1 gallon hard green tomatoes slice into quarters or smaller (judgement call for size)
1/4 cup of salt Sprinkle on tomatoes mix by hand set 24hrs. empty brine and rinse, dissolve 1 teaspoon powered alum in boiling water pour over tomatoes soak 20 min. drain and rinse
3 cups 5% vinegar 3cups of sugar 2 table spoon pickling spice. Dissolve sugar, bring to boil pour over tomatoes. cover with plate or similar weight to hold under syrup. drain reheat to boil and soak 3 days in a row 4th day drain pack tomatoes into jars add 1/2 cup of sugar boil and pour over pickles seal jars better after 2 weeks in jar. yes it a lot of sugar but as good as they are you won't make a whole meal of them that often
