Hi, I'm Jo, and I just joined this team.

1. Location (State) New Brunswick, Canada.

2. Is this where you are from? Close... born in Moncton, now living in Fredericton.

3. Married, single, etc. Widow (2 yrs ago in October)

4. Kids ? none that I have given birth to, one step-granddaughter & a niece & nephew

5. Animals ? 5 in all - one dog, 1 siamese-mix cat, and 3 munchkin cats.

6. Hobbies, interests: Long story and related to widowhood, I'm still trying to figure that out.

7. How long a member of spark? 5 1/2 years, and down 120lbs. Still have another 50 to go.

8. How many are you cooking for? Two... my current partner and me.

9. How can the team help in supporting and aiding you in meeting your goals? I am not very interested in food since my husband died, and I've always struggled with making meals small enough for 2 people, instead of a small army. I don't like leftovers.

10. Anything else you want us to know about you? I'm a bit of an oddball, I work in IT, and I have a huge yard to mow in the summer and a very big driveway to plow in the winter. I live in the country, in the same house that my late husband & I purchased 11 years ago. My current partner is a woman, and yes, I'm bisexual.

Well, all the kids in our area are all heading back to school, which is a sure sign in my part of Virginia, that the long days of summer are coming to an end and the normal activity levels will slow down too. Thought this would be the perfect time to jump back into my Sparkpeople "schooling" and get myself caught up on all the things I have been missing at Sparkpeople over the summer. So....welcome back to school all you other folks in the same boat as me. We aren't new, but we just need the discipline to start our motivation for learning. Since my husband wants nothing to do with "healthy eating" and prefers to fast-food his way through life, i decided "Cooking for One or Two" is just the right class to sign up for! LOL

2. Is this where you are from? We moved around alot with my Dad's job when I was a kid but came back to Maine when I was 15

5. Animals ? (have any) Lots, 2 cats, cows, sheep, alpacas, mini donkey, horse, rabbits, laying hens,bantams, meat chickens and turkeys

6. Hobbies, interests: Flying, reading, hiking, quilting, sewing, knitting, the list is endless lol

7. How long a member of spark? signed up a couple of years ago but never came back, just started again in March

8. How many are you cooking for? Myself.

9. How can the team help in supporting and aiding you in meeting your goals? I love to cook, although it is hard for one now, love to try new recipes and make up my own recipes, I need to focus on lower calorie offerings, and recipes that only make enough for one or two servings, when you live alone even 4 servings is way too many, I don't like to eat the same food day after day.

10. Anything else you want us to know about you? I have access to all kinds of fresh foods in the summer since I have a farm but winter is hard way up here in Maine

Hi y'all. I'm Denise and I live in Texas. ;) I'm almost 52 and live with a cat named Sammy.

Cooking for just myself is easier now than it used to be but it can still be a challenge. Years ago I had a blog about cooking for one or two but it's been defunct for quite awhile. Now and then I think about starting it up again but I think I'll just hang with y'all, learn what I can and share what I've learned. :)

When I got home from work today I was very tired and knew that if I didn't prepare something healthy and still easy I'd end up eating something not so good for me. I roasted some vegetables in the oven and had two 1/2 cup bowls of those. They were fantastic, easy, and I have enough left to eat tomorrow.

Welcome! Enjoy the journey.

Meal for one. I had a portabella mushroom slowly sautéed in a little olive oil, S & P till done and slightly brown. Then placed between 2 corn tortilla's (cause I'm gluten Free) with a little cheese I had mozzarella sprinkled with some dried parsley. Then toasted in the pan till the tortillas were lightly brown. Pair this with a cup of soup or a small salad or cucumber slices with hummus. It was yummy! You can often find the really large portabella mushrooms in a bin where you can purchase them one at a time.

Also great if you can grill it on a BBQ

Hi,
I was a member of Sparks a few years ago and just now came back. I had lost 37 pounds and then I put back 10. Now I need to get back on track. I just can't seem to get in the right mind set.
I live alone and I love to cook, but it isn't fun to cook for just one. I am looking for easy and quick healthy meals. I hope to find them here.

