I must say, the Pea Meal Bacon is Wonderful. It's like a juicy, tender ham.
I surely will do this again !

Next time I will slice it before freezing. (par freeze and then slice)
I cut it into chunks and then froze it. It's hard to slice when thawed.

Yes, let it cool down to a really thick jelly. Then cut it up and put on a tray with sides as it does melt in the dehydrator.
I have an Excalibur that is square and no trays with sides to fit...So I bought the round leather trays and just set them on the shelves.
You need to watch Bev's video. She really does a great job showing how to do it. She's such a Hoot !

Did you let it cool to jelly before slicing and putting in the dehydrator, I am afraid it will run over, thinking about warming it and pouring it in the trays. It is VERY jelly like! I boiled it down to just about a quart from a gallon, and the gallon was already double strength. I probably won't get very much but it is interesting!
I noticed the pumpkin discolored the trays, it is the first time I had anything discolor them, even blueberries didn't.

I use 1 tsp per cup of hot water. I cooked down the broth until it was really thick...So I guess it depends on how far down you cook it to determine how much to use...
I used it when I made pot roast and to make gravy.
I'll be making chicken bouillon next...
I was really surprised how good it is...

I thought about it, I still have about a gallon of broth left after canning 7 quarts and 10 pints and may start to boil it down, it is already double strength so it shouldn't take too long to get it more concentrated. Guess you talked me into it!
How are you using yours? And how much per cup of water did you end up using, I noticed in the video that she needed a little more then a tsp.

I have a whole rack of candied orange peel drying, took longer to arrainge on the rack then anything else!

I put off doing the beef broth for days now, I was going to do it last week, but I finally got it out and defrosted, and the pressure canner is about ready to go, probably two batches tonight, one of quarts and one of pints, just waiting for the jars to be done in the dishwasher.

I generally buy the higher thread count flannel sheets (like Cuddl Duds from Kohl's) and they don't pill at all...And They last a really long time. It took me a while to find some that don't pill. Kohl's has them on clearance now.

I like the feel of cotton sheets, I love the coolness of them as well. Flannels always pill no matter what you do to treat them.

More apricots today, so it looks like I'll be canning apricots tomorrow. Just as well the weather has turned cool.

Bread is Rising...Snow is Falling !!!! What a Great Day !!!

Making 2 loaves of Harvest Bread the Julian St. Way...1 for us and 1 for the freezer.

To much snow to go to work at the Food Pantry...Schools are closed so we are too !
I'll get out the sewing machine and sew my sheets...Jimmy like his flannels and I don't mind them on the bottom, but the top sheet, No Way !!! To Hot !
So I take a flannel and a cotton sheet and put them right sides together and sew 2 lines down the center. Then I cut in between the 2 lines and roll each raw edge and sew it down...Voila !! 2 top sheets with half flannel and half cotton ! And then we are both Happy !

Is that Putting Up? I'm Putting Up Extra Sheets for the Linen Closet !!! emoticon

I brought my little Jack Russell home from the vets today so there's not much getting done here but making her comfortable.

I have noticed my garden has gone silly over the past couple of day with the rain and the warmth, I'll be picking a load of stuff and figuring out what to do with it all.

I did my Peameal Bacon yesterday...out of 9 lbs. I made up 11 packages for the freezer.
I taste tested it and "I'M SOLD" !!!! It tastes like ham and it's moist, not salty and really good.

After the kids leave today, I'll be taking down the Christmas deco's and making bread.
I hate to say this...But I'm glad the Holidays are finally over !
Now back to Normal...Winter Sewing and planning my gardens and making maple syrup in the middle of February.

We had a night of rain last night and the weather has cooled down quite a bit. Amazing the difference after some water on the garden and for me!!.

I preserved the Apricots this afternoon and planted some more Basil and Sage into pots. I planted Garlic yesterday and tomorrow I'll get into the garden and try to fix up the bean bed. I've got the Sulphate of Potash so I'll replace some of the soil and sprinkle with the Potash and then I'll plant some more beans, corn and lettuce.

