I am in the same dilemma as you when it comes to canning. I recently found a nice heavy pressure canner at a yard sale for $35, but I can't use it because I'm afraid of the weight on my glass top stove. I just started canning last year (jam mainly). I took a chance and used a tall stock pot with a steamer basket insert as a water bath canner by placing the jars in the basket. It worked, but I could only can with 1/2 pints and pint jars. I also read where you can put a towel in the bottom of the pot to raise the jars off of the bottom. I haven't had the nerve to try quarts yet. One day, I know I'll have to buy another stove, but I'll live with this until then.

DEBBYSDELIGHTS there is a special type to buy when you don't use sugar. There is regular brand, plus same brand called no sugar.

Fruits have a high moisture content & make even more when the juices start to flow & combine with the sugar. Then the jello helps it set : )
Debby,
I have tried Splenda & Splenda for baking. Results--
jams & jellies don't set properly--puddings do not thicken up correctly. I always use sugar then eat in moderation. Hope that helps.

i just finished canning pepper jelly and it does not appear to be jellying. this was the first time i have ever used certo, but that is what the recipe called for. i did use splenda instead of sugar. has anyone else tried this? or have i made a big mistake/emoticon

NETPASSIONS, TRUST IS A WONDERFUL THING! I had to get on to other things, so I just followed the recipe and let it rip...where did all that moisture come from? LOL I'd initially freaked because it was three dry ingredients and I couldn't figure out what was going to boil...was afraid I was just going to burn the sugar...but it got all nice and runny and then thick and yummy and I'm enjoying some this morning on my toast. THANKS!

Cook on high till the mixture comes to a boil [make sure your figs are mushy] and boil for 3 minutes on high heat.
Then it is ready to go in the jars & be processed in a hot water bath or pressure canner.

I want to make sour plum jelly / jam. I thought there was a recipe for it. After looking for recipes I found out . . . "sour plums" is a certain TYPE of plum.

OOOOOHHHHHHHHHHHH.

I knew there was black & red, and pluots, and thought I could find a recipe to make the black & red ones, into sour plum jelly/jam.

So, now that I know:

Where can I buy sour plums? I have NEVER seen them for sale anywhere????

Oh, I loooooooooove Maine Coons! Never saw a grey one before. Ariaradar(sp?) has an orange one.

I love so many cats. Can't wait to have a house of my own.

I love Himalayans, as well. They have very spookable personalities, unlike Maine Coons.

Oh wow! I don't think I could eat plain beets. You may be shocked but I didn't even know people ate them warm!

Okay so in that case I think I'll share the recipe I found. I have only, ever, eaten cold pickled beets .

Here's the recipe I was trying to make healthier by subbing 2 cups apple juice (to replace the simple syrup of 2 cups sugar plus 2 cups water):

DEBBYSDELIGHTS,
Do you have a fish fryer, turkey fryer or grill with an eye on the side?
Canning on a glass stove top is not reccomended due to the excess weight.
I use my hot water bath on one of the 3 things that I mentioned above. Even on a regular electric stove,
a quart water bath canner can mess up the finish on the stove top. Plus, the outdoor burners heat up & get hotter than an electric stove.
Hope that helps.
P.S.--A butane fish fryer is a lot cheaper than a new stove, as is a butane turkey fryer !!!

I'm new to canning and have been looking for a pressure canner all winter now I'm told I can not use it on a glass top stove which is what i have. even the water bath canner i bought said do not use on glass top stoves. Does anyone can on a glass top?
I really don't want to buy a new stove just for canning.

You all are making me hungry.

I have a beet question for you all.

I just learned that beets are excellent natural detoxifer for the liver.

I used to eat pickled beets when I was a kid. Haven't had any for at least 30 years.

So I googled for beet recipes and found a good one, it's a fridge recipe not canned. It calls for 2 cups sugar, 2 cups water, cider vinegar, spices, etc. And my question is: Instead of using 2 cups water plus 2 cups sugar, could I use two cups apple juice instead? Has anyone done the same or similar, and did it work for you? Were the beets good?

