Well, we were busy again today. I and Mom made 10 pints of pickled carrots, and 10 pints of pickled sliced onions. I also made 2 9X9 pans of lasagna, and 2 4X9 pans of lasagna, to freeze, and have ready for busy days. emoticon

Well... Mom and I were busy canning these last 2 days. We managed to make 12 pint jars of beet and horseradish relish, and 13 quarts of pickled beets. That should help keep us fed over the winter. emoticon

We also made 4 half pint jars of pickled hot peppers. emoticon

Don't forget to email me your mailing address if you want a sampling of my tomato powder...

As far as your beet question. I just can them plain so I can do things with them later...Like Harvard Beets...One of my favorites.
Here's a link on how to do plain canned beets...

I did an internet search and it seems the only recipes are for pickled beets (besides the link I gave you for plain canned beets)

Trying tomato-hot pepper jam today. Gemini-Sky -- I love those old houses. Ours was built in 1899 and it has so much character -- no root cellar, though. :) Does anyone have any good canning recipes for beet besides beet pickles and relish?

So jealous of all this talk of root cellars. I hinted at my hubby years ago I that I wanted a small one. His rebuttal is we have Rattle Snakes around, they might find it attractive when it comes to winter hibernation. I also have almost a 1/4 of the house that is a crawlspace. I have wanted to set up something in there, but when the house was built, they put air ducts in there to keep it warm. Plus I would have to crawl around in there isn't a pleasant thought. Right now it is just used as storage.

Good Morning. Yes, I do small ones and large ones...
the small ones you can keep whole and the large ones, I cube.
I posted a link in the Canning Recipe Box if you want to see how to do it.
It's really easy.
(I leave the skins on)
You can use the canned potatoes for quick mashed, fried or oven roasted potatoes.
Here's the link...

Our house was built in 1836 and the original basement has a root cellar in it. It still has the old bins and shelves.
I haven't used it for cold storage tho.

I have never canned potatoes, do you do the small whole ones? I have a cold room in my cellar and usually keep potatoes, carrots, apples, cabbages, beets and turnips all winter.

today I am canning apple slices from the Maidens Blush tree, it is a very hard apple and retains its shape even after canning, makes great pie starters or apple crisp when you are in a hurry. Also I am cooking down some golden plums to make a different variety of plum sauce. I got my plum pitter in the mail today and am going to set up the dryer for a bunch of plums to dry, also a couple of trays of Sungold tomatoes. I still need to go and pick up the squash but the weather is supposed to be nice right through the weekend so they might as well harden up out there. I am going to have to take care of the huge tree that crashed in my yard taking out the electric and phone line the other day while I was sleeping, I am so not impressed with another job to do right now!

Last night after 5 hours in the kitchen, a total of 13 hours including work. I finally finished up the zucchini I harvested a few days ago. I made Zucchini Pizza Casserole for dinner, it was a hit so I made another one and put it in the freezer. Then I made Chocolate Zucchini Cake, and baked it in 2 round pans instead of 1 large pan, but one was underbaked, so I cut out as much as I could. The other looks fine. Then I made 4 loaves Zucchini Bread using up the last of the zucchini.

Then tonight, after taking a nap when I got home and thankfully only 2 hours in the kitchen. For dinner I just heated some Pot Pies, then I made a Weight Watchers Veggie Barley Soup and some Borscht, I froze both soups, about 6-7 portions each, those will be my lunches. I really wanted to make this Beet, Sweet Potato Salad, but I am just too tired.

Hi Barb...
Here's a good recipe to use up some of your plums !!!

Plumade Concentrate - Plums and Lemonade

www.sbcanning.com/2013/07/plumade-co
nc
entrate-plums-and-lemonade.html

I scored 6 doz ears of sweet corn for FREE from a local farmer. (small ears)
I'm pressure canning them now. I have 16 pints in the large canner and 8 pints in the small one.
Probably enough to do 3-4 pints more. So total, about 27 pints !

