I can all the fruits and veggies I can get my hands on. I grow most of my own so I know what is in each jar that I can. If it will go in a jar, i can it. It helps with a healthy diet because I can control all the ingredients in each jar. I don't have all the dyes and preservatives in my foods that are in the store bought kinds. Anything that is home canned is almost always lower in calories, salt, sugars and all of that than anything you purchase from the store. And it sure tastes better. Home canning in itself helps you maintain a healtheir diet. There is no limit to what you can can at home. And you don't have to read the label!

I plant my garden so I can eat fresh fruits and veggies... I already started my tomato and pepper plants. they are about 4" tall and it's only Feb 13th...Gosh, I think I started to early !!!! Got 8" of snow yesterday !!!!!!!!!
I haven't seen a lot of low cal recipes for canning. I am a newbie to canning so I haven't seen alot. However in some of the jam/jelly/preserve recipes I tried I cut out a lot of sugar and did not miss it one bit.
Some might not consider it "healthy" but it was lower calories.
This is a great question, can't wait to see some of the replies and hopefully recipes!