Strawberry/ Fig Jam

Ingredients:
3 cups figs
2 cups sugar or use 1/2 sugar & 1/2 baking Splenda
2 boxes strawberry jello-sugar free

mix all together. Cook on high, stirring often & mashing figs. Boil for 3 minutes after figs are soft and well mashed.

Pour into sterile jars & seal. Hot water bath:
10 minutes for pints or smaller
15 minutes for quarts.

I have used raspberry & cherry sugar free jello,also.
This is the family favorite:)

For extra flavor, add in a cup of fresh strawberries.

On Saturday I made a low-sugar black raspberry jelly. -No seeds. Yunm! I added some stevia and it turned out fabulous. It sounds like everyone's busy in their kitchens! I love it.

I'm trying to cut out most of the refined sugars and junk so I made a strawberry jam recipe that only called for some white grape juice... no sugar. It's actually very, very good. It jelled nice, looks great when you spread it and tastes like strawberries for sure. Now it isn't "syruppy" and sticky-sweet like we're used to jam being but it's very nice.

DARLINGABIGAIL--that margarine tip is totally cracked out--IT REALLY WORKS!! I can't imagine what the chemistry is behind that...probably the same reason a dab of olive oil in pasta water keeps that from foaming up. Anywho--thanks for that tip...no more icky boil-over :)

Carol- Wow, hope everything is sorted out soon. We have a good one for the lap top, but I don't pay any bills or pay for anything through it. I use my home computer, iMac for bills and ebay purchases. They say the iMac's are pretty secure and that the viruses, worms, etc are created for Microsoft.

No, it wasn't phishing. Though I do get emails from phishers; I just report them to eBay/Paypal security; you forward them the email with the headers turned on, so they can shut the site down.

You know how the virus engineers always bring out something new? Well this is a new keylogging scam, but everyone is confused and doesn't know yet how they're doing it. Since it was new and people weren't sure and couldn't say definitively what happened, it is taking awhile to get it untangled. Everyone is a suspect until they figure it out. I had good standing of a few years with eBay and good standing with my bank, so all of that is helping. I'm about ready to have a lawyer send a letter to nudge things along. I do not need this while unemployed. Or anytime, but especially now.

I have very good protection including against keyloggers through Spybot. But when a new scam comes out, it takes everyone awhile to figure it out and then come up with a fix.

Carol- did you get hit fromPaypal? A friend of mine did, but it did not stem from paypal, it stemmed from a false company requesting info, they were from Russia, cleared out her account. She got everything back through the bank but 100 dollars. Paypal also told her that they don't request info to be sent to them through e-mails, you need to do it directly through your paypal account.

Thanks Net and Lisa! I was in a hurry initially because I thought I'd need everything for last Sat's Farmer's Market (NOT) so no time to garage sale etc.

I am still straightening out one of my accounts from a scammer resulting from an on-line transaction; that's why I was trying to buy with cash in a store and not online. Prior to this I loved good deals on used stuff (like books!) on eBay, but will have to wait awhile.

I have more time now to experiment with the 3 Paths Jelly, and look on Craigslist and garage saling.

Hi, boy you gals have been busy.

Carol- Try e-bay for a lot of that stuff. You can find some really good used deals that way. Also, I have checked out canning books from the library and copied the instructions from them. If you do freezer jam, you don't need a hot water bath. However it is a good investment for doing your tomatoes, salsa, fruit, etc. Also try garage sales or the freebie ads for used jars. Just wash them really well and check for cracks and that really cuts down on costs. Great for you for all of the effort that you are putting into this. What a great investment into your health!!!

Well thank you Net and Parrotwoman. Here's the latest installment of my saga.

Sat's Farmer's Market was a bust. This is a small rural community, maybe there will be more turnout of vendors next Sat. So as it turns out it's a good thing I decided to start with the 3 Paths jelly!

I love canned fresh veggies, tomato products (sauces, whole, stewed, soup, puree, salsa), a dill pickle occasionally, a couple relishes, watermelon rind pickles, and canned chick veggie & beef veggie soups. I don't have freezer room so I need to go the non-freezer way. But if something doesn't seal I'll freeze it.

