Edamame is my favorite veggie! Unfortunately, it's a relatively big no-no since soy isn't good for people with thyroid problems like me *sigh*.
It's fun to eat, doesn't taste like a veggie, and well...it's good! If you haven't tried it and you don't have a thyroid problem, look for it...if you can't find it in your frozen food aisle, if your store has an organic area, look in the frozen foods in that area.

Edamame (soy beans)--you can find them frozen at the grocery store. They're so good, easy to make, and have a ton of fiber and protein.

I am seriously addicted to www.recipezaar.com. It's so fun to add recipes and browse recipes. I made a baked "fried" chicken a couple weeks ago that was to die for. I'm really curious about the frizzled cabbage recipe, even though I never eat cabbage. The only recipe I haven't found is my grandma's sweet and sour pork chop recipe. Sometime I'm going to have to experiment and see if I can figure it out:)

I buy the Green Giant individual servings of Broccoli & cheese. Check the frozen veggie aisle of your local grocery store.

Yummy! and low cal too.

Very nice! I couldn't get it to hyperlink! That I like - much easier.

SP has now added a way to post links. When you post a message or a reply, click on the Add a Link (next to Add an Emoticon) and put your link in there. I'm not to sure how well it works, though. I was hoping it would hyperlink and apparently it doesn't.

I did the same with CDKitchen

Sandy
I had to paste the link on the google toolbar, and click on 1 link, but I got there. My favorite side lately is long grain & wild rice pilaf(I add froz.peas,gr.onions,craisins,slivered almonds)I kinda cheat...I use Schwans long/wild frozen rice mix,but you could use long grain and cook it in chicken broth. I know...people are getting sick of me talking about these, but I've been using Ziplock steaming bags, and the veggies are SO much better in them.Crisp and more flavorful.I really don't like to add cheese, bread crumbs,or soup to veggies...I like mine "naked" hehehe! Later,I'll look around for some more recipes!

Ohhhh my...I just went to www.recipezaar.com and used their sifting tool to search for some recipes.
First I narrowed the search to side dishes, then recipes for 1 or 2 people and then 5 ingredients or less.
Dunno if this link will work: http://www.recipezaar.com/recipes.php?categ=92%2C465%2C25%2C141&ls=h
Some of the recipes (just to give you some ideas):
Rice and beans
Yellow squash saute
Fresh tomato and corn salad
Garlic roasted asparagus with parmesan
Balsamic green beans
Penne with pumpkin sauce
Saucy carrots
Sweet butternut squash
Making you hungry yet? :D
