After identifying the purslane, i ate it and it was pretty good. it is more moist then other leafy greens. it does not work so well in green smoothies. it made it really really thick. i suppose i could have frozen it to be more like a sorbet.

i love the idea of foraging for greens. just this spring, i found ramps while hanging with the kids at our local swimming hole! i am however very hesitant to try other stuff. i'm afraid i'll mis-identify something and get sick. but there is a local man who teaches this art, and i have been trying to join in on one of his walks. i just keep missing him.

I have never eaten dock or dandelions by themselves. I was taught the stronger greens are better if you mix them with others so I mix them with lambs quarter and wild mustard which are milder flavored.

Thanks for sharing the article Patti. I have been eating lambs quarter, nettles, wild lettuce, dandelions and dock all my life. I followed my parents around picking wild greens every spring. I agree with what she said, lambs quarter is a lot like spinach. Wild greens are choke full of vitamins & minerals and they freeze well too.
