes into the freezer for meatball subs.

I, too, decided to brave our cold weather (yesterdays high was 15) and go to the bank and pick up some milk...I ventured back to the produce section and to the discount shelves and found peppers (3 large red, yellow and orange) for 1.00...I got 3 bags = 9 peppers for 3.00...
The 1.00 onion bags had 2 - 2 lb bags in each of them...I got 2 bags. = 8 lbs for 2.00 !
Onions are in the dehydrator and the peppers will go in when the onions are done !
Off to work at the Food Pantry today...I do hope the heat is on ! :}

I made 7 meals Lasagna. Using tomatoes I canned instead of making the lasagnas this summer when I was too busy, or too lazy to make them. 1 family meal and 2 lunches Smoked Chicken Soup, using up 2 smoked chicken thighs the kids didn't eat and smoked chicken stock I made and froze this summer. 3 lunches Steak & Barley Soup, using up a couple steaks the kids didn't want because they had the tummy flu.

Good Morning Everyone !!!

Yesterday, I water bath canned my crushed my pineapple (got 9 -half pints and 2 - quarter pints) and took out the whole tomatoes from the freezer that are taking up a ton of room...(the tomatoes from my garden at the end of the season that ripened in my living room) ...
I had a 16 Qt stock pot full plus another 1 gallon bag that I added once the frozen ones in the pot started to thaw ! Once it was thawed and mushy, i ran it thru my blender (as one of you said you do)...I never had tried that but it sure is quicker then getting out the Victorio strainer and running it thru it !!!
Then, I added some of my diced tomatoes and some of my thick sauce and my tomato paste and powder, my dried onions, my dried red peppers, my garlic powder and let it cook ALL day on a low simmer...When almost done, I added my dried oregano and basil.
I ended up with 11 Qt of Ragu !!!
Now I have room in my freezer and pasta sauce in my pantry !!!

I went out yesterday to pick up a "FEW" things and found some Great buys !!!
When veggies or fruit is on their way out, they put them in a bag and sell that bag for 1.00 ...
I got a bag of 16 oranges that I will juice and freeze. Done
2 bags of garlic with 12 cloves each, total 24...making garlic powder.
2 bags of 1 pineapple each to can crushed pineapple. Ground, need to pressure can.
2 bags of 3 large yellow and orange sweet peppers in each bag, diced and frozen. DONE !
Then they had chicken legs and thighs for .39/ lb in 10 lb bags...of course, I got 2 bags.

1 bag already made into stock. I will pressure can the stock, freeze the meat or maybe can it and the schnibbles will be dog food...
The other bag is in the freezer, made 6 meals !
Gosh, don't you just love it when you get a deal ?

I did a bunch of baking for Christmas and has almost all has been eaten. The only thing I put into the freezer was the Potato Bread Loaves. I put 3 meals Turkey Casserole and 2 family meals and 2 lunches Turkey Soup. Also 21 1/2 Waffles.

I Love green bean casserole, so I made some for dinner and put 2 dinners in the freezer.

I got a free peck of apples, gave some away and froze the rest...enough for 4 pies !

I just recently pressure canned spaghetti sauce for part of my Christmas gift baskets. However, I included the meat in the sauce like I normally would for dinner, so pressure canning was necessary. 10lbs pressure for 60 minutes.

I finished up my beef bone stock last night, I did the bulk of the pressure canning Sunday but had 6 pints left when I had to go to work for the night, so for some reason making supper very late last night I decided to get it done at midnight! So I am stock rich now, with 16 quarts and 14 pints of concentrated beef stock, a few weeks ago I did the chicken and got 20 pints. That should last for the winter, I love having homemade stock, it is so different from the tasteless stuff in the store. I phoned the butcher at the last minute and asked him to save the bones for me since neither of my customers wanted them and ended up with two huge boxes of bones, it took 4 big pots to get it all simmered after roasting. I simmered them overnight and the taste is awesome!

I do add onions, sweet red peppers, garlic and basil and oregano...
I've been doing it since my grandmother, mother and I did it when I was 5 !
I'm now 62 and am still doing it that way !
I do not say you should do it my way, but if you are doing just tomatoes, you can water bath can it.
Do get yourself the Ball Canning Book...Such a wealth of info and Basic Instructions...
Would be a Great Stocking Stuffer from Santa !!! :}

I pressure can my spaghetti sauce, I use the recipe in putting food by, and the USDA guidelines. When you start adding non-acid foods to the tomatoes you need to be careful!