I'm hoping this will make a difference. I found a shade sail in the garage so I think I might put that up over the bean bed, it seems such a hot part of the garden so I think a little cover might make a difference.

I had to pull out my corn I planted from seed and replant with seedlings this year. I don't know what happened but it grew then produced the seed heads but with no corn cobs???

I'm sure getting good use out of the summer sweet corn we cooked then sliced off the cob and bagged in single serving bags for the freezer.. Oh it's so very good. Did I tell you I love my new well since August... Kenmore floor freezer?

Elderberries also need to be ripe when you pick them, dark purple not red. I make my juice in the steam juicer so it is heat treated, I guess you can also dry them and that takes the toxicity out of them too. I wasn't thinking about the auto immune diseases, but that is a good point, wonder if I shouldn't be taking it with the ITP. My Dr has been slowly decreasing the prednisone over the last month and yesterday was the last dose, we will see what the platelets do in 7 days, hopefully they remain steady.
Guess I am off to bed for the rest of today! Tomorrow I am going to thaw the beef broth and can it, the last batch of broth for the season!

Hi All...
Barb, I put your Elderberry Syrup Recipe in the Misc Recipe Box so we can find it later.
Thank You for posting it !

I did my carrots and celery yesterday !
Carrots I cut 3.5 lbs for soup and 2.5 lb a bit bigger for stew.
Soup carrots = 1 1/4 cup
Stew carrots = 1/2 pint jar.
Celery (1 bunch) = 1/2 pint jar.
Look at all of the freezer and pantry space saved !
Today is 3 lbs of onions and Potatoes (before they get sprouting !
And Sewing my grand daughter's sewing machine cover.

They are only poisonous raw, even the juice should be heat treated. It's also said to stimulate the immune system so people with autoimmune diseases like MS, Lupus etc should stay away from it. Other than that I think that Elderberry jelly would be lovely

Elderberry syrup
I juice my elderberries when I pick them, using the steam juicer, so I have a bunch of canned elderberry juice, when that is gone I will use the frozen elderberries, I have about 4 gallons of them in the freezer plus an extra 1/2 gallon of the juice that I just pulled out and made syrup from on Saturday. I use 1 quart of juice, 2 TBS of fresh grated ginger, two cinnamon sticks, 1/2 tsp whole cloves. Bring the juice to a boil and add other ingredients, then simmer gently for about 15-20 minutes. Allow to cool to room temp and add 1 cup raw honey. I also get my honey for free because my neighbor gives me quarts at a time, he gave me 3 quarts this fall, and another one before Christmas. I think if you are going to buy dried elderberries and honey that this would be rather expensive, but with those being free it is very cheap!

I take a shot glass of it daily, they say to take it several times a day if you have the flu or a cold. I ran out of the stuff the week before Christmas, then got the flu the week after Christmas :( There are a lot of recipes out there that use dried elderberries but not so many that use the juice or fresh elderberries. I even read some sites that said how dangerous picking your own is, and how they can be poisonous. Wonder what they would think of Elderberry pie? I make one occasionally for my neighbor the Veterinarian, because he does stuff like coming over to vaccinate my kittens the other day. Elderberry jelly is one of my favorite jellies, tastes like a not so sweet blackberry jelly or a blackberry jelly with a little bite to it. When we were kids we used to make Jelly omelets sometimes, just a regular plain omelet that is spread with jelly and rolled up. I made one last week with elderberry jelly yum!

I bought 2 gallons of OJ yesterday (on sale and I had coupons) They are in the freezer.
Also, got 5 lbs of carrots and 2 stalks of celery to dehydrate. Will get them going this morning.

Yeah it isn't cheap but you don't use a lot of it. I don't remember is the recipe had ordinary honey or not, but if you are using it as a cold/flu treatment I'd think that Manuka would be the best choice to add as it has added medicinal qualities.

I found an Australian site that sells dry Elderflowers and berries ordinary and organic so I might consider making some Elderflower cordial/syrup myself. I love the taste and smell of it.

