Depends on what I am doing. I can fruits into jam and in light syrup, also I make nectars and syrups. But since I don't know how to pressure can I freeze meats and veggies. I loved dehydrated fruits, but never tried drying veggies and wasn't too crazy about the taste the few times I tried making jerky.

I depends on what I am putting up. We are drying veggies now to try as a soup mix. I like to dry fruit to send to our family in Alaska. I prefer to freeze things like corn & peas but like to can things like salsa, tomato sauce or jam.

I like to dehydrate pineapple, mushrooms, and spices. I've always wanted to dehydrate vegetables for vegetable soup. I eat vegan food and when going on vacation it can be hard eating out. So I can always find hot water to hydrate the vegetable. One of these days I will try dehydrating vegetable. I have made kale chips with the dehydrator and they are really good. The mushrooms I have used ground-up in my coffee grinder and used them in soups and mashed potatoes for the flavor without the chewy mushroom.