We did a big shop today, almost 2 weeks budget spent. But I needed to restock on a few things. I stocked up on hamburger, flour. The upside, I spent enough at the grocery store we got a free turkey.

I put 10 meals of cooked hamburger in the freezer, 3 Zucchini & Rice Casseroles, 20 individual pot pies, 4 meals Beef Stew, so far. I still have lots of zucchini from the garden to use up. I want to do some baking too. Just need to stock up on things I can pop into the microwave or oven.

I did save my tomato skins after I read your post lol I dried them, didn't take long about an hour or so, at least that is when I checked so it may have been less time. I have a gardenmaster dehydrator, it is the coolest thing I ever bought. It is round, with 8 trays and expandable to 20 trays. I am amazed at how little time it takes to dry stuff, apple slices are about 2 hours, plums take a little longer, they are big plums, about 10 hours the little ones about 5 hours and very tasty!.

Yesterday I started about noon to can a bunch of stuff, I have plums all over the place plus tomatoes. So the final count is 50 jars, I think a record for me in one day. I made 12 jars of roasted garlic and red pepper pasta sauce, 10 jars of spaghetti sauce (for my Dad) plus a big container I put in the fridge to make Eggplant Parmesan. Then on to plums, 7 jars of whole plums in light syrup, 10 jars of plum sauce, and 11 jars of plum preserves. Also have 4 trays of plums drying. I still have about a bushel and a half of mixed plums and work for the next 3 nights.Guess that will allow me to find more recipes for plums! I did find one other recipe for plum sauce that I want to try, it is not so hot and uses the golden plums.

Guess it is past time for me to be to bed!

I really need to get to the garden, a frost hit some of my veggies, the potatoes have died back and need to come out, but I will have my family help with those. Well actually they can do them while I pick everything else.

We are home today, normally we do shopping on a Saturday, but my middle child woke up with the tummy flu 4:30 this morning. Not fun cleaning blankets and carpet at that time. Since I had to go to the local store to get powderade and popsicles for her, I asked the restaurant for some celery sticks so I can make some stew, pot pies and soup today.

well the corn didn't take a bad hit, just the squash died. All the things in the courtyard made out fine. Yesterday I got a bunch of stuff ready to do some canning today, I am going to make Roasted garlic and pepper pasta sauce, regular spaghetti sauce, then can some plums, and dry some too. If there is time I want to make a batch of plum preserves and a batch of Chinese plum sauce. I picked another bunch of plums yesterday, so I have about 2 bushels of plums, 3 different kinds. I am going to try to use the cherry pitter on the tiny yellow gage plumes then can them whole. The bigger Mt Royal purple plums will get canned whole and some to make plum preserves. Time to get going!

You're on a roll Debbie !!! Your first year of Putting Up is sounding very successful !!!

Great Job Jodie !!!

Well, after I put 1 and a half bushels of roma tomatoes thru the victorio, I had about a gallon and a half of skins and seeds...
So I pulled out my New Excalibur of course, and tried drying them. It filled all 9 trays and dried in about 7 hours. If I would have used my round yard sale find one, it would have filled it 2 times and it takes about 14 hours for each load to dry !!!!!
I ground it and got about a quart of tomato powder...Now I have about 1 3/4 quarts of powder !!! YIKES !!! Now that I know how to make it, I can't fathom throwing away my Victorio scraps any longer !

OK, Who wants some ????
Email me your mailing address and I will send you some. REALLY !!!! a couple tablespoons worth so you can try it....

So far:
14 quarts spaghetti sauce
4 quarts and 2 pints italian stewed tomatoes
7 pints pear butter plain
7 pints seasoned pear butter
12 pints hot peppers, onion, and garlic in a red sauce
4 pints of the same with eggplant chopped in too (delicious on light english muffin with melted cheese on top - great lunch!)
This weekend will be green tomato relish. Then one more batch before the frost comes...
Happy canning!!

We just did 50 ears of sweet corn on the cob and 2 cobs per bag are freezing nicely for winter use.

I see a corn stripper on amazon I'd ove to get to mke it easier. The blade is adjustable and so is the height.