So I thought about what Net said about sounding scared. I was kind of unnerved in the store looking at all I'd need to buy for initial startup; but I'm over that now. I think I was just overanalyzing because I've never done this before, and overanalyzing each dollar because I'm unemployed. I am thrifty so I watch every dollar during NORMAL times when I am working. But I have the money and $100 is not going to make a dif one way or the other; and I'd spend more than that in the store for unhealthy (or less healthy) stuff. And I can either try it this summer like I've planned to do for a year now, while I have extra time, or not. I think I want to try it. I understand microbial contamination and food safety so that aspect doesn't bother me.

Also I asked several dif women in grocery store lines, where I could get the canning book locally, and none of them knew except one said hers came inside the canner.

So when I go back I'll look and see if the 70 buck one comes with a manual - it won't be the Ball or Kerr book of course - but I'm sure it does have a manual and that solves that problem if I buy the 70 buck one. Which I would need anyway, for the stuff I want to can. The next step is to do the 3 paths jelly one night this week. We're having a heat wave here, it was 97 today and there's a heat advisory tomorrow til 8pm, but I'm not going to let that stop me. I'll do it late night one night. Thanks everyone!

Yes, extension service websites are a great source of information. I don't pressure can either, I just do pickles, jams and tomatoes. But, the initial outlay will last you for years, so if you are going to do it, it saves money over the long run. Dehydrating food is also an inexpensive and effective way to preserve.

You sound so scared. It isn't that hard !!!!
I don't use a pressure canner, only a hot water bath.
Tomatoes are easiest!!!
The 3 Paths to Heaven jelly tastes great. It will still look a little runny after 24 hours, but gels up nicely in the fridge.
Jars come in 4 oz, 8 oz,12 oz, pint & quart. I don't buy the 4 or 8 oz. too small for me. I use the 12 oz. for jellies & pints & quarts for everything else.
I am on a tight budget so, I have 2 hot water bath canners & the canning tools. I reuse jars or people donate them to me. After your set-up equipment, the cost gets cut to just the veggies/ fruit & lids if you reuse jars & rings.
Jellies are not the easiest. So if they aren't perfect don't give up. Tomatoes-pickles-beans-sauces-etc...are easier to make till you get the hang of it.

I looked tonight at Walmart. No book. Was a little intimidated. Put the water bath thingie in my cart, $18+ change (20 bucks) then looked at the other stuff 1st-time users like me needed. It added up to $50 fast. There are 4 sizes of glass jars, etc.

Then realized if I DO do anything besides tomatoes and fruit, then I needed to buy the pressure cooker thingie $68 + change (70 bucks additional); and if I DO buy that then I don't need to buy the other one in my cart. So I needed to make up my mind. Before I buy. But I've never done this before. Either way it's still expensive for 1st-time outlay of everything at once, tho.

So if I buy the pressure canner thingie for $70, plus jars and supplies, we're looking at right at a $100, plus the book, plus buying at the Farmer's Market.

This made me re-think everything. I have looked forward to doing this and planned to do this for an entire year now. Am I SURE, absolutely sure, I want to do this? This is not just another one of my wild hairs, is it?

So I compromised tonight; decided to get half pint jars and pectin and make the 3 Paths to Heaven jelly, as I have a big enough stock pot to use as a water bath, with a steamer plate thingie for vegies put in the bottom. Use making the 3 Paths to Heaven as a test run to see if I really want to do this and if I'll like it or not. That way I'll also have time to find the Ball book (I wanted to purchase it in a store, not online; but may have to buy one online.)

I really (HELLO!) don't need to be eating alot of jelly and jam, let me tell you. I don't hardly eat it now. But this will be a good test. If it turns out well, tastes good, and I'm sure it's not lethal LOL then I can always give them away.

DARLINGABIGAIL when I was standing there being intimidated as I looked at it all, I was thinking I wish I could do a trial run in someone else's kitchen as a helper and learner; but I don't know of anyone who cans or makes jelly at home.

One of the pkgs of pectin I bought has a canning website on it, and I know almost every state's extension websites have it, too, so I can look up safety how tos, etc. I know about sterilization and how important that is from science background, and since I'm sticking my toe in the water with jelly first, I don't have to worry about botulism. Only sealing and sterility. Hopefully. Hopefully no jelling problems.

If I love it then I'll go back and purchase the ~$100 stuff.