April Goal: I feel that I need another month at the same goals.

MOMPUPPYPOWER you sound like you have A LOT going on! Hang in there. For exercise, Coach Nicole on the videos page did a really nice low impact 12 minute workout where you sit the entire time. It is for people who cannot really do much exercise either because their weight or they just have bad knees. It looked really, really good! Check it out, maybe you could do something like that.

If you haven't checked you might look to see if any of the local colleges teach a aqua class.
Contact your local senior center if they know of any aqua classes for seniors only or if any of the local pools, fitness clubs, offer discounts for seniors. I know a lot depends on where you life and ... It is worth the effort though if you find one you can attend.
Remember take it slow and one day at a time.

Hi I lost track of me since the beginning of this year. Been going through a lot of things with going to doctors and finding out that on top of my back problems, I have OA in my knee and bone spurs in my left knee.

I been facing a lot of stress, dealing with my second daughter. She decided to move out in the middle of the night and only take what she could easily put in one suitcase, and move to her bf's which we got told is homeless. Plus she changes bf's at least once every 1 to 2 months.

I collapsed at my son's wedding on Jan 4th, while I was dancing with my 3 yr old grandson. after that is when I found out about my knee problem.

My oldest daughter that lives in WA state and I are making a goal to lose 20 lbs by May 26th to help both her and I to have better health. So I asked the dr what I can do and he said to walk, and very low impact aerobics to not put pressure on my knees/back, aqua exercises(I can not afford).

I decided with my health issues, (OA, diabetes, high blood pressure, high cholesterol, and stress) I am going to have a notebook with me and take notes throughout the day every day to keep track of my intake(food), and output (exercise) along with blood test, bp, and stress levels.

Need a drastic changes in my life.

Check the spaghetti sauce aisle for a low sodium cheese sauce. I use this because I can't make a white or cheese sauce to save my life.

Hello everyone, just started SP this week,, so I am just starting to navigate around the site to try and find my way..I found this cooking for 1-2 and this seems to fit me ,it is just hubby and I now and I do find it hard to cut back on the quantities..BUT it has been just us for 10 yrs now..and I STILL cook way to much, I was raised with "eat everything on your plate, do you know how many people wished they had food" mentality..SO I am now showing all that food I continue to eat..I am turning 60 this yr. and I have put on a lot of weight .So I am here because I want to get healthy and lose some of this weight.My husband is not really over weight but could stand to be and eat healthier too.He is ready to help me do this ,so I have no excuse to not do it. Sorry for the LONG post..look forward to chatting with you all.

Hello to all, My husband and I are preparing to downsize. We will join a senior community and I won't have to cook very often. But, I still want to have ingredients on hand for healthy small bites. Really hate spoilage or waste, and won't have much storage space, so I need to plan in advance.

Hi my name is Francine and I joined this group with-in the last week. Hubby and I are empty nesters and sold our home to our son this summer, and moved to a Senior coopertive and have made the best move for us. We also have one daughter and one granddaughter. Our DD and family moved back to Minesota this spring--so once again our family is close to ecah other. I love to cook, bake when I have time(I make time during the holidays), sew, read, knit and some crochet for hobbies.

A good day here in central BC. -15ºC with fresh snow making everything sparkling clean. Today I'm going to make a meatloaf. I'll 'healthify' it by using 50/50 lean ground beef and ground turkey thigh and going very light on ketchup/bbq sauce. I have several Mrs. Dash flavours to use instead. I'll probably use egg whites as binder rather than whole eggs and I may add some dry curd cottage cheese for extra protein and calcium.

Welcome back to your lifestyle change, and making a real commitment!!! It took me a bit of time, before I really decided to get serious, and on top of that, I'm a procrastinator. Like I said it took me some time. But, when I started working the plan, the plan worked for me. emoticon Just start with one foot in front of the other, and take baby steps, at first. Any little thing you do is a HUGE ACCOMPLISHMENT!!! We're all here for you, all you have to do is just HOLLER and somebody will be here to help you.