My corn is just starting to get ready and sadly tonight will probably be the end of it, what a waste of two rows of beautiful corn. I covered the raised beds in the courtyard and the peppers and sungold tomatoes but there is no way to cover 7 foot corn . It is supposed to be a hard freeze tonight, down in the 20's it is 45 right now so probably it will get that low. I ran out and picked what corn was even remotely ripe, all the tomatoes I could find in the boxes and pots and most of the peppers along with the rest of the plums. I didn't get much sleep today. I had to run around and bring in some plants, the orange tree, lemon tree and fig tree along with the hibiscus are all in the shed.

OK I may be plumed out but my trees haven't got the message yet, I am thinking to maybe can some whole plums this week, and another batch of preserves. I have seen recipes for plum pies, crumbles, cobblers and the like but not many recipes for different ideas for canning plums. I am going to dry a bunch. I was thinking the tiny yellow gage plums could be pitted like cherries then canned or dried. it is not much fun to pry the pit out of the plums in a large scale way. Is anyone else doing plums?

Do take care of yourself !

So far Put Up Stewed tomatoes from a half bushel of tomatoes. 3 qts and 7 pints.
It seemed to take forever as I peeled them (boiling water process) and deseeded.
Also, did another half bushel, cut up and boiled to soften to put thru my Victorio.
Today is the other bushel to juice and work at the Food Bank and pick beans and cherry tomatoes !.

Still sick, I woke this morning and realized a muscle on my left shoulder is strained too. I actually debated staying home from work today, but we are short staffed and I had already promised a co-worker I would help answer phones as she needed to work at the other end of the building. So I went to work, and did minimal amount.

I relaxed most of the night.

I think I am going to try the Vinegar fly trap you posted Patti, I just can't seem to get rid of them no matter what. I take out all the peelings and scraps from the apples and pears to the hens as soon as I am done but they have been around all summer.

I came home after work, and after some debating, I made 6 loaves of bread. I seriously considered going to the store and buying some. I just wish I had it in me to make some soup. I need some lunches. But after all that canning the cold I had felt all day hit me full force. I couldn't breath because I was so stuffed. My oldest girl made me a cup of peppermint tea.

Yesterday I tried to take care of some of the excess fruit around here, I canned 12 pints of pears, then dried 8 trays of Alexander apples, they are so beautiful this year, also two trays of sungold tomatoes and a few plums. Made applesauce, about 3 gallons, left it to cool in the fridge overnight and will freeze it in quarts today.Still need to do something with a half bushel of small red plums and go check the purple plum tree, they are starting to get ripe. I have had to resort to coolers to hold all the fruit while processing it this year. My neighbor dried some pears and gave me some they are outstanding like a bite of candy, so I think I will do a bunch of them, just waiting for some to ripen a little more.

The fruit flies are taking over my house. So I had to work hard today to get rid their food.

Starting off with the nectarines. I made bread and dehydrated them. Then on to the jalapeos, I canned them in half cup jars. Then basil, I made Pesto. Then onto the apples, I made jam ans applesauce. When I finished I had:

4 loaves Nectarine Pecan Bread
4 trays Nectarines in the dehydrator
10 half cup jars Pickled Jalapeos
10 half cup jars and 1 ice cube tray Pesto, these went to the freezer
2 pints and 1 half pint jars Apple Pie Jam, with some leftover
16 half cup jars Applesauce
17 half cup jars Apple Pie Spice (aka Spiced Applesauce)

Thx...I can't wait for it to get here ! I just tracked it and it says Wednesday !!!!

The only thing I'm putting up is a trellis today. And planting mums and clematis around it !
And I got a half peck of small sweet peppers that I will do with the Pickled Hot Peppers recipe from Mary Jane's farm (in our Canning Recipe Box posted on 8-4-14)
The first batch came out so good, I thought I'd make some more.

I wanted to can some in 1/2 cup jars, but I don't have enough jars. I am debating on picking up some more jars today. I do have 5 quart jars empty but it isn't worth canning in them because we tend to forget to eat them. I gave the kids the go ahead to eat them when they want, since we aren't eating them as a family.

