Im kinda new at canning. However last week I got a good deal on baby cucumbers , I had about 30 or 40 of them and a pickling mix I had purchased a while back, got the jars from a yard sale as they were sitting in my basement since summer.I made 8 quarts it took about 2 hours and boy are they good. Also I got a crate of green beans for only 2.99 so I gave most away to a couple friends and made up 2 big pots this week but am out of jars so I will freeze a few bags of them.

The funny thing is that I do save leftovers and then throw them out the following week. We don't like leftovers much..My BIL loves them. So if he comes around they will go to him.

I sure wish I had something to can. I bought some dried kidney beans. I could do those...

I often do a "clean out the fridge" recipe at least once during the week. Most of the times my leftover recipes are nicer than the one they came from emoticon

I know all about lazy too, creaky bones and crummy joints are one thing but sometimes you just can't be bothered.

I'm in the process of drying my corn kernals, I'll grind them up to cornmeal when they are really dry.

I finished my sweet gherkins as well and they look really good and the syrup that they are canned in is really nice

I cleaned out the veggie bins in the frig today, stuff I bought last week or even a couple weeks ago. I made Stir-Fry, I ended up with enough for 8 meals, one for tonight and 7 went to the freezer.

The sad thing is I am only 38, should be no joys of getting old for me as of yet. I am just getting lazy that is all. I would rather spend my days in the air conditioned house or at the lake, instead of the hot sun. Sad thing is I love the heat and the sun. One of the reasons I am a cook because I can take the heat. LOL

It was a little shocking buying frozen veggies, I haven't done that in a few years now. I think in the 11 years we have lived in this house I may have done it 3 times now. Usually my garden puts out way too much for me to use in a year, or just enough. But then I have to admit I haven't been really keeping up with it as much as I used to in the past. Before I started working you couldn't find a weed in my garden over an inch tall. Then I started working through summer and started putting off working in the garden. I really should have no excuse the past 4 summers as I get summers' off now, but I still don't keep up with it. I hope this is my wake up call.

Hey sometimes you just have to supplement with stuff from the store, either that or go without.

I did 3 jars of spicy pickled beetroot today and am currently doing some more Bread & Butter Pickles. My brother eats them straight out of the bottle so they don't last long at all. I have found a great recipe for a Spicy Mediterranean Eggplant and an Eggplant Jam so I might make some to see what they are like. If they turn out OK I'll post the recipe

Some yummy canning going on. Me, well I broke down the other week and bought frozen peas and beans from the store. I bought just plain green beans because the green and yellow bean combo was twice the price (well actually same price half size bag).

I got suckered into buying some meat from a grad fundraiser. One of my co-workers has a kid graduating this year, and I bought 10 lb hamburger and 5 lb Farmer Sausage. I made up the hamburger as Meatballs and Meatloaf Muffins. I ended up with 13 dozen mini meatballs and 30 Meatloaf Muffins.

I think that I'll be canning meaty things etc when the cooler weather comes around, it's hard to get excited about stew when the weather is over 100

I did get 3 kgs (@6 1/2 lbs) of Mandarins that I'm going to can. I don't think I'll get it done until Friday, have a ton of stuff to do tomorrow and I've got a hospital appointment for my brother on Thursday (oh joy!!)

I got 4 huge beef shanks from the food bank yesterday. So I'm going to make some beef stock to can.
Fresh Asparagus was 1.49/lb so I got some and will freeze it.
Went to get a beef pot roast to make stew with and it was 6.99/lb...What's up with that????
I heard beef prices were going to rise but that's ridiculous !

Thanks Patti.

I did read that eggplant is not recommended to can in oil as it is too dense and even with the pressure canner a satisfactory temperature cannot be reached. It's looking like I'll be making Ratatouille (I use that all over the place) and maybe freeze some sauteed Eggplant slices ready for cooking of things like Moussaka etc.

Jenny makes something with eggplant that she sells at her Women's store.
I can't remember what it was but I'll go back and see if I can find it.

I read a bunch that eggplant should be canned at all unless cooked. (it holds to much air)

I found a good recipe for Eggplant in oil...Melanzane sott'Olio (but it's not processed)
It says You can keep the unopened jars for 6 month, the opened ones in the fridge for 3 month. That's not to bad !

Thanks Patti, I'm trying to also find a recipe that doesn't use vinegar, probably no such animal, but I'll keep looking.

I just wish you could saute them and preserve in oil like the antipasto ones you can buy, but I'm sure I read somewhere that you can't can at home with oil.

I hate it when you run out of basics

Bought some cheap tomatoes today so tomorrow will be canning those, along with more Kiwi Fruit and more cucumbers for Bread & Butter pickles.

