Thank you, I peeked, it piqued my curiosity. My desire to know more is peaked. I am about to embark on an interesting season of food knowledge and food canning. For over three years I have endeavored to find my food allergies and intolerances. To support my need for clean and my serious avoidance of additives; I will can as much and as varied as my little ol’ heart desires. I am comfortable with the jam, jelly, and pickle forms of water bath systems leaving space for those volume eating mason jars in my pantry. I am getting my first pressure canner/cooker (early Christmas and health goal tools). I will be able to can/ put up meat and low acid other things via the steam method at higher pressures. My goal of having a food set is should a hurricane set me back since I can not have MRE’s (government meals-ready-to-eat) or restaurant foods due to the high additive loads required for “Public food service”; I have to be my own food service. My Jerky recipes are great and commercial dehydrated fruits and Jerky can be loaded with things I can not have so I will make my own, albeit a shorter shelf life.
My resume of food skills grows with my nutritional knowledge.
Now I can to preserve the foods I love and love me back; mainly no sulfites, no gluten, none of the common citric acid, pectin or vinegar (classic canning ingredients).
I look forward to a focus on the coming fall harvest with just-so gusto.
