I make my own with that huge dehydrator that we have, dried green ones also but did not make them so hard, cook sliced green tomatoes with fish we have these ones about 6-10 inches long & slim chop onions green chili the fish green tomatoes salt turmeric & a little water sorry digressing from pumpkin but maybe could put slivers of them in the mixture

Oddly sun dried tomatoes are classed as passe` here. Definitely the fault of those celebrity chefs, they manage to turn people off a lot of things. I love them, we have a great 99% fat free variety available in bottles here, they are great.

forgot to mention one thing salt it I always make sun dried tomatoes adding that makes it tangy or dried raw mango or olives

fry onions & garlic in oil when brown add grated pumpkin & lentils cook till done remember to add chopped green chili & chopped cilantro at the end

Pumpkin is one of those great vegetables like Zucchini that can be used in savoury and sweet recipes. Grate it and put in in meatballs, soups, cakes, muffins ...... the list is endless

Never thought of that Jules...

Sometimes, If I don't have enough pumpkin, I add mashed sweet potatoes to the pie filling. No one knew and they loved the added sweetness from the sweet potatoes.

Pumpkin is something I put in curries often, I also use it in Chicken stews and most vegetarian meals as well.

pumpkin in a beef curry is awesome have not eaten much Morocan dishes prefer our way with lots of spices adding toasted cumin black pepper powder just before serving makes it extra special

I think anything natural beats stuff in a can. We don't have pumpkin in a can over here. I think it takes about 4 minutes to cook pumpkin in the microwave, doesn't come any quicker than that.

Huge difference when pies are made with fresh pumpkin. I wouldn't eat pumpkin pie until I had it with fresh pumpkin. I would complain about the smell when a pie was being baked with it was with canned pumpkin. The first time we had fresh pumpkin pie, I actually liked the smell and tried it, just a sliver, then ate 2 slices. When my sister came along my step-mother told her about how the pie was made and that "Miss Picky" just ate 2 slices. Now the whole family eats pie this way.

Flowerdale jewel if you ever have pumpking pie, make sure the filling isn't from a tin can....makes a huge difference!

I've never had a pumpkin pie. I'm usually using it as either a vegetable or in something like a tagine. I've often grated it and added it to soups and any thing else that could do with sweetness.

Usually red lentils but if you want the lentils to retain their shape, the Puy or French Lentils would be good. Add mixed vegetables to stretch out the lentils and to add extra interest Nasreen

I often make stuffed pumpkins (small ones) with lentils, cumin, chilli and other spices, great vegetarian meal that fills everybody up.

anyone who ate it loves it & yesterday read a blog where she mentions cutting the top off the pumpkin cleaning out the seeds & strings stuffing it with bread, cheese, onions, garlic & herbs then baking it & another one I read was to put meat or chicken with the appropriate spices & baking no idea of proportions she gave it but have forgotten & no idea where I saw it I get lots of mail from different sites & I read it on another site she suggested have got Dhaka cheese making it tomorrow hopefully

Jules,,,the chutney does sound wonderful. I can see it with a pork tenderloin or roasted lemon chicken.

While I was reading the chutney recipe, I spied the Pan-fried sea bass with citrus-dressed broccoli at the bottom of the page...
Now that's a Keeper, too !!!!
