Busy all week canning and freezing.

Monday: after going to 2 stores I finally found ice for cooling down the corn after blanching it. I saved 10 for dinners, 7 I froze as niblets, the rest were frozen on the cob. That night I filled the dehydrator with peaches.

Tuesday: another late start because another 2 store trip it find Fruit Fresh, for making Peach Pies. Before lunch I was able to make 5 pies, 4 went to the freezer, 1 became dessert. I also canned 32 1/2 cup jars Peaches in Light Syrup, and 2 batches Salsa (6 pints & 2 half pints), most of the salsa I put through the food grinder, instead of having all chunky salsa.

Wednesday: 12 pints diced tomatoes, 1 batch Pizza Sauce (4 half pints & 2 pints).

I have enough tomatoes to make Pasta Sauce to make Lasagnas for the freezer. I also have 25 lbs Peaches, 8 jalapenos left.

OK So I save the skins from the tomatoes I canned ...And Seeds, too?
I use a Victorio Strainer that removes the skins and seeds from the pulp and juice.
The tomatoes are cooked until they are mushy so the skins will be cooked.
If that's the case, I can go into business making powder !!!!
I usually do 4-5 bushels of tomatoes...Plus what I get from my garden.

So my 2 questions are...
1. can the seeds be made into powder with the skins?
2. is it ok that the skins are cooked?

It's super easy Gemini! Dehydrate tomatoes and or tomato skins (I dehydrate my cherry tomatoes and the skins from the regular tomatoes that I can but you can also do regular tomatoes). Once crispy put small amounts into a blender and pulverize until powdered! Store in a clean jar. Wah-lah! Tomato powder :)

Finished my peppers yesterday.
111 jars or hot and sweet pepper mustard and 2 bags of ground peppers for future batches in the freezer. 8 straight hours of canning ...
Hot Pepper Mustard...25 pints and 29 half pints
Sweet Pepper Mustard...18 pints and 39 half pints
Total 8 batches, each taking 1 hour.

I passed up the Peach and Corn Sale. But I did make it to the Salsa Sale, and got deals on peaches and corn.

I picked to 6 dozen corn, 2 cases Peaches, 2 cases roma tomatoes and all the stuff for salsa.

I was hoping to get working on it this afternoon, but we finally got a call back for a kitten. We have been trying for the past few weeks to get hold of anyone for one.

Ooops went to powder the last of these cherry toms and realized I forgot to tell about tomato powder!!

When you powder the tomatoes you can then take that powder and add a bit of water and spices to it to make paste, sauces, or juice! I find it so much easier than cooking down a ton of tomatoes and canning it. Saves lots of space, too :)

Oh! And you can add some to meats and soups/stews/ casseroles, etc to get a great tomato flavor as well. Powder has a very intense flavor to it :) Love the stuff!

Great going girls! I love seeing what everyone is putting up!

I'm still going at the pears! It's taking way longer than anticipated but I kinda figured it would. I just keep telling myself that it would go even slower if I was peeling with a hand peeler then coring and slicing by hand. I can't thank DH enough for getting me that corer/slicer/peeler! Think I'm gonna switch to doing some compote today so that I can get through this faster. Plus youngest daughter loves to eat pears with her lunch so those will be mostly for her.

Problem is I still have a bunch of tomatoes to weigh, set out to ripen, and ripe ones to process! And the beans just started coming in! But I refuse to complain because this food is going to feed us through the winter!!!

Yesterday I ended up with a nasty headache, it took all morning to get rid of it, so I got a late start to my day. I tried my fresh dill slices with my lunch, truely addictive, even one of my DD's is digging into them. After lunch I went to the garden and picked some beans, peas and sugar snap peas. Then sat on the couch and watched Criminal Minds, while prepping them to freeze. I was able to freeze them and the blueberries. Then I started on washing all the blueberry jars I canned the day before. Had dinner and was cleaning the pickle jars, when the power went out, a thunderstorm just blew in. But it was back on in a few minutes , thankfully. I also used the last of the cucumbers and the sweet pickle brine to make 1 qt and 1 pint Fresh Sweet Pickles. But all that wind had me worried. I have been neglecting the apricots, I was worried I would loss them all.

