Since zucchini's coming on, I thought I'd share this recipe. It's delicious and unusual. It was given to me a long time ago; I have no idea who Yvonne is.

Yvonne's Zucchini Relish

2 quarts ground zucchini (I use an old-fashioned meat grinder, but I think a food processer would work fine, or you could grate it)
1 large onion, ground
5 cups vinegar
5 cups sugar
3 tablespoons salt
1 teaspoon ground cloves
1/2 teaspoon pepper
1 teaspoon cinnamon
2 teaspoons turmeric

Bring all of this to a boil, boil for 30 minutes. Seal in hot jars.

I use half-pint jars and process in a boiling water bath for 10 minutes.

Ginger Marmalade

1 pound fresh ginger
Water
2 tablespoons lemon juice
1 1-3/4 ounce package powdered pectin
5 cups granulated sugar

With a swivel-blade peeler, peel the ginger. Slice about 1/2" thick. Generously cover ginger with cold water, bring to a boil, boil gently for 15 minutes, drain in a strainer. Cover ginger with cold water again, boil until ginger is tender-crisp enough to be pierced with a fork, about 45 minutes, drain in a strainer. Cover with fresh cold water again, let sand 15 minutes, drain again.

Using a knive or food processor, chop ginger so it is the size of rice grains. Do not puree. You should have about 1-1/2 cups of chopped ginger.

Put the ginger in a clean, dry pot, add 1 cup cold water, the lemon juice and the pectin. Over high heat, stir until mixture comes to a full boil. Stirring constantly, add all the sugar all at once and bring to a full rolling boil. Stirring constantly, boil for 1 minute.

Off the heat, quickly ladel into clean, hot half-pint jars, filling to within 1/4" of the top. Wipe the tops and threads of the jars and put the caps on. Process in a boiling water canner for 10 minutes (15 minutes at 1,001 to 6,000 feet, 20 minutes above 6,000 feet). Cool on a wire rack and store in a cool dry place.

Here's a jelly recipe I have makes a good one.
Three Paths To Heaven Jelly
1/2 cup commercial apple juice
1/2 cup commercial white grape juice
3 cups commercial cran-raspberry juice
4 tablespoons lemon juice
1 package powdered pectin
2 1/2 cups of sugar
1/2 cup honey

Combine the juices and pectin in a large saucepan. Turn heat to medium high & stir to dissolve the pectin. When the mixture comes to vigorous boil stir in the sugar ,4 tablespoons of lemon juice,and 1/2 cup of honey.When the mixture returns to a boil time the boil for 1 minute stirring all the while.As soon the minute is up remove the pan from the heat and skim away any foam before ladling the jelly into sterilized jars.
Processing time 5 mins head space 1/4 of an inch
makes 5 half- pints.

I use frozen juice that is mixed with water, not sure if you can use splendor or sugar free sure jell with this recipe I found this recipe in an old book at the library, makes a really good jelly . It is runny when first made but gels up nicely after 24 hours.

Mint Jelly
Pour 1 cup boiling water over 1 cup firmly packed mint leaves and let stand for 1 hour. Press the juice from the leaves. To each cup of apple juice add 2 tablespoons of the mint extract and bring to a boil. Add 3/4 cup sugar for each cup of apple juice and boil rapidly to the jelly stage. Tint the jelly with a few drops of green food coloring and pour into hot jelly jars.

DILL PICKLES

1 QT. VINEGAR
3 QT. WATER
1/2 C. SALT ( I PREFER PICKLING SALT)

BRING ABOVE TO A BOIL.
ADD DILL AS DESIRED.
ADD 1 TEA. ALUM TO EACH QUART.
GARLIC CAN BE ADDED IF DESIRED ( I LIKE TO ADD ONE CLOVE)
POUR BOILING MIXTURE OVER CUKES THAT HAVE BEEN PACKED IN A JAR, RELEASE AIR BUBBLES WITH A KNIFE, WIPE LIDS, PUT BOILED LIDS ON TOP OF JARS WITH RINGS. HOT WATER BATH FOR 10 MINUTES.