Ladies,

It's so good to see new people come in and join the team. It shows that you're really committed to this new lifestyle change.

If you work the plan, the plan will work!!! I know the first thing I did, was track my food and exercise. When I saw what I was actually eating, I was agast and mortified. I knew something had to be done IMMEDIATELY!!! That's when I joined MFP back in 2012. But when I got out of the hospital and told Curves that I would be coming back, the trainer told me about this site. I was very shy about sharing when I first came on the site, in July, but there are so many people that need help and God told me to be bold and speak up!!! I started out at 388 lbs. and by HIS GRACE, I'm now 208.4 lbs. The doctors want me to hit 200 lbs. and stay there. However, God has the last word!!! Whatever He does with me, I'm in all the way, as He and I have been working this lifestyle change journey for 14 months, and HE's the best partner I've ever had, and I'm going to stick with Him.

If you ladies need anything, just HOLLER and somebody will be here, to put fingers to keyboard and give you a helping hand. Who knows, it might even be me!!!

Good Morning. I am new to this group have been using SP off and on for a couple of years. This last journey started the end of July and so far so good. I am a single mom, to a 16 year old son. He is a very picky eater so most of the time I am making two meals each night. Love to cook and try new recipes but there is only so much leftovers I can eat. Usually the next it is my lunch. Look forward to sharing.

Claylady - if you Google "definition of fast food restaurant", you'll get lots of info.

I believe McDonalds, Burger King, Arbys, Dairy Queen, KFC, Subway, Little Cesars, Long John Silvers, Popeye's, Taco Bell --- those are the "fast food joints".

Applebee's, Denny's, Olive Garden, Red Lobster --- those are "chain" restaurants.

I have a little trouble figureing out what is "fast food"I hardly ever go into a McDonalds of any other quickie food places but where is the limit?We go to Applebees about once a month and I wonder if that is "fast food"Does anybody know exactly what is a "fast food"restaurant is??Husband loves Dennys and he goes there often.

Hello all. By chance, I did a Spark search for "cooking for one or two" and found this group. It's a REAL challenge to find smaller portion recipes. Oh sure, I could divide by what ever number, but single serving recipes are sooooooooooo much easier emoticon

Hi I'm Geri and I have been with SP for 3 weeks so I'm relatively new. I have been married to the same wonderful man for 49 years and we have 3 fantastic children and 9 "perfect" grandchildren. But we are now retired with an empty nest except for our precious toy poodle (rescue dog). It is very different to cook for 2 when most of my life I have cooked for the "army" of children, their friends, drop in relatives and anyone else who knocked on the door (or just walked in). I'm up for suggestions.

I have been on for about a month. Trying to take it slow when it comes to teens. Food prep is a problem for me. I do not like leftovers. I like variety of foods.

I use two sites to do my tracking. I was with MFP for about 2 years, but when the Curves coach said to use this site, I tried it. They both have their advantages and disadvantages. I won't leave MFP, as there are so many people there, that I've come to love and care about, and it's that way already here, too. I've only been on this site for 1 month and 1 week. I love it here.

You have to be really disciplined in your eating habits, while raising a teenager. If mom or dad don't teach them how to eat, only God's know what will happen.

I won't ever be ashamed to let anybody and everybody know that I'm a follower of Jesus Christ. He's my big brother and he gave up his life for ME, so that I could get back home to my Heavenly Father!!! For that I'll forever be grateful!!!

I also am not new to losing weight, but everyday is a new opportunity to eat better.
I am a single Mother of a teenager so my main objective it so teach him how to eat healthier foods.
(He uses a different website to track his goals)

~~So many people in today's world are afraid or ashamed to post "Be blessed"

Seeing that, made me SMILE. I am a bible study and Sunday school teacher. I always stress to my youth, to never be ashamed of believing in Jesus or God -

I'm not new to losing weight and getting in shape, either, and you're right, for some reason the older I get, the harder it is to lose!!! However, this time, God has me on a lifestyle change journey and it's more pleasant and EASIER!!!