This morning I checked on the apricot tree, I didn't lose much, so me and the kids picked another box and a half. I washed, pitted and froze as many as my 5 cookie sheets could hold. 3 of them are restaurant size and 2 regular lg sized. Thankfully because I promised a co-worker I would give her some. I still haven't tried making the chia seed jam.

Got a deal on Pickles and banana peppers.
2 pecks Hot peppers and 2 pecks sweet peppers 6.00 each
2 pecks pickles 4.00 each.
Yep, making dill and bread and butter pickles and sweet and hot pepper mustard.
All are selling really well at the farmers market. I can't seem to keep up with the demand.

I'm so not good at logging in to post!

GEMINI my hubby made me canning shelves for our downstairs closet that was just a catch all closet for every body in the house - especially the two girls down stairs. It's amazing and I'm having fun filling it up! If I run out of room he will build more shelves that go all the way up (the closet is under our stairs so it is more of a triangle).

Since we last talked, we have gathered in almost all of the corn, shucked it, stuck it in food saver bags, and thrown them in the freezer! I'm hoping for a lot more next year so I can de-kernel the cobs and can and dehydrate it.
I put up a bushel of peaches - they are simply cut up and put in the freezer in 3 cups portions right now until I can pull them out and actually make something and can it!
We also picked 50 gallons of pears that I am currently attempting to put up - there is no room left in the freezers so I *must* can these now.
I'm currently dehydrating the last of the cherry tomatoes for awhile. There is still one more batch that has green ones but I have a little while until they start coming in. Then I will start dehydrating watermelon, cantaloupe, and cayenne peppers.
I also have a gallon baggie full of banana peppers plus what I picked last night so I've got to find the pickled recipe so I can get them canned.
When there is a lull in the garden then I'll start pulling things out of the freezer to can! Right now, it's all about staying on top of what there is before it all rots!

A sucker for punishment, what what I am during canning season. Yesterday I went to the farmer's market, hoping to get stuff for pickles. And I did, also there were blueberries still so I picked up some. I was able to get home in time for lunch, then I got busy canning.

6 pints Dill Slices
6 pints Sweet Pickle Slices
32 1/2 cup jars Blueberries in Light Syrup
5 Blueberry Pie Fillings, these were frozen

I still need to finish up the blueberries, I have enough cucumbers for another batch of Sweet Pickle Slices, and I need to get out to the garden and see what needs picking there, I need to pick some apricots to freeze for a co-worker, and myself. And figure out if what I picked a couple days ago is still good enough to freeze.

Then I am in a MAJOR debate with myself. This weekend in town there is a Corn and Peach Sale at a local store. But in the other direction there is a Salsa Sale at the local Farm Stand. I don't know if I should it up one, but not the other, or hit up both.

I have just over 3 dozen 1/2 cup jars waiting to be filled with peaches, and a big area in my freezer just waiting for corn.

But I also have 2 dozen plus pint jars waiting to be filled with tomatoes, salsa and other stuff from the Farm Stand.

If I buy all I want this weekend I will be swamped, but I will get all the major canning I want to do this year, before I head back to work, which is just over 1 week away.

tHESE NECTARINES I DID WERE JSUT ADDED TO THE JARS AND THE SWEETENED SYRUP SIMMERED water on top of that. I'll strain it nd use it in cottage cheese or on ice cream. I've only made strawberr jelly so far.

I like to make jelly, but it does take a while. I need to eat up what I have before I make more, but Crazy and Debbie are making me want to stir up a batch!

I have never had any luck getting nectarines to jell. I usually just end up with something yummy that works better on waffles than toast! I've never done anything with Apricots, except eat them dried (my favorite dried fruit.)



I am thankful.

On Sunday I was kinda bored so I made the family to come pick apricots, we got 3 10 lb boxes picked, just before we were finished I got stung. I must have suprised it, I didn't swell at all. I never seen it before or after.

I was able to get 10 qts canned in light syrup. I was trying to get some juice to make Apricot jelly but I didn't get enough, so I just made juice with it, plus it sat until this morning, not just overnight. I had a Allergist appt on Monday, which was an almost 3 hour trip one way. It turned into a 9 hr trip.

The apricots that were left over from that picking I dropped off with my cousins, they live in a city I was driving by, and they have been wanting apricots and kinda struggling too. I also brought them a Cheesecake and 2 pies.