Yesterday, after trying to decide what to do with the nectarines, I made a Nectarine/Apple Crisp to put I to the freezer, and dehydrated a batch of nectarines. I have plans on making some quick bread and some squares.

Yesterday after work, and many, many adult only words. First I realized hubby took my bbq lighter, then deciding I better not can until after dinner, because I need the oven or burners to feed my family. Then realizing my bbq lighter is out of fuel, so off to the gas station to get a new lighter and to fill the 2nd propane tank. Well the gas station had no bbq lighters, so after cursing my hubby, and the store. I bought a regular lighter, came home, started canning tomatoes, while dinner cooked.

I worked fot 5 hours, canned all but 4 tomatoes (2 rotten, 2green), I got 24 pints Diced Tomatoes.

Just before I was ready to put the last batch in the canner my girls found a Raccoon on the porch, I ddidn't know there were raccoons around here. So I took a risk of wrecking my last big burner and did it inside.

I made it to the farm stand this morning. I picked up 25 lb roma tomatoes, 25 lb nectarines, 2 lb jalapeos, 1 cabbage, 20 lb gala apples, 5 L apple juice and 1 lb local honey.

Yesterday when we were shopping I bought mini sweet peppers, and cream cheese.

So far I only made Sweet Pepper Poppers and Jalapeo Poppers.

Has anyone ever made cucumber powder? Also with the tomato powder, would it have more flavor if you added the seeds? Don't have enough tomatoes yet to make salsa yet, was wondering if it would work to make powder out of the seeds and skins.

I Finally, finished my 4 bushels of tomatoes...Juice, thick sauce, diced, roasted and salsa.
I experimented with the skins and seeds from the straining process with my Victorio Strainer. I dehydrated them and made a wonderful tomato powder. I only did it with one bushel of tomatoes...I sure wish I had done all of it. It worked Perfectly !

Tomato skins vs. Cherry Tomatoes...
The skins really didn't have that much flavor tho a tiny bit.
The Cherry Tomatoes made Excellent Powder.

So don't waste your time with just the skins.

Hm...Not sure as this is my first attempt at tomato powder...
I just peeled 3/4 bushel of roma tomatoes for diced tomatoes and got 13 pints and 7 qts. I know I need to do more but I'll make sauce and salsa first. Any left over, I will dice.
I'm drying the skins to make powder out of them. The seeds I tossed.
I love experimenting !

How much Tomato Powder would I use to replace Tomato Paste? When I make Pasta Sauce I use a half can of Tomato Paste, but I had lots of leftover dehydrated tomatoes from last year, so I ground them into powder to help replace tomato paste. It would be way cheaper. Since the dehydrated tomatoes are from my garden. Plus the tomatoes in my garden are just starting to ripen, I have cherry tomatoes, a try called Juliet (it is bigger than a cherry but smaller than plum), and another kind (that just sprung up in my garden), it is a small round tomato.

Plus I was planning on going to Costco to buy a case of paste to get me through the next bit, instead of buying individual cans from the grocery store. I thought of making my own paste but even if I canned it in 1/2 cup jars I would still have leftovers.

Man, am I ever slacking compared to Gemini. LOL But then I don't pressure can, so I am stuck with canning jam, fruit and tomatoes. If I did pressure can I would probably do salmon, meat and some veggies.

I am kinda waiting on apples and pears to come into season. I have plans on doing another 2 dozen jars of diced tomatoes too (I just need to empty 4 more jars), we already started using up what I canned a couple weeks ago. I had to tell hubby "No" a couple days ago because he wanted Lasagna again. We have had Lasagna AND Pasta and Sauce both weeks since I canned tomatoes and made Lasagnas. I am kinda getting tired of pasta, plus it was our lunch yesterday at the school.

I am sitting here debating on if I should head to the farm stand tonight. I kinda messed up at work and forgot to order apples for the Food Program, so I almost feel guilty enough to go buy some.

