We soaked 1/3 cup of beans over night and they plumped up to be just under a cup... maybe 7/8ths.
Put them in a colandar (as NASFKAB suggested)
Then we put a little saucer upside down in the bottom of a big pot that would hold the colandar.
We put a little water in the bottom of the pot and put the colandar on the plate (I didn't think the beans should actually stand in water)
The lid is on the pot, making a dark environment, and the pot is just sitting out of the way on the kitchen counter.
We will rinse the beans tonight and then check them again in the morning.