Today, I made 3 Chocolate Chip Banana Bread, 1 Blueberry Pie (using frozen berries), and 15 Bannock. I sold 2 of the bread, the pie and 5 Bannock to hubby's cousin. It is our first time seeing her in over 10 yrs. We lost touch with her when she moved, but I found her on FB, this last month and been chatting with her, she has loved seeing all I have been baking, so she asked if she could buy some.

So glad you got the canner. Now you can do bigger batches.
Did you get the Ball Canning Book !
That sure is my go to book for the basic recipes.

I've never done nectarines except I did make jam with them.

Saturday I got an enamel Canner at target with several pieces of equipment to help mke cnnin easier and healthier. Online Target had it for $28.99 and when i went to th store it was not on the shelf and i called over a worker and she found it in the back for $34.00 ($10.00 more) she suggested i pay for the 34 and go to customer service and i got it taken off my credit card. Wee.

Yesterday I made canned nectarines. I had no trouble with the peaches on Fricy but nctarines are ahrder t work with. I covered the fruit with ice and the skins came right off. although the fruits were ripened they were like mushy. Would be great for baby food. M purpose for the peaches and nectarines is i love it on cottage chees. So rather than slices it's more like softened obs of nectar. The peaches came right off the seed the nectarines did not.

My apricot tree is finally ripening. I made Apricot Juice (9 pints), and Apricot Nectar (10 pints). It is the same recipe, just the juice I put into a wire sifter to remove some pulp. Before I started canning I had 2 of 3 kids in the kitchen with me. My son said he wanted juice, my daughter said she liked the pulp in nectar. So I had to make both. GEMINI - I powder my onions, too! Not all of them but a great bit of them!
Oh me goodness - it's been awhile since I've logged in to any of my teams!
Currently, today, I've been processing tomatoes.
Cherry tomatoes get turned into tomato powder. Regular tomatoes and green stripe tomatoes get cored, blanched, and skinned to be turned into stewed tomatoes to be canned.
This summer however, I've put up 52 pints of caramelized onions, 52 pints stewed squash, 15 pints strawberry jam, 10 pints white clover jelly, 18 quarts summer salsa, 12 quarts green beans, 10 pints ground sausage and pork tenderloin (5 each), 20 quarts pickles (5 sweet, 15 dill), 10 4-oz jars of strawberries and blueberries in simple syrup, and made 2 quarts sauerkraut (well, it's still making - will be ready next summer). I've also dehydrated some banana peppers, zucchini and squash chips, bell peppers, juice pulp, potatoes (grated and mashed), and some 32 quarts of grated zucchini on top of the tons of tomatoes! I've also frozen a couple of gallons of blueberries, 4 gallons strawberries, 1 quart blackberries, and some 20 gallons or more of squash and zucchini to be processed later when I don't have so much else coming in.
When I log off of here I'm headed down stairs to grab some corn to shuck and freeze.
As an aside, I made butter for the very first time! I hope to make cheese on Wednesday :)

Last spring I planted Candy Onions which are those HUGE white onions. They grow to about 5" diam or larger.
I Just can't seem to grow onions as these were so small last year that I didn't pick them. I just left them in the ground. This spring they started growing again.
And again, they were so small. Well, I plucked them out last week and set them out to cure. Saturday, I cut them off of their stems and took them in the house to get the mud off and store. THEY WERE PURPLE NOT WHITE !!!! What's up with that, I thought !!!!
Well, they must have been miss marked because they are Shallots !!!!
So now I have about 20 heads of Shallots and haven't used that many in my whole lifetime !!!
So What to Do with them all ????
I decided to make Shallot Powder like I make garlic and onion powder.
I did that yesterday and now have about 3/4 of a cup of powder !!!! and boy does it smell Great !!!!!!

I just canned my first dilly beans of the season. Yummy!

Debbieanne1124, if you buy a ball canning book (wal-mart, tsc, etc.), you should be able to find just about any recipe you'd like to try. It's a great book with simple, easy to understand recipes.

Your extension office should have recipes and be able to help you, too.

What a deal on jars.

I bought 2 more cases of raspberries today. I was going to make pies and sell them but I wouldn't make a profit. So I am just going to make syrup, make some pies for home, and freeze the rest to add to other baked goods. I also bought rhubarb which I minced and froze to make muffins at a later date.

I did make 5 Cheesecake Pies to sell, I will also make some bread, cinnamon rolls and DD wants to make Banana Cocolate Chip Bars.