I went to the local fruit farm today and bought a large tray of beautiful dark orange apricots. I'll eat some that's for sure, but I'll can the bulk of them. Steven has just about used all the ones I did last year.

I just checked out and printed that recipe...Yikes !!! It's expensive to make, too !!!
I had elderberry bushes but they died off...
I may have to go along the road side and dig some up and plant them in a good protected area. They grow wild down by the farms.

Linda, Elderberry juice and syrup is thought to help cold and flu symptoms.

We love Elderberry syrup here, but it's not exactly cheap to buy so we use it sparingly. I'll have to look around to see if I can buy Elderberries here.

I got my beef broth made and defatted but not canned, it is frozen now and I will can it after this session of work. I did pull out some elderberry juice and make another batch of elderberry syrup, I don't know if it was coincidence or not but I ran out of the syrup just before Christmas and then got the flu which has hung on this week bad, still have a cough. So now I have a half gallon of syrup to start taking daily!

I've never had a chest freezer but I can understand your dilemma Jules.

I have upright freezers and whenever I need something, it's always on the back of the shelf. So I have to take everything off the shelf to get what I want, It never goes back very well.

I have two huge chest freezers that store quite a bit. The only thing I hate about them is having to dig down into the "bowels of the freezer" to get anything out. It doesn't matter what you want, it's always down at the bottom!!!

Well, since getting the pressure canner, Mom and I made 7 quarts of meat stock, 8 pints of meaty vegetable soup, and 9 pints of beefy chili. Next we want to can some baked beans with pork.
We are loving the pressure canner. It will help us save a lot of room in our freezer. We can now can things, instead of always having to freeze food, for extra meals.

A blow fly is quick flying and usually as big as a zeppelin, if it lays eggs on anything they will turn into maggots. Yeah I know lovely subject. My Jack Russell Ladybird can catch a blowie quicker than I can spray them. I don't know how she does it.

I'm still trying to fine tune my recipe for Peppered Mushrooms and haven't canned any yet. I have canned Marinated Mushrooms like I did the Peppers, but that is in an acidic liquid so technically it doesn't need pressure canning. I use "antipasto" often in my house, for pizas, italian food, pasta etc, so they get used often.

Not sure what a blow fly is...so I guess we don't have them, at least in my area.

Day 3 of peameal bacon.

Made pork and sauer kraut for our New Years Dinner.
My Kraut, my dehydrated apples and onions rehydrated and added to the kraut, and my canned corn.
All I had to buy was the pork shoulder roast.

With the leftovers, I made 4 dinners of pork and sauer kraut and 2 dinners of pulled pork with my own BBQ Sauce...All going into the freezer...I Love That !

UPDATE...I just watched the video and for all of you New Pressure canning people, make sure you cool down the pressure canner all the way before opening the pot. If you have a dial, make sure it is at or below 0. If you don't have a dial, cool for at least 30+ minutes to make sure all of the pressure is gone.
She really didn't say that in the video.

Jules, do you cook your mushrooms before canning them? I suppose I could look at your recipe, but I am being lazy this morning !!! LOL

I keep thinking I'd like to try my hand at bacon as well as salami etc. Not sure where I can hang things like that as blowflies tend to hang around any food that is hanging.. I'd have to have an enclosed cupboard or something like that to store the salamis etc.

I just had to google Peameal Bacon, I had never heard of it, sounds like a variaion of Canadian Bacon, but not smoked? I usually brine and smoke bacon when I do a pig, sometimes hams but have never done the tenderloin, must be delicious!

As cold as it is I just got to thinking it would be a good day to pull out the beef bones and start making them into broth! It would heat up the kitchen some and get the broth done! The First day is not much work with browning them in the oven and then starting them simmering, so I would have tomorrow to can the broth.

I started my Peameal Bacon yesterday. 1 pork loin and 2 pork tenderloins.
I had bought the loin and then watched the video again. I think she was using tenderloins...my loin was 4 lbs and she had 4 pieces of meat that were 5 lbs total...
So I deduced that she was using tenderloins. I was out getting my pork roast for today's pork and sauer kraut, so I picked up some tenderloins and added them to the brine.