Whenever we have a jam, etc. that doesn't work quite like we want I use it to stir into homemade yogurt. This is especially good when the jam or jelly doesn't quite set right! Might work well on the strawberry honey, too.

I don't know about the use of Splenda, Parrotwoman is right about the sure-jel, but they have a lower sugar recipe. I'll google and see what I can find.

When I make jam, I use commercial pectin (Sure-Jel), and it requires sugar. The box specifically says you have to use sugar, but I think they might make another product that you use with Splenda. I'm not sure, but you could look at your grocery store.

I'll bet "Strawberry Flavored Honey" would sell as a specialty gourmet honey - for an arm and a leg. $17 a quart (or more).

Yesterday I made strawberry jam from a recipe that uses honey instead of sugar. It was a disappointing failure. All you can taste is the honey. In hindsight, it seems obvious that would happen.

Oh, well, now I have some jars of beautiful red honey flecked with strawberry bits. We will use it as honey, and I won't make that mistake again!

Hi, I have made strawberry rhubarb jam in the past, but it was freezer. I know I got the recipe from a sight called Recipezaar. I use that a lot. So you may want to check it our for a rhubarb jam you can. Just google it and give it a try.

I like to use the sure gel with the sugar. I buy a big bag of it from the Bulk Food Store and just measure out what I need. I really prefer that recipe, have never made it with just sugar. You can smash and freeze, just measure the amount of berries you will need for the recipe and freeze in that size. I have done that with raspberries before.

Ok, I have a Jam question. My daughter tells me this morning that she wants to try making it, and then a short while later, my hubby comes home with a flat of strawberries he happened upon at the flea mkt. They need used right now. So, here is my question. I've always seen recipes for strawberry jam with just sugar, but my hubby thinks we need surejell. Now, his mom made jellies all the time, and taught home ec, and all, so he knows this kind of thing. So, I checked my books, and have recipes for sugar only, and don't have any sure-jell on hand. I don't make trips to the store to make trips to the store, I get what I need when I'm in town. Do I NEED sure jell, or is it just as good with plain sugar? Is it better because you cut the amount of sugar? If I wait till I go to the store, I could freeze the berries, right? Then make the jam?

Yes you can freeze glass jars. Just make sure you don't fill them right to the top, leave some room for expansion as they freeze, then the jar will not burst. You can also do this with any glass jar that you can and it doesn't seal. Just make sure to leave room for expansion. You can freeze your canned pears, peaches, tomatoes, etc. that doesn't seal, the sky is the limit.

Net- No question is a dumb question! I use glass and plastic containers. This is great to save glass jars from relish, jams, etc, that you buy in the store. Then you wash and save. No need to worry about sealing, as you are freezing.

I agree with amishprincess, the surejel freezer jam is the best. It is delicious and pretty too. It keeps the color of the fruit because you don't heat the fruit. And very easy too!

Just be sure to write down how you make your jams or jellies each time you try. I forget to do this some times. A few years I made the best pepper jelly ever but it took 2 yrs to get it right again.

I too used the no sugar jell without any sugar once, and I didn't think it was so much too tart, as just kind of bland -like over-boiled fruit. So I still use the no sugar jell, but I add a scant cup of sugar. I think a little sugar enhances the fruit flavor.

Thanks for sharing that because I have never canned before and really appreciate hearing that it really DID need sugar after all, etc. I need to learn EVERYTHING so thanks for sharing.

I canned strawberry jam for the first time. I am new at canning and really enjoy trying new recipes. Well, the sure jell that I used said no sugar needed. Sugar was needed! It came out really tart. I didn't want to throw it out so I mixed it with some Simply fruit jam and it tasted great, sweet and tangy. My next attempt is going to be Fuzzy Navel jam, made with Peach Schnapps. I hope this turns out better than my strawberry jam did.