Going to have to look around for a recipe with Eggplants so I can preserve them. I'd love to do them marinated but I can't find a recipe yet ..... I will keep looking nonetheless

I can't wait until summer. I was making Beef Stew yesterday in my roaster oven. Although I was happy with the amount I made, I was getting sad because I am running out of things.

I am down to 5 onions from the farm stand.

I always add some frozen mixed veggies to it for color. But I am down to handful of beans (green, yellow and purple) and a handful of peas. I kept them for dinner this week.

When I re-arranged the cupboard I realized I had 1 jar local honey. I am getting sad because I really don't want to buy store bought peas, beans, honey. I have been spoiled having a garden and a farm stand so close. I like knowing where atleast my veggies and fruits come from. I want to get onto meats one of these days.

But the stew became dinner last night with Cheese Biscuits, I put 3 meals of stew into the freezer and tonight I made 23 personal sized pot pies.

I also pulled a Carrot Cake out of the freezer (well I did it yesterday but realized I was out of icing sugar, so that went to the frig. Then I pulled out 1/2 a Cheesecake I made just after Christmas for last night's snack. Tonight I remembered I had some Cream Cheese Icing stashed in my frig freezer so I put that on the Carrot Cake.

I have to admit I do better freezing my veggies from the garden, but I'll be trying some combinations this year with the pressure canner.

I'm still canning seasonal fruit, things like cherries and stone fruit only have a short season, so I want to get as much done as I can.

Me, Neither !!!
But I'm using up what's in my pantry.
I pressure canned chunks of potatoes in quarts for the first time this past summer.
Boy, do they make the Best fried potatoes with onion and sweet red peppers !
Corn tastes like fresh picked.
Green beans and carrots...we do not like.
Sauer Kraut is Awesome !
Dried beans made ready for use is so nice to have for salads, pork and beans, refried beans and chili.
Chicken and beef stock, well, what can I say...PERFECT !!!
Spaghetti sauce, diced tomatoes, tomato paste, stewed tomatoes and juice, can't keep enough !
As you can see, I'm not a fancy canner...I'm a "Staple" Canner.
Thank You friends for getting me going on that wonderful Pressure Canner.

No "putting up" for me today, I was going to put dividers on my shelves, but after I changed the linens on the beds and washed them I was too tired.

I have some leftover lamb roast, was thinking of shredding it and making a pastie with it, better get a move on or it'll be night time before I've done anything

Funny you should mention that, I was rearranging my storage area and noticed a few ants. Usually that means something has either leaked or I haven't wiped the jars properly, one of my bottles of Apple jelly had hundreds of ants, on the inside!!! Half the jelly had gone as well, there must have been some way they got into the lid, even though the button popped down. Looked at all the other stuff and had to throw out 3 jars of Plum Spread and 1 bottle of Plum Syrup, I think the lids I used were defective in some way, mould should not form in a bottle that has achieved a vacuum seal.

I forgot to tell you a funny story.

When I was sorting through everything I did a random lid check, just to see if any didn't seal right. So one popped, totally heart broken as it was one of my Pickled Jalapeno Slices. I brought it to the sink to drain the brine, and I couldn't get the lid off. I tried a couple times to get it off with my fingers and then looked closely and realized there were 2 lids on this jar.

I was so busy that day canning lots of stuff I didn't realize my magnetic lid thing picked up 2 lids. So I am kinda doing a happy dance right now because that jar is still sealed, but it will be the next one I use.

I love making jam, I just wish they'd eat more of it here!!

I bought 30 new Ball pint jars today so with what I have at home and these I'll be set for a while.

Going to can some Kiwi fruit in passionfruit syrup and pick some Beetroot from the garden and can that as well.

Well no Putting Up as of yet. But I did Put Away empty jars. They are kind of falling out of the cupboard and all over the place as the kids didn't want to push them towards the back of the cupboard and putting them in strange places. So I sorted all the empty ones out, put them into boxes and restocked the canning cupboard with full jars. The kids should be happy now.

I counted 22 jars of jam, I think there is still 1 or 2 in the freezer, so hopefully those will hold us over until Spring/Summer comes back to Canada.

Crazy I love Thumbprint cookies, trouble is my behind likes them as well, plus it's too hot here at the moment to cook unless I do it late at night.

Finally made my Bread & Butter Pickles, I got 4 medium jars out of 5 Lebanese cucumbers. Just finished water bath preserving them as I want to keep them on the shelf.

I'm thinking of doing some Apple portions in some kind of syrup tomorrow, just looking for an interesting recipe.

I got some Lebanese cucumbers today so I'm going to try the recipe for Bread and Butter pickles. I've got some more Nectarines and Pears that I might can. I'd hate for them to go off so I think sticking them in bottles is the best thing.

Still picking wild Blackberries at the moment and saving them day to day in the freezer, I'm going to make Blackberry syrup this time. We use this for a variety of dishes and it is just delicious.