I am new to canning and looking forward to getting started. previously I would freeze my garden bounty, but freezer not so big and no room for a bigger one. made lots of pickles this summer. so much rain and that was the only thing that grew. I love my Bradley Smoker. I am happy I held out for one. Over the years I debated on the Big Chief Smoker because it was way cheaper. But to fess up I am pretty lazy. Forgive me for sounding like a Ronco commercial. But I like the whole "Set It And Forget It" of Bradley Smokers. Some hard-core smokers call it cheating or not as good. But we have a few in the FB Group that say they really can't taste the difference.

I bought 10 lbs of chicken legs and thighs yesterday for .59/ lb....Froze the thighs and simmered the legs and some celery for stock...To busy to pressure can, so the 2.5 qts. went into the freezer...The meat will be picked off the bones for pot pies etc. for the freezer and some for dog food !

I read up on it. With the Bradley Smoker I only plug in the puck burner, and keep it under 90 F, so basically cold smoking.

I smoked whole chickens, ribs, chicken thighs, salmon nuggets, almonds and cheese so far. No fails yet. My older DD says the almonds could use more seasoning. I think they lack a saltier taste because I didn't totally dissolve the salt and I only soaked them for 18 hours instead of 24. I found both recipes on the Bradley Smoker site. Hopefully the links work.

I love the apple smoked cheddar and mozerella, I also made smoked salmon, chicken and haddock. Usually I only smoke when I have bacon to do since my smoke house is so big, but last year I did a bunch of chickens, they taste like candy! Way too dangerous lol.

I am going to try some chicken jerky, in the next couple of days, I will make the marinade and let it go over night at least since the chicken is already cooked. Probably I will slice it first. I used to make a lot of beef jerky, mostly for back packing, but haven't lately, I even have a jerky slicer upstairs somewhere, slices it 1/8" thick, very handy, even has a motor on it, I got several items from Cabelas when they were going out of stock, they were all 75% off, the jerky slicer, a cube steak maker, a SS meat mixer, and a motor that goes on all three. We used to make tons of sausage but I haven't raised pigs lately. Well someday when I retire I will get back to doing that stuff!

I smoked for the last time until spring. I made Hickory Smoked Almonds and all the posts in the smoker group I am part of I made Apple Smoked Cheddar and Mozza.

Wondering if anyone has made chicken jerky. There is a lot of conflicting information on the net about it, I have always heard that you need to cook the chicken first, I noticed the chicken jerky I buy says it was marinated and cooked first then dried. There are a lot of sites that use raw chicken, I can't imagine that the dehydrators get to the correct temp for destroying bacteria on meat, but they may. It seems like the cooking first would change the texture of the jerky a lot. I am going to try it anyway, I have a bunch of cooked chicken

Barb...You sure have been a busy gal !!!

11-27-15...I bought 3 section freezer containers from Amazon...Delivered Today ! Just in time !!!
So, I made 7 dinners (incl. turkey, dressing, gravy, potatoes and green bean casserole), 4 FoodSaver sealed bags of turkey, 1 container of turkey gravy, 1 container of dressing and 1 container of dog food (scraps of turkey I didn't want) Soup is on the stove !!! :}


Today is pressure canning the HUGE pot of turkey soup...I'll let you know how many jars I get later !!! :}

I didn't like the shedder and slicer attachments. The blades were too dull. My old Black & Decker Food Processor did a better job. Carrots got lodged in the attachment, the cabbage was crushed, the cheddar cheese was so finely shredded it was translucent. I like the meat grinder, but since hubby doesn't hunt anymore I don't use it often, but lately I have been using it for applesauce and salsa ( don't laugh, but I like the salsa in the little packets at McDonald's, the consistency is perfect). Originally I thought the food strainer would be my least used attachment, but I use it the most, especially after finding a recipe to make Apricot Nectar, helps use up the apricots from our tree.

Earlier this year I was chatting with my co-worker ( bless his soul), about the pasta attachments, we both debated on buying one but never did.

I did good on Thanksgiving too, since I am alone up here in the wilds of northern Maine, and couldn't go anywhere because I am working tonight I cooked a Cornish game hen, you might laugh but there were leftovers!

I had a busy week doing lots of stuff, my neighbor helped me do the old hens in, so I made stock, plus I have about 3 1/2 lbs of ground chicken from the breasts and thighs. Before I started I dug in the freezer and got out the rabbit stew parts and some fowl from last year to add to the pots. There are two gallon bags of chicken that I picked from the bones, I am going to make chicken rice soup for the freezer, and try some chicken jerkey with the breasts. I had 4- 3 gallon pots cooking with stock, after de-boning, I boiled it down to make it double strength. Finally got all the stock pressure canned today, 20 pints jars plus a gallon bag in the freezer for making soup next week, I think some Italian wedding soup with the ground chicken meatballs.