The jelly jars looked so tiny to me - I decided to go with the next size up; they were just too small.

On Saturday (tomorrow morning) I'll see what the Farmer's Market has to offer, as I moved here last fall and have never been to one before. Sunday I drive a long distance to church in a larger city, so after church I'm going to a bookstore or two (none here) to see if I can find the Ball book (or similar). Sat I'm also going to check Craigslist for a used pressure cooker, see if I can pick one up in the big city while there on Sunday.

I've decided to get the book, canner, pectin and jars today (I already have sugar plus don't want to use much sugar) as well as clean and empty the kitchen and countertops today; then go to Farmer's Market tomorrow and see what they have, because they MIGHT have fruit; then come home, look up recipes, make a list from the recipes, and go to grocery store. So with all of that going on (plus the regular stuff on Saturdays) I may not get started on Saturday. Unless it is very-perishable-fruit (sometimes Farmer's Markets strawberries go bad in 24 hrs).

Another thought is to do it Sat night when the air is cooler. I haven't turned on the AC yet so I'm sure I will be hot while I do this. Yep that's what I think I'll do; prep today and tomorrow, can something tomorrow night.

Since you said the 3 Paths to Heaven was good, Scooby and Net, I saved that one to my computer, thank you! I have some frozen juice, I'm going to check what kinds.

Guess what our first Farmer's Market is going to be this Sat June 20th. It was in the paper with dollar off coupons, and the coupons are good through tomorrow through July. At the Post Office a bunch of people had thrown away their papers, so I tore out 10 coupons! It will be held on Sats, and in a couple weeks also on Thurs pms.

So I need to get ready to can something for the first time ever, this Saturday!

There probably won't be much fruit there this time of year in Iowa; it will probably be vegetables. I won't buy any corn unless it's organic because I'm staying away from GMO food. But I could buy the other veggies. Do I need to buy a water bath canning thingie today? Yes, right? And lids for the jars I have, and probably one box each of each size of jar. Also dill, pickling spice, and pectin. And the Ball book. What else? I'm so excited!! I might be posting a "HELP" tomorrow after I come back from the Farmer's Market. I wish I knew what I was doing. And I wish I knew what the Farmer's Market will have so I could look up a recipe in advance. Tomatoes - they will probably have tomatoes. Does anyone have a good recipe for salsa? I love salsa.

I tried it today. I had to do 2 substitutions.
I only had raspberry/strawberry juice & no lemon juice. I used grapefruit juice.
I had a little left over. I put it in a bowl in the fridge. Oh boy does it taste good. I will be making more. Again THANK YOU.

When you can fruit, you don't have to put sugar in the syrup, just add water. I use about 1 c of sugar to about 8-10 cups of water for my syrup. when i do applesause it has no sugar in it at all.

I haven't tried those.
I have tried Splenda & nutra Sweet. They leave everything runny. I stick with plain old sugar & just eat in moderation.
DH is diabetic. I have tried the Splenda for baking--HA-it tastes okay, but texture is another story. In canning-be careful. Consistency is important.

Has anyone tried Previa or Truvia or similar in canning, and if so how did it go, and if it went well will you post the recipe? I do NOT and will not use aspartame or splenda for health reasons.

Thanks alot Lisa! I'm just waiting to find a farmer's market on a day when I have some extra time; I'm going to bring some fresh fruit home and try that first. Since jam seems to be easy. Guess I need to buy canning gear first - like the cooker water bath thingy.

Carol- if you have something that doesn't seal, take some of the liquid out and freeze, right in the jar. But if you don't take some of the liquid out, the jar may break. Whatever you need help with, let us know, we'll help.

Carol--Glass does not absorb flavors, so as long as you wash the jar thoroughly, it will be fine. I routinely re-use my jars. It's important to inspect them carefully for cracks or chips when you wash them. Pay especially close attention to the rim. The tiniest chip in the rim will prevent the jar from sealing.

I have never canned before, am saving jars, and have a question. If the jar had something strong in it before such as jalapenos, or garlic pickles, do they ruin the flavor if you use them for something like fruit jam? Does the strong flavor in the glass transfer and taint, say, strawberry jam?