I have two cherry pitters and one worked really excellent with the small golden gage plums and the other one didn't work at all well, not sure why. I did get a one at a time plum pitter when my fingers were getting sore from digging out the pit after cutting them in half and was very pleased with it. It cut the time in half processing so many plums, I got it from Amazon, I see they have gone up in price by about $7 since this summer. www.amazon.com/SCI-441462-Plum-Pitte

When I pit cherries I do check them because about every 10th -12th cherry pit doesn't completely come out, but it is still much faster then trying to do them with a knife even with checking each cherry, and the cherry comes out looking like a cherry instead of something I took a knife to and mutilated lol
I envy you that have fresh fruit now, I sure am missing it, even if I do have lots of frozen and canned items it is not the same as fresh!

Funny I'll eat Plums anyway, it's Cranberries I've always thought were overrated. Steven loves bottled or canned fruit all the year 'round and you can't get plums in the Winter, so this is the only way he can have them. Besides you haven't tasted MY canned plums, nothing like the commercial stuff in cans.

I did 7 bottles of cherries, 6 of Mangoes and 3 of Apricots today and I'm tired, I don't want to see another bottle for a couple of days.

The cherry pitter I have supposedly doubles as an olive pitter, but for the life of me I can't get a pit out of an olive with it.

I don't think I ever liked canned plums, but give me the plum tree and I will eat myself silly. One house we rented had a big prune plum tree growing up against the shed, me and my sister used to sit on the shed in summer, sun tan and eat plums. Those were the days. We also had a bunch of apple trees in the yard, enough to claim a few to ourselves. That is until my dad and step mom got together, then we had 3 more kids in the house so we cut back to 1 apple tree each.

I am debating on buying some cranberries to freeze for now. Too busy to do any canning, but at a later date I will make Jellied Cranberry Sauce from them. I have to check how many jars I have left. I was hoping to get some extra turkeys to put into the freezer but the price is high right now, not like it's usual cheap prices. We had at least 5 poultry farms shut down due to Avian Flu.Most of them chicken farms but at least 1 turkey farm, it really showing the the prices right now.

I should look into that Cherry Pitter, I had a cheap plunge one years ago, I had convinced hubby to buy 50 lbs cherries that year because it had been forever since we last had any. I made a beautiful pie with them and the first bite my hubby took, he bit into a pit, well the rest of his piece went to the garbage, and a few times I had to dump smoothies out because I heard a pit being ground up. So I went back to a paring knife and opening each and every cherry to remove the pit.

My Mom used to can plums when I was young...the Italian purple plums...
I never ate them then but sure wish I had them now !
I bought a cherry pitter that screws on to a mason jar from Amazon this past summer.
I would love to do cherries again this year with my new toy.

Sweet Potatoes are on sale everywhere. Yams too. I'm baking in a dish cool hen scrape nto small freezer bags to freeze for alter use. I'm new at enjoyin them. Love mine with a little cinnamon. I wonder if you can cook them in the crock pot.???

maybe my crock pot on low is lower then they want but it more or less ended up being like boiled onions, but I put them in a pan and slowly caramelized them on the stove, I think that gives better taste anyway.

Well that'd be disheartening, nothing better than onions when they are caramelized.

More Mangoes to can and I got a big box of plums cheap at the local market today. Trouble is tomorrow we are scheduled for works on our power lines so the power will be off for 8 hours. I really hope it's not hot!

I got a crock pot and have been doing some crock pot meals the last week or so, yesterday I put 4 lbs of onions in it to make the Sweet Hot Caramelized Onions, after 6-7 hours on low it was still just a pile of not caramelized onions, so I turned up up to medium, after 5 hours they were starting to be sauteed looking but not the least bit caramelized so I turned it down and let it go overnight. They are still white with a lot of liquid, not sure where that came from but I turned them up this morning, maybe I will put them in a pan to caramelize later if they don't start looking brown soon.

