There are so many great vegan products on the market that should help you. Typical stuff that toddlers might feel they are missing out on like "chicken" nuggets. Whole Foods or Trader Joes is a good place to find stuff like that. I recently went vegetarian and I never knew there were so many good pretend meat products.
One in particular is called Gimme Lean, its faux ground beef. They have it it two different varieties, one is crumbly, and the other is sold in a tube and its more gooey... better for shaping patties or balls. I prefer the crumbly kind because it has a much better texture and flavor. Im not sure about the soy content... I know its not all soy.
There is also a brand called Quorn that makes faux chicken products that taste great and contain no soy.

I would definitely be working with her doctor or asking to be referred to a specialist..

I have never heard of this,how common is it and is there a name for it?

Her body is rejecting every thing that is animal nature, all that things I listed induce her intestinal bleeding.

thanks a lot, I did not know that soy can affect thyroid but anyway she do not use soy as she had an intestinal surgery a year ago and she suffers short bowel sindrom and the soy make her dehidrate. But this fact certainly is important for some of my family members

Hello,
Cheese, cottage cheese and eggs are dairy.

The best advice anybody can give you is talk to her doctor and a nutritionist or dietician.

Check out web sites for vegan foods and recipes.

She'll have to get her protein from dry beans, legumes and lentils.
Avoid soy as it may very well affect her thyroid.
Fermented as in miso, tempeh and tofu are ok if you chose to use them.
I'm assuming the doctor has told you what vitamins and minerals you will have to supplement.

Spinach Rice Bake

INGREDIENTS:
1 cup uncooked rice
1 cup lowfat cottage cheese
2 eggs
1-2 tbsp. fresh basil
One 10-oz. package frozen chopped spinach, defrosted
Salt and pepper
Bread crumbs
Olive oil

1. Cook the rice: you should have 3 cups of cooked rice. In a bowl, beat together the cottage cheese, eggs and basil. Squeeze all the liquid out of the spinach and beat into the bowl. Add the rice, season with salt and pepper and turn into a buttered casserole. Sprinkle with bread crumbs, drizzle with olive oil, and bake for 30 minutes at 350 degrees. Makes 4 main-course servings.

Simple Peanut Butter/Tahini Sauce

Toss this comforting sauce with macaroni and peas, or use as a dip for carrot sticks and pita triangles.

2/3 cup cooked navy beans
2 to 3 Tablespoons peanut butter or toasted sesame tahini
1/4 to 1/3 cup water, orange juice, or apple juice

Blend all ingredients in a blender until smooth.


Banana in a Blanket

2 lettuce leaves
1 banana
2 generous tsp. almond or pumpkinseed butter
Spread nut/seed butter onto each of the lettuce leaves. Cut the banana in half and place it in the center of the buttered leaf. Put the banana in the leafy "blanket" and serve.

Mini-pitas, whole wheat

pizza sauce

Various toppings:

mushrooms (chopped tiny so the kids don't reject 'em)

tofu

cheese (soy or organic), optional

spinach

olives

nuts, sunflower or pinion

olive oil

sea salt

sprinkle of nutritional yeast, optional

garlic, etc. to taste

Spread pizza sauce on mini-pitas. Mix all other ingredients in separate bowl. Make sure mushrooms and spinach are chopped very fine (this is a good way to "sneak" them past the kids). Heat pizzas in toaster oven or broiler rack in oven until cheese melts and pitas are heated through.

You can make a sweet "breakfast-y" alternative of this with peanut butter, raisins/dates, shredded coconut, sliced banana, marshmallows, etc.

Veggie Balls

Ingredients:

3 slices of bread
2 boiled and peeled potatoes
1/4 cup boiled green peas
1/4 cup chopped green pepper
1/4 cup chopped carrot
1/4 cup chopped cabbage
salt to taste
vegetable oil
tomato slices, for garnish
tomato ketchup
Directions:
In a bowl put peas, green pepper, carrot, cabbage, potatoes and bread. Put salt to taste.

Mash all the ingredients together. Make small round balls from this mixture.

Heat 1 Tablespoon of vegetable oil in a frying pan over medium heat. After 2-3 minutes put the mixture balls in the frying pan. Fry lightly until the balls turn crisp and light brown on both sides.

Serve the veggie balls hot with tomato ketchup and garnish the plate with chopped cabbage and tomato slices.

Comments:
Veggie balls are ready in just a few minutes!



Grilled Cheese Salad Sandwich


In a bowl mix together:
1 cup Grated Cheddar Cheese
1 cup Grated Carrot
3 celery sticks chopped finely

In a separate bowl mix together:
cup mayonnaise (preferably a healthy made from good oils and not full of sugar)
1 teaspoon mustard

The mix the Mayonnaise mixture in with the cheese and vegetables. You can add more mayonnaise if you like.

Pile on top of slices of bread, put under the grill/broiler/toaster oven till lightly browned.
Serve with a tossed green salad.