Actually maybe not, I just checked the farm stand website and this weekend is Salsa Weekend. Most of what I want will be on sale. Not so guilty feeling now. LOL

I do have a box full of empty jars, and I need to decide what I am going to fill them with, especially the quart jars, I find we haven't been eating the canned fruit from them.

cut up a qt and a half of cherry tomatoes to make tomato powder. They seem to take a long time to dry while cut in half. I know it will be worth it !

Sunday, I really had to finish up the peaches, as I bought them a week ago. Also we had been without bread all week. I got a very late start to my day. Was 3 or 4 when I started the bread, only 6 loaves, made 2 Peach Upside Down Cakes (1 went into the freezer, 1 became dessert), I also made Raw Peach Chia Seed Jam, and diced and froze the last of the peaches. I really wanted to make Fresh Peach Quick Bread, but it was after 9 pm, and next day was my first day back to work.

On top of it all the hot water tank broke down on Friday.

And unfortunatly tonight when I was digging in the frig, I noticed the Raw Peach Chia Seed Jam is turning off colors, so it will be dumped, it was worth the try. I added twice the honey too.

Today I made:

--sun-dried tomatoes (in the oven)
--cucumber-tomato salsa (12 half-pints)
--cucumber relish (12 half-pints)

My tiny garden didn't have enough space to grow cucumbers this year (it is only 12' x 12') so I had to BUY them at the farmers' market. The shame! I grew all of the tomatoes myself though.

I also made estratto a couple of days ago--Sicilian tomato paste. 8 pounds of tomatoes made about a cup of AMAZING paste. I didn't feel safe canning it, so I froze it in 2T lumps.

Dances: salsa (standard/LA), casino, rueda de casino, cumbia Colombiana, bachata, mambo, cha-cha-ch, merengue, reggaetn.

Currently learning: Mexican cumbia, danzn, Cuban rumba

Dances to Learn in the future: flamenco, tango Argentino, samba, belly dancing, bhangra, ballroom rumba

Gemini: Thanks. I am very impressed with the the mustard you have made. You must have quite the canning set up.

EOCROSSFIT MOM: Congrats on your new dehydrator. I so envy you. I really wanted an Excalibur, but couldn't justify the cost, or order one online. I ended up buying a 6 tray Weston instead.

Friday I was bugging the girls to get the dishes done, because I was a bonehead and shredded all the zucchini I brought in from the garden. I wanted to do some baking with it, but by the time they were done, I was too lazy. It took me until late afternoon to finally get into the kitchen.

Actually what happened is when the girls started the dishes they were complaining there wasn't enough hot water to fill the sinks. I wondered what they were talking about because it had been a couple hours since hubby had a shower and went to work. I checked another tap and realized yeah there was none. I phoned hubby and then talked to Housing about it and they sent the Maintenance Men over. Well they walked downstairs and said they have never seen that kind of hot water tank before and were stumped. I laughed and said that is what the last Maintenance Man said about our last hot water tank 5-6 years ago. So they left and came back with their boss and cut power to it, and read the manual that came with it. Turns out it does need fixing, but probably can't get someone out until Monday. Well I can say at least the water is coming out of the taps. I have been packing my canner up and down the stairs heating water so we can have a bath. So it is a good thing I got all the canning done when I did.

I did bake a double batch of Zucchini Muffins and just didn't want to do anything else. So I froze what was left (10 cups).

Ground up most of the banana peppers (2 - 8 cup bags in the freezer) and did 2 quarts of pepper rings for the ladies. Will probably get one more bag for the freezer of ground peppers. Total of ground peppers, enough o make 3 batches of pepper mustard and for FREE !!!!