Morning...new to Sparks but not new to losing weight and getting in shape...it just seems harder this time!! Age and cooking for 2 has taken a toll on my eating...I was divorced for 24 years and remarried 3 years ago and have added almost 40 pounds that I surely don't need or want!!
Hope to learn some new ways of dealing with meals for 2...variety and portion control to name a couple!!

emoticon Nancy Jean I hear your woes! So frustrating when what we get used to, has gone awash for awhile.

I was without internet service and TV from FrIday morning of the previous week till just this past Wednesday when service provider sent out a service repair person.. Though my telephone service, was okay.

I was preparing to go over to my daughter's to feed their fish and take care of their little dog, today. As they are going away for the long weekend. Then everything in my building shut down. Need remote to open the garage door. Nothing was working. All power was off. With in 1 1/2 hours, everything was back to normal Thank goodness! I went and fed the fish and took their little dog over to my place. I could stay over there but nothing like having your own, computer, TV and bed.

AMEN!!!

I'm sorry that I didn't reply sooner, but the storm last night, fried my modem, phone, answer machine, and my companion service machine. I didn't get anything fixed until today. I even called a friend of mine in Atlanta, on my cell, and asked her to finish closing out my food diary, exercise diary, and my other goals diary. It was really crazy!!! She did the same for me on the MFP site.

I totally understand your conditioning to say no to trigger foods or just plain "I gotta have it" foods. I do the same thing. Every time I use to go into the grocery store, I would purposely go up and down the isles, where I knew all my forbidden foods were. I dared them to jump off the shelf and into my basket!!! Likewise, when I'm with other people and they ask me if I would like to have some..... It makes me feel so empowered to just give them a polite decline. Then they'll look at me and ask if I'm sure. I just let them know that everything is okay and they can have what they want, and I'm fine with it.

Now, as far as the fast food, I haven't stepped into one of those places in about a year. When I got out of the hospital, that's the first thing my parents asked me. "Do you want to go to McDonalds for something to eat. I told them no, as I don't eat fast food anymore. My mom told me that they have good salads, and my reply to her was that I don't like their salads. They encouraged me to go, but I just had to come clean and tell them that I don't want to step foot in a fast food place again, as I know that if I do, I'll undo all the progress that God has done with me and I'm not going to do that. The aromas, the splattering of the grease, people having a grand time etc. It's best for me not to go there, and I don't miss it, either. I'm better off for not going!!!

I rely on fruit and veggie salads For Nutritional bonuses 3 salads a day whether eaten with a meal or a snack alternative.

With fruit salad I make enough for 6 servings, as they usually last a bit longer in the fridge. If you make your dressing from scratch. My favourite fruit salad dressing is 1 cup plain yogurt with 2 tablespoons of organic honey. That stretches quite a ways for 6 cups of fruit, it doesn't have to be smothered in dressing, as the fruits are the stars of the salad. Veggie salads are best for two servings. Unless you make up a batch of Greek salad, potato salad or a veggie pasta salad that will last several days in the fridge.

Cooking from scratch homemade soup for the freezer through the winter months. Summer soups, I rely on Lipton chicken noodle soup. Though I do throw in cut up carrot, celery, fresh scraped corn from a cob. onions, frozen basil and parsley.

Behind my condo there is a community garden, which I used to belong to. This is one of my sources of fresh grown herbs, the gardeners often share with me their over abundance of herbs, and fresh veggies, I freeze them, for my soups. I shop a lot for organic herbs and produce from the farmer's market when it is opened.

Since I have reached goal weight my eating habits have changed drastically, from when I first joined SPARK PEOPLE..

A few changes did occur in my eating lifestyle. I decide to ban all fast food places for one month. That month grew into years., that I have not entered a fast food place,.

My other obsession was sweets of all kind but mostly bakery items. I dared myself, each time I had a craving to stand outside and look in the bakery window. Telling myself the place smelled so darn good. With in a month, I had no desire to enter a bakery for sweets. I know this must sounds nuts but that worked for me. Sometimes I think one has to use mind over matter, when trying to escape food addiction.