Bought 10 cases of pint jars from JoAnn Fabrics. They had a special last nigh (9:00pm-2:00am) with 50% off canning jars. They sell them for 15.99 a case of 12 (which is very expensive) but for the 50% off at 7.99 and free delivery..Bonus !!!
I pay 7.99 at the dollar store for an off brand. These are Ball Jars !

The rest of the cherries went to the dehydrator. Yesterday was meat re-stocking day. The past couple weeks the family has been suggesting things for dinner and I have been saying we are out of that. So I bought a pork loin, 2 packs chicken thighs, 1 pack hamburger, 3 packs bacon, 3 packs hot dogs.

The Blueberries became mainly pies. I sold 6 and put 1 on the freezer for us. We got 13cups mashed bananas, I made 6 banana bread, which I also sold, the rest was frozen for another baking day. Cherries, I froze an industrial sheet pan worth, made a Glazed Cherry Pie. I really need to deside what to do withe the rest of the cherries.

Poke each and every blueberry with a skewer, I have a small one that came withe the tukey baster, it took me about 2 hours to fill my 6 tray dehydrator. I tried the blaching method and too many popped and sagged over the trays and made a mess. The raspberries I just wash and put on the trays, you really have to check them as most won't shrink. They do become smooshy when warm too, so careful when moving them.

How do you dry your red rasp's and blueberries ?
I heard blueberries have to be poked with a pin and then boiled until the skins split.

I went to the Farmet's Market yesterday, and a local store that specializes in local fruits wnd veggies and came home loaded. I picked up:

2 cases Raspberries, 24 pints
20 lbs Cherries
10 lb Blueberries
And almost a ton of Bananas, yeah not local but make great Banana Bread.

I put 1 case of Raspberries into the dehydrator, it only filed 3 1/2 trays so I filled the other 2 1/2 trays with Cherries, then prayed yhe power wouldn't go out as a wicked thunderstorm started.

I also made a batch of jam after the thunder stopped, put 1 1/2 pints of Raspberries into he frig to eat fresh, then froze yhe rest of the raspberries.

Today I have plans on making Blueberry Pies, maybe some syrup too. I still want to d3hydrate some more Blueberries and Cherries. I also have plans on making Banana Bread and freezing the rest of the Bananas.

I've already made 28 pints of blueberry jam. Today I made 8 12 oz. jars (2 batches) of peach jam. I have some leftover peaches that I'll just eat. Next time I buy peaches I'll need to buy twice as much. I'm thinking about going out and picking my own. I missed sour cherry season this year, but I'm thinking of doing something with figs in the fall, or plums.

I bought 20 lbs Blueberries at the Farmer's Market, some colorful potatoes, mixed lettuce, sweet onions, and carrots.

I made Blueberry Jam 5 half pints, I have blueberries dehydrating, and 2 industrial sheet pans of blueberries in the freezer, I stil have some berries to deal with.

Well, I have a lot in the freezer--so much so that all of my freezer space is occupied at the moment. I picked/processed 30 lbs. of fruit for my parents, so that will go to their house soon and I can get to work again when the space is freed up.

For myself, I have frozen raspberries, blueberries, strawberries and three kinds of cherries. I need to get more of all of those where possible.

My canning priorities this year are:
--tomatoes: growing more this year and want to try sundried, ketsup, paste, etc. in addition to sauce and whole
--relish
--salsas (mostly tomato based)
--maybe 25 pints of jam--still have lots left over from last year (already canned some raspberry; want to try red cherry, plus do blackberry (canned) and strawberry freezer jam)

Dances: salsa (standard/LA), casino, rueda de casino, cumbia Colombiana, bachata, mambo, cha-cha-ch, merengue, reggaetn.

Currently learning: Mexican cumbia, danzn, Cuban rumba

Dances to Learn in the future: flamenco, tango Argentino, samba, belly dancing, bhangra, ballroom rumba

I froze the rest of the cherries yesterday. I also baked 10 loaves White Bread, 9 Pepperoni Pizza Sticks and 6 Pizza Sticks and while I was putting all the bread in the frig I found the rest of the rhubarb. I guess I better chop it up and freeze it for muffins later in the year.

We head to town tomorrow for Eye Dr. appointments, then we will hit up the farmer's market after that.