I was pooped out today. I couldn't get moving until 11. I got up at 6:45, to wake up hubby, checked the peaches in the dehydrator, had a coffee and went to the couch, I only got up because I was starving, had breakfast and then took a nap. After 11 I took all the peaches out of the dehydrator. Grabbed some biscuits from the freezer and made "soup" out of ramen noodles, I added cooked chicken and frozen veggies, for our lunch. After the kids got some of the dishes done I started peeling and dicing the last of the tomatoes. I had 7 liters, I put them in the roaster oven with 7 cans tomato paste and let them cook as I went to the garden, to pick some zucchini, and a few Swiss Chard leaves. I cleaned out the frig of all pasta sauce friendly veggies (5 mushrooms, 4 celery sticks, 3 onions, 1 lb carrots, 2 lb zucchini, the chard leaves, 3 small purple peppers), shredded the carrots and zucchini, diced everything else small, added Clubhouse Italiano, some powdred beef bouillion, and 2 1/2 lb cooked hamburger. Then used it to make Lasagnas. I made 1 cake pan (9x13), and 11 foil pans (5x9). I cooked up the hig one for dinner, the rest went to the freezer. I don't top my frozen lasagnas with cheese because I was frustated with losing so much of it to the lid. Since I bake them from frozen for 1 1/2hours I add the cheese during the last 20 mins. I always keep frozen shredded mozza and cheddar in my freezer.

I also made a batch of Peach Freezer Jam and filled the dehydrator with more peaches. My gallon jar should be filled after this batch.

Can't wait to hear how much it makes :)

Yesterday DH surprised me with an Excaliber dehydrated to replace the one I have :) I'm so excited!

Yesterday, preservation wise I only blended up a bunch of ripe bananas and froze them in little ice cube trays (the ones with silicon bottoms) and peeled near on 10 gallons of pears. They were too ripe to use my handy dandy peeler/corer/slicer so I had todo it by hand lol Then my corer broke about 2/3's of the way through so I had to cut it all off the core. What an evening!

Today I am planning on picking all the ripe tomatoes and beans. De-skinning and coring the tomatoes. Adding in the frozen tomatoes to make stewed tomatoes and canning them. Dehydrating the skins, of course.
Then I need to peel 10 more gallons on pears and make one batch of pear relish and then either do a compote or a caramelized recipe with the rest and can it all.
On the side I need to cut up a bunch of peppers and get them dehydrating.

And seriously this needs to get done today.

Busy all week canning and freezing.

Monday: after going to 2 stores I finally found ice for cooling down the corn after blanching it. I saved 10 for dinners, 7 I froze as niblets, the rest were frozen on the cob. That night I filled the dehydrator with peaches.

Tuesday: another late start because another 2 store trip it find Fruit Fresh, for making Peach Pies. Before lunch I was able to make 5 pies, 4 went to the freezer, 1 became dessert. I also canned 32 1/2 cup jars Peaches in Light Syrup, and 2 batches Salsa (6 pints & 2 half pints), most of the salsa I put through the food grinder, instead of having all chunky salsa.

Wednesday: 12 pints diced tomatoes, 1 batch Pizza Sauce (4 half pints & 2 pints).

I have enough tomatoes to make Pasta Sauce to make Lasagnas for the freezer. I also have 25 lbs Peaches, 8 jalapenos left.

OK So I save the skins from the tomatoes I canned ...And Seeds, too?
I use a Victorio Strainer that removes the skins and seeds from the pulp and juice.
The tomatoes are cooked until they are mushy so the skins will be cooked.
If that's the case, I can go into business making powder !!!!
I usually do 4-5 bushels of tomatoes...Plus what I get from my garden.

So my 2 questions are...
1. can the seeds be made into powder with the skins?
2. is it ok that the skins are cooked?

It's super easy Gemini! Dehydrate tomatoes and or tomato skins (I dehydrate my cherry tomatoes and the skins from the regular tomatoes that I can but you can also do regular tomatoes). Once crispy put small amounts into a blender and pulverize until powdered! Store in a clean jar. Wah-lah! Tomato powder :)

I passed up the Peach and Corn Sale. But I did make it to the Salsa Sale, and got deals on peaches and corn.

I picked to 6 dozen corn, 2 cases Peaches, 2 cases roma tomatoes and all the stuff for salsa.

I was hoping to get working on it this afternoon, but we finally got a call back for a kitten. We have been trying for the past few weeks to get hold of anyone for one.
