I usually just cut off the seedheads and plant them if I need some more rhubarb. This year I can't seem to give it away!

Thanks for posting about seeds. I'm going to do that, so thanks for asking & replying about the seeds. I'm in a rental house right now, moving this fall, but could start seeds and have plants to put out this Spring, and a real harvest the following year. If it's an apt I end up in, I'll put the seeds in a 5 gallon bucket on the balcony, like you do for patio gardening of tomatoes.

Grebjack, I just put seeds in soil in a pot on the windowsill and got these three plants. I am going to plant more for next year. I also think I will harvest some this year!

I heard rhubarb is hard to start from seed, so
I've always gotten cuttings. Did you do anything special? I have a seedhead on one of my plants now and would love to expand my plot.

Chilled Rhubarb Soup (also known as Kissel)

Yield: Makes 6 servings.

* 1-1/2 pounds trimmed rhubarb
* 3/4 cup sugar
* 2 cups water
* 1 teaspoon vanilla extract
* salt and pepper, to taste
* 8 ounces sour cream

Trim, wash, and pat rhubarb dry. Dice into 1/2-inch cubes. Add sugar to water, bring to a boil, then add rhubarb. Return to a boil, then simmer for about 10 minutes. Add vanilla, salt, and pepper. Taste for sweetness and add more sugar if desired. Cool, then refrigerate. When thoroughly chilled, garnish with an egg-size scoop of mascarpone or sour cream.

Hello...I met a woman at the grocery store a few days ago and she was buying rhubarb. I asked what she was going to do with it, since I have only made jam. She was making rhubarb soup, said it was popular in Europe. I haven't found a recipe yet, but I'll keep looking...Hope everyone has a wonderful Father's Day!

Good Evening everyone

The topic of Rhubarb brought back memories when the family would be working in the garden and I would make a refreshing drink after all the work was done. Rhubarb Punch. I would take the juice from the stewed rhubarb. ( a pot of cut up stocks, water, sugar and a little cinnamon...sorry I don't remember the amounts) add concerted orange juice 12oz and 2 cans of water, a large bottle of Ginger Ale and ice.
It was very refreshing.

I use to steep or cook the rhubarb leaves save the liquid and spray my roses and other plants for aphids; it worked great, but remember it is a poison.

I live in Florida now and I have not seen any rhubarb plants here.

OK. Last night I made the Rhubarb Bread Pudding. It got a thumbs up from everyone in the house. Even my stepson who can be a bit of a picky eater. My husband said "I could eat this all day!" I was a bit scared making it because although I love bread pudding, I had a bit of a hard time imagining the combo. But it was real good!

I do that to with the chicken breast I get on sale. This way, when I am really being good about eating and want to stay "legal" LOL and my husband will not be around for dinner. It works out great, I don't have to defrost a whole pkge for one person.

I also add about a half cup of very finely diced raw rhubarb to banana bread recipes!

As for freezing, I chop it up and put them in 1/2 or 1 cup increments into bags and then the whole lot into gallon freezer bags. That way I can use them whenever!

emoticon LRUSSELLFAMILY. My plants have seeded at least 3 - 4 weeks ago. And my closing date is the 29th. Is that too long to wait to pick it? The article said that the stalks got bitter after going to seed. And that if the stalks are think then they become tough. Mine are very tall and very thick. Should I wait till next year then? Also I will need to move one of them. Do you cut them down then move the roots of what? Will the seeds be good for using for more plants in the future or would they be infertile?

Have you tried whole grain flours of any kind with it? How did it turn out? That article for picking it was fabulous!!! Since mine already went to seed long ago, I guess I will have to wait till next year to harvest. That is ok. I will have more time next summer after getting settled into my new house(new to me) this year, and get all the fixing up done. Smart to freeze it in single servings AMISHPRINCESS. Rhubarb Crumble:
1 c sifted flour
3/4 c oatmeal
1 c melted butter
1 tsp cinnamon
1 c brown sugar
4 c diced rhubarb
2 T cornstarch
1 c sugar
1 c water
1 tsp vanilla
Mix flour, oatmeal, brown sugar, butter and cinnamon. Put 1/2 of this crumb mixture in a 9 inch pan. Cover with the rhubarb. Combine cornstarch, sugar, water and vanilla. Cook until thick and clear. Pour over the rhubarb. Top with remaining crumbs. Bake until done at 350 about 30 minutes.

This is the receipe that I use the most. I love it.

Thanks for all the replies. I actually planted 8 plants last year but never got around to them. Never thought of freezing it. I am going to head over to the recipes page for the muffins and to see what else looks good. I like the idea of combining it with pineapple as I looove pineapple.

