If I'm planning ahead, I plan for multiple servings by using custard cups and ramekins -- I either make a big batch and then portion into the containers for reheating, or if making something casserole-like just bake individual portions.

I find that works well for individual portions of big recipes ... but if I have a large-ish item / ingredient and I don't want to keep eating the same thing over and over until it's gone, I've not yet developed a good system for [1] single servings [2] from the same thing [3] making different dishes ... yet.

I'm into some foods that one can't really make too much of; cans of Health Valley low sodium soups www.healthvalley.com/ or dressing up large baked potatoes (and eating them, skin and all; the skin is full of Vitamin C -- a potato is almost a "perfect" food, just needs vitamin A which one can get from a little pat of butter (or cheese)).

I like to buy roasts but only eat a dinner, maybe slice a bit for lunch sandwiches or a dinner in a couple nights but mostly I cut it up for stew later, and freeze it. Eventually I get enough leftover spaghetti sauce; cut up beef, lamb, pork or chicken/turkey in my little freezer that I don't have to buy meat for a week; already have enough ready for lots of meals. I love summer because I can barbecue but winter is even better sometimes because of the soups and stews!

I bought a tiny crock pot too, at the drugstore; just big enough for a chop or one/two-person stew and I use the canned Campbell's gravy or my own broth (when I cook a chicken) or a can of stewed tomatoes or something if I want to be healthy :-)

After Thanksgiving, I put the left-over turkey and stuffing in individual bags and put them in the freezer. This way I am not tempted to eat them and it is there when I have a feeling for turkey and stuffing, and just make a baked potato. If it is in the refer, I feel obligated to eat till it is gone, not this year, away and out of sight. I can use the turkey meat for Turkey Tacos or burritos too.

I tried the baggies. I bought chips and divided them up into 8 separate bags, and one night in front of me I had 8 empty bags. I just have to know the things I can bring into the house and the things I cannot. Chips is a cannot. I also bought 7 individual ice cream cups, I figured one for each night, but like the chips I had 7 empty carts. Ice Cream cannot come into my house. Now if I can lick portion control on my food, that would be half the battle. I don't have the mechanism in my brain that tells me I am full, so I have to mentally tell myself I am full and not eat anymore. That is very difficult when I am eating something I really like. I have to tell myself, it will be there tomorrow and I have had my share for the day. It is my ongoing battle, I fight at every meal.

Even though I'm cooking for one, I usually cook several things at a time for lunches during my work since I'm still working. I chop up cucumbers, slice tomatoes, etc so that all I have to do is grab things for a salad OR a sandwich. I usually make a small container of coleslaw -

I often get a rotisserie chicken OR cook a small roast; eat a meal or two off the meat with veggies & then usually use the rest to make roll ups, to top a salad, or will sometimes put a whole wheat tortilla in a skillet, melt some cheese on it & top with whatever meat I have made up or bought. AND then if I have any left over & just can't take anymore chicken or roast, I freeze it & use in stew/soup.

You'll get the hang of it for sure -don't worry! Enjoy!

I am in the same boat,but one thing that I do is this : any packages of meat purchased i come home and break out the ziploc baggies i always toss in enough for 2 people as you just never know who might end up at the house LOL...but after my meal is cooked i now know there is another meal saved for lunch the next day or that late night i get home and no time to cook soomething is just waiting on reheat....

when i buy veggies I do the same thing,break it up into 1-2 cup portions usually i can get about 6 -8 baggies out of one big bag,do this with frozen fruit too

this is my method might not work for everyone

some boxed crackers i divide up what the portion size is too :)

Welcome! I live with my family but they eat different food most of the time. They aren't always into healthy things so I'm left eating it on my own. I've found freezing portions of food in little purpose made containers is a great way to keep leftovers and have a convenient meal on hand if I'm pushed for time. That way you don't waste ingredients by only using a small portion of them cooking for one.

im with you. my dog is grateful for the leftovers but she will need a doggy spark team if i keep it up. my budget is tight so any help would be great.

Hi am new to the team, and happy that I found it. I need to cook for one so there is nothing left over, have a tendency to eat more if I cook for more. Now that I am retired and not cooking for the week, having a difficult time trying to cook for one.