Finally took care of the rest of the squash, there were 3 big hubbards left, plus some buttercups, they are all baked mashed and frozen in quart bags.

I attempted some jellied cranberry sauce this year, I added some pectin, although cranberries are supposed to have a lot of natural pectin. Probably the stuff in the store is strained, more clear then mine, I used the foley food mill. I ended up with 10 jelly jars of the stuff, and it is very tasty, I used the low sugar pectin and only added half the sugar, I am not one to like real sweet.

One of the things my Dad gave me before the move to MA (in a long list of stuff, like two truck loads) was a set of attachments for a kitchen aid mixer. I have had my kitchen aid mixer for almost 25 years, but never was much interested in the attachments, usually small meat grinders like that are a pain to use. Today I wanted to grind the chicken but not take out the big grinder so I attached the grinder and was pleasantly surprised at how well it worked, no pushing and shoving the meat in, I just had to put in in the grinder and it sucked it in, so in about 3 minutes I had all the chicken ground, I put it through the bigger plate first, then the smaller one, but that was probably unnecessary. The clean up was quick and easy, and the plates are SS so no rust. I may try the other attachments now, there is a shredder, a juicer and a pasta maker.

Finally got around to making StirFry Veggies for the freezer. I ended up with 8 family meals and put 6 lunch portions aside. I just do the veggies in the mix. I then can add what ever meat and sauce I want. A great way to use up those portions of meat not big enough for a meal.

Yesterday I made homemade laundry soap. I plan on sharing some with my daughters. I tried it on my husbands old dingy tee shirts and they came out cleaner. Did I say "old". They might need some more help.

Today I will be sewing some rice patties for some sore muscles! Getting ready for a craft fair this weekend.

It was a very busy, productive weekend. Mostly cleaning and organizing, but also made a ton of of refried beans and canned them. Finished with 20 pints, way cheaper than buying canned beans at costco like I was doing. I still have at least 10 lbs of beans in the pantry to do it again in the future! I will probably dehydrate some from the next batch, whenever I get around to it.

I'm going to the Amish Butcher Shop today...I wonder what is on Sale today !!!

Yesterday, I made a beef roast with gravy, mashed potatoes and corn...
With the leftovers, I made 3 complete dinners, a container of mashed potatoes and gravy and a pint of gravy...All went into the freezer !!!

I had a busy day.

Made double batch Italian Sausage Black Bean Soup, 2 family meals and 5 lunches
I have 4 racks ribs in the oven now. I had them in the smoker but it is so chilly out there the smoker couldn't get back up to temperature.

I heard that store bought banana chips are deep fried plantains. But if I remember correctly my banana chips were a bit leathery, not a whole lot of snap to them. I know they stuck to my teeth, but were very sweet and very tasty. It has been a couple years since I made them. Hopefully I can make some this year. My DD brought a bunch home from the school yesterday. I brought some to the school and the kids didn't like them.

Well, my experiment with dried bananas, was a bit surprising. They did not turn out as expected. I was expecting them to be hard, like in the stores, but they turned out leathery... I wonder what I did wrong... I may have to do some research... or if anyone can enlighten me?

I had doused them in lemon juice, and stuck them in my dehydrator. They taste great, but are not what I expected...

Thank you CANNINGNANNY! I'm hoping to keep the really benificial lactobacillus that forms in the longer 3-week time frame and that can just be kept in the fridge after it is done (over about 3 weeks). Those probiotics get destroyed by the heating process from the water bath but pretty much keep forever in the fridge as long as it is closed tightly in canning jars. I'm hoping to keep those active cultures working good for my family.

Kelly...I made sauer Kraut in a Jar...It came out really really good and it only took 4 days ! The recipe in in the Canning Recipe Box...

Sauer Kraut in a Jar 6-26-13

Sauerkraut made in jars (I do Quart Jars)

3 1/2 tablespoons of salt per 5 lbs. cabbage
shred the cabbage finely
layer cabbage and salt in large pan about 5 lbs at a time and mash with potato masher or squish with your hands...until it gets watery...
pack solidly into jars leaving proper headspace (1") , fill with cold water to the rim. Put on the lid and band loosely. Place jars in a shallow pan or cookie tray as they will over flow...
Allow to ferment for 3-4 days. When fermentation ceases or is to your taste, wash outside of the jars to remove any spillover from the fermenting process. Tighten the bands and process in boiling water bath 15 minutes.