JLSKUND, We used to eat the rhubarb the same way. Last year I planted seeds and moved the plants in fall. This year, I am just letting it get big and I will start harvesting next year. I only have 3 plants, but maybe I should start some more seeds in the greenhouse for more plants....especially after this discussion. emoticon

I recently made rhubarb pineapple jam, and it turned out to be a really big hit. Plan on making it again.

my rhubarb is not very big. i did get some from a friend. i cleaned it, cut it up and froze it. i will use it when i am ready.

i recently learned there is a wild plant that looks like rhubarb, but it tastes like celery. it's called berdock and all the stems are hollow. for rhubarb, the stem that flowers cab be hollow, but the rest are not.

Would you two be willing to part with your cake and muffin recipes? I am buying a house in 2 weeks and it has huge plants just waiting for me to pick them. I have no idea how old the plants are. Since this summer will be so busy with fixing up and painting the house, maybe I will just hold off from this until next summer when I will be more established. My mother used to make rhubarb sauce, just cook it down like you would apples to make applesauce and add sugar, then we would put the rhubarb sauce on bread or just eat it plain.

My grandmas neighbor had rhubarb in her backyard. My sister and I would go over there and pick it, go back to my grandmas and get a bowl of sugar and just sit and eat the rhubarb. I need to get a start from my mother-in-law. The patch is at the old farm house.

The color has nothing to do with ripeness. There are different varieties of rhubarb. Some are redder than others. Some are almost totally green. When picking it, you want the more tender stalks that are younger, close to the center of the plant. You also want to "peel" the rhubarb by pulling the strings or whatever you call it off the outside with a knife unless it's really tender. My favorite way to fix it is in rhubarb muffins or crisp. In the summer I'll chop it up fine and freeze it in pints containers for muffins all year long.

Rhubarb is tart. When you add sugar it is delicious, like making lemonade out of lemons, or making cranberry jelly at Thanksgiving out of cranberries. It does not taste like cranberries tho; lemons or sour green apples would be closer (but still different). I grew up with a huge rhubarb patch in our backyard in Sioux Falls; after it's established (couple years) it comes up automatically every year by itself. Yes the leaves are poisonous.

My mother made only one thing with it when we were growing up: rhubarb pie. As an adult I was shocked to see it "mixed" with other fruit like strawberries and cherries. I didn't know other people did that.

As far as I remember, we ate it all summer long. We just kept picking and picking. I think like green bell peppers being unripe, but usable, so is green rhubarb. Bell peppers are only ripe when they turn red, orange, chocolate, etc. The green ones are delicious but the other colors are sweeter. I think the pink/red rhubarb stalks are sweeter/riper. Someone correct me if they know?

If you do combine it with other, sweeter fruit, then you need to add less sugar, and, it tones down the tartness (two birds with one stone). However, I am partial to how I had it growing up; solo. I love cobblers solo, and rhubarb crisp solo tho I sometimes add apple, and pie solo. I buy it frozen in bags at the grocery store. Especially when they have one of those "all frozen fruit" sales. Yep. I'm probably the only one in the store that makes a beeline for the rhubarb bags.

I was always told that rhubarb is not to be picked for the first year. There was a rhubarb cake that I made some time ago and my father in law who did NOT like rhubarb ate it and did not know that the cake had rhubarb in it.

I make lots of rhubarb pie this time of year, and cobblers. I also make cherry rhubarb jam and plain rhubarb jam. The easiest thing to do is cut it up and cook it down with sugar to make a sauce that you can eat alone or with yogurt or ice cream.

tart but when sugar is added, tart and sweet. Make sure you trash the leaves properly due to the fact that they are poisonous.

Funny, I only have seen it combined with strawberry for pies. I'm not wowed by that combo, but my stepson seems to like it. He's visiting now and I found a recipe that looks interesting. Let me know if you are interested. It's Rhubarb Bread Pudding. It's only 423 calories (Ha! Only right? But for a dessert, I suppose it could be worse.) The only thing is it comes up with 52 grams of sugar!! Holy cow! That why I say, it's only 423 cals. Anyway, I think I'd like to try it just to see, I really like bread pudding, and he's as skinny as a rail anyway.

Can anyone describe to me what Rhubarb tastes like alone? I'm real curious. Oh, and thanks for mentioning about only using the stalks, I never cooked with it before so I wasn't sure, even though it looks like celery to me.

the stalks are ready to be picked. I the stores I have seen everything from red to still green. Mine have about four inches of red on the bottom but are still green on the top by the leaf.
I know that only the stalk is edible and I admit I only planted it because it was really pretty but now I would like to use it. I know about pies and jams but what else can I use it for?
