We attached the awning to the motorhome this morning and then we went up to the orchard to check on the bees. We will be jarring honey in the next couple of days.

No these are sweet bell peppers, but they are turning red and I found a spark recipe for roasted red peppers that can be frozen. I added it to my summer cookbook. Think I'll try it on Monday.

I don't add salt or sugar to my spaghetti sauce, stewed tomatoes or tomato juice. I add a little lemon juice. I haven't had a jar go bad yet :)

I looked in my Ball and Kerr Books and they state that you can can vegetables without salt. I have seen Ball, has come out with a pectin mix for jams that lets you use Splenda. In addition. My Great grand mother was diabetic and I know she canned her fruits without the added sugar, so that she could eat them. Plus I always can my applesauce without sugar. I hope this helps. If you have a local extension, you may want to check with them also.

I need your suggestions/help...my FIL is on a no-salt/low-salt, low/no sugar diet as of this year. My MIL is wondering if she can put up spaghetti sauce and salsa that would fit the bill. What do you think can she cut back on the salt in these recipes and use splenda and still be safe? Do you have any new recipes to suggest for her? It's finally gotten pretty hot here.

I'm spending today freezing broccoli and green beans. After that I plan on experimenting with baking a loaf of zucchini bread in the crockpot since my oven is broken. I found a recipe on the internet and my sister tried it and said it came out really moist...can't wait. In a few minutes, it's back out to the garden to pick some more things!!

Thanks, I truly believe we have experienced a miracle.

IF YOU COULD KEEP A FRIEND OF OUR FAMILY'S IN YOUR PRAYERS I WOULD APPRECIATE IT. OURS FRIENDS BABY IS AT U OF M HOSPITAL, HE HAD SURGERY THIS WEEK BECAUSE HIS GROWTH PLATES IN HIS HEAD HAVE ALREADY GROWN TOGETHER, HE IS 10 MONTHS OLD. WELL THE SURGERY WENT WELL, BUT HIS HEAD BEGAN TO FILL WITH FLUID SO THURSDAY NIGHT THEY TOOK HIM IN FOR SURGERY AGAIN AND HE HAD A STOKE, THEY SAY IT DAMAGED HIS CEREBRUM. ANY WAY THEY LOST HIM 3 TIMES DURING THIS LAST SURGERY AND DIDN'T THINK HE WOULD MAKE IT. WELL HE HAS MADE IT THIS FAR AND IF HE MAKES IT TO MONDAY THEY WILL DECIDE WHAT SURGERY TO DO NEXT, AS THEY HAVE THE BACK OF HIS SKULL OPEN TO RELIEVE PRESSURE. HE'S SUCH A SMILY HAPPY LITTLE GUY.


I'm doing green beans now. When done, I'll have 84 quarts, plus I have enough for Dilly Beans, which is on my list to do today.

Congrats to DH. That has to be a load off of y'all's minds.

I am over-run with cucumbers. I did get to start moming grass today. But, I have a bad tire that has to be aired up every 15 minutes or so. DH is going to fix it tomorrow so I can finish up.

The 10" of rain that we have gotten in the past 5 days Has my eggplants, squash, cucumbers & peppers blooming again. Sorry to say that it is causing the tomatoes to burst open before ripening. Oh, well, if I catch them in time I can still put up stewed tomatoes : )

Just about to go off for a week's holiday so panic as bought a big bag of red sweet peppers which were "on special" in the market. Decided to bottle them in oil. Marinaded in squeezed lemon juice overnight having charred the skin off and then heated oil with marinade to 80 degrees and poured over peppers which had been put in hot jars. Apparently they will be ready in a month and they look delicious.

WELL WE HAD THE MRI READ. MUCH BETTER THAN THE LAST ONE, WHICH SHOWED 3 BULGING DISCS AND DEGENERATIVE DISC DISEASE. THIS ONE SHOWED A MILD HERNIATED DISC, AND NO DEGENERATIVE DISC DISEASE. THE DR SAID THAT DEGENERATIVE DISC DISEASE DOES NOT GO AWAY AND THE LAST MRI A COUPLE OF YEARS AGO THERE WAS A MISTAKE IN READING IT. I JUST THINK WE EXPERIENCED A MIRACLE.


Off to the farm to pick and can today. Have a great one!!!

i trimmed then blanched my beans then put them in bags for freezing. i ended up with about 10 servings. i learned:

1- have enough ice. ice packs didn't seem to keep the water as cold.

2- have all beans nipped and ready to dump in the water at the same time. trying to trim them while water is boiling makes you rush and then you have weird sized beans.

Thanks! July is usually the hottest month we have here in Colorado, but this whole summer has seemed more like fall. I love fall, so it's cool with me, but it really makes me want to nest and cook big pots of things and do homey things. I will take a look at the website! They have the cannning stuff on sale at the grocery store where I shop, so I may stock up and make a trip to the farmer's market this weekend. We'll see how it goes!