I wish my family would eat more jam. I make some wonderful jams and jellies and I can't eat them all myself. I sometimes use the jam in steamed puddings in Winter. Maybe I should make a Jam tart, I bet they'll eat that

Sorry I haven't been around for a long time, was sick for the past 3 weeks and been fighting my winter demons. I have been busy using things, instead of stocking up. It has been a very cold winter around here, kinda crazy, it was down to -22 C these past 2 weeks, finally went up today, was surprised to go start the SUV this morning and didn't have to pull my jacket tighter, it was +2C.

I made probably 3 soups this past month. I made Sausage and Bean Soup, I went and grabbed a couple jars of home canned tomatoes, and when I opened the jars, I realized 1 was tomatoes the other Pizza Sauce, oh well it was good in the soup. I think I may have used a veggie or two from the freezer which are from my garden.

I also made Hamburger Soup, using canned tomatoes and frozen veggies from my garden.

All leftover soups have been portioned for my lunches.

All winter we have been eating pasta sauce using canned tomatoes, I like it more than store bought sauce, I like the chunks of tomato.

I used Pizza Sauce for Pizza too but I didn't boil it down long enough I have to add tomato paste.

The kids are using lots of jam and eating the applesauce and fruit cocktail I made them too.

I'm dog tired today, was up until midnight chatting with my one of my oldest (in years I've known her) girlfriends. She left this morning to go back to Queensland.

I was up on the roof today, cleaning out the water gutters and washing the solar panels, copped a bit of sun as well as it was like standing on a hot plate. Anyway all the gutters are clear now ready for the rain that is supposed to come tomorrow.

She was amazed at all my preserves and bottles of stuff in the pantry and I felt very proud when I showed her all of my preserved stuff, bottles and freezer.

I got 80 sausage patties and 15 bacon packages in the freezer. And 9 pints beef stock and 6 pints chicken stock. Just finished making pepperoni bread and sending off the Grands Valentine's gifts.

Sunrise...I canned my split pea soup and it came out perfectly.
I did not put the milk in it, (if you add milk, some don't) I add it when I'm heating it up to eat.

Becky and I went to our local butcher shop and filled our freezers with ground meat, breakfast sausage (bulk) and bacon.
Our Amish friend, Dave, gave me suet for the birds, chicken necks and backs and beef soup bones for FREE !
So today, I'm making beef stock and chicken stock to pressure can and breakfast sausage patties to freeze.
Becky gave me some storage apples and squash. Not sure what I'm going to do with the apples. But I'm going to make soup with the yellow squash.
Yeah, I get to get out my Large Pressure Canner !!!!

I made granola yesterday. I love it for breakfast with yogurt.

Garlic Bread for the freezer.

I scored 1 doz. footlong sub buns for 1.98.
I'm just buttering and sprinkling with my homemade garlic powder (more like granulated).
Wrapping in foil and then freezing them.
When frozen, I will FoodSaver them individually.

What you could do is go thru the PDF manual and just print out the pages you really need.
Go to Print
when the print window comes up, go to pages. You can put in just one page or a group of pages.
OR save it to you folders.
One you use your pressure canner (and I know you WILL soon !!!) it isn't so daunting the next time.
I wrote on an recipe card. the steps to start pr canning and keep it in the pr canner.

Definitely check the manual, as each brand varies. Mine is a presto and the manual says start timing once the jiggler starts jiggling. My friend has one where the jiggler is not constant and only jiggles every 20 sec or so.

Hi Jules...When I pressure can, this is what I do.
Fill pressure canner with 3" of water and turn it on.
Fill Hot jars as recipe indicates (hot pack or cold pack) and put in canner as I go.
Put on lid and let vent for 10 mins.
Put on pressure weight.
Oops...I have a gage so I wait til it comes to pressure.
then start timing.

I bought a copy of the Ball Blue Book of Preserving. It's a really informative book, but one thing I need to know.

Good Morning Delia. My first suggestion would be to buy a Ball Canning Book and do some reading. There is so much to canning but once you get going, it's like second nature.
You must learn the Basics First...

I broke out the new pressure canner yesterday and canned 8.5 pints of chickpeas from 2 lbs. dry. I am so excited. It was relatively easy and I didn't blow anything up! (when I was a kid, we had a pressure cooker explode and I've been leary ever since).

Delia - I've seen people can butter on survival shows also. I don't think it's safe to can butter, even with a pressure canner, due to its high fat content. I would be afraid the fat would hinder the killing of botulism spores. Perhaps someone on here can be more helpful?

I finally got around to making the soup. I made a nice big pot of it, we ate one meal, then I was able to freeze 3 more family meals and 8 lunch meals worth. I can't wait for the turkey soup.

I scored a sale on chicken drum sticks...50 cents/lb. It came in a 5 lb bag,