I have to make some more doggie treats as the last triple batch, I bagged some up for 2 other dogs for Christmas gifts.

Jules, mangos are so yummy. I made jam a few years ago and it was wonderful on toast. But I bet you can make it more savory to glaze a pork roast or ham !

Nothing done today, had the Vets this morning and I had to water the garden this afternoon, but tomorrow I might have some time to do some Mangoes.

I'm going to the local market on Monday and with all the Summer fruits in season now and at really cheap prices, I might be able to find some nice stuff to can.

Believe it or not I have to make another batch of Red Onion Relish. This last batch is disappearing quickly, it tasted much nicer than the last lot as well.

I've got some small mushrooms in the fridge that I think I might marinate and can like the Peppers.

Beef Bone Stock...I have it all cooked down to a thick gel...Today it's going in to the dehydrator to dry and then grind to beef bouillon powder.
I have chicken bones in the freezer to try and make chicken bouillon .

I thought the two men were great as well, one of them also has bee hives. I'd take one if I used honey a lot, but I don't use it much here.

What a Great thing those guys are doing !!! That's nice that they are trying to keep canning from becoming a lost art !

I Love Aldi's ! We have an Aldi's and a Save-A-Lot almost next to each other...And another discount store called Marc's...I go to these places before any other BIG store...
It's amazing the differences in price...

Well this thread disappeared from my Sparks list AGAIN!!! I hate when that happens.

Barb I've noticed that lately even the commercially produced onions don't last like they used to. They always tend to go soft and mushy!!

I just put away 10 jars of Sweet Gherkins and have got some Loquats ready to can tomorrow hopefully. My "kindred spirit" handyman thought my Gherkins were fantastic and invited me to come along to a "Canning" course/get together that he and another man are organizing next year. We're hoping to be able to get enough people and recipes to be able to make the produce on the day and have enough for everyone to take home.

Hi I'm going out today to do some errands...I may stop at the dollar store...I'm going to see if they have any small cookie sheets that will fit into my dehydrator...the shelves are 14" x 14"...

I know what you mean...There are so many cool things to try but no time now...
Sounds like a January/February thing to do when I get the winter blues and sick of being in the house.

Patti, do you think you could use some disposable foil pans the right size? There are a lot of different sizes, I used to use them to make fruit leather when I had my homemade dehydrator.
I watched the video on bullion a couple of weeks ago, very interesting. The one thing I thought of was all the boiling down, looks like you would have to start with very concentrated broth or you wouldn't really get it thick enough to dry into sheets. My dehydrator has the fruit leather trays but they are only about 1/2" deep and with liquid you can't fill it to the top unless you are sure how level your dehydrator is, and knowing my 200+ yo house there isn't a level place anywhere, not to mention them slopping over if the floor jiggles when you walk by! I usually do the leathers about 3/8" thick to get about 1/8 fruit leather. I was thinking about trying it when I do the beef broth, but I don't want to do it all that way.
So much to try out there and not enough time lol

Me, too Barb ! Having my own stock/broth is one of my favorite things in my pantry.
I use it all the time....
I want to try Ourhalfacrehomestead's way of drying stock to have my own powder.
The problem is that I have an Excalibur dehydrator and it doesn't have the trays with raised sides. They are flat and the stock gel (when it melts) will run all over the place.
I may have to do it in my oven on cookie sheets with sides.

I will probably try it on the stove, you are just basically caramelizing the onions in the crock pot instead of on the stove, I am going to try some red onions first. Not sure if I am up to it again but I have a bunch of beef bones, actually a whole cooler full to make beef stock, seems like I have been canning stock for weeks. I do love having all that stock though!

My neighbor always grows a lot of what we call turnips here in Maine they are really rutabagas, he left me a bag of 6 and they are huge, but are not rutabagas, but really purple topped turnips. I wonder if it was a mistake when he planted them. I was looking for recipes because they are quite different then the rutabagas, and came across a pickled turnip recipe, you put a beet slice in each jar to make them pink. I think I may try a batch to see how they taste, turnips are kind of peppery and very crispy so it should be interesting.
