i throw some stuff in my slow cooker on a cooler day then have leftovers. another option is to use my small electric grill to make panini sandwiches.

I've been eating a lot of fresh fruit and either cottage cheese or yogurt. On steamy days like today, even cutting open a mango seems like slaving over a hot stove!

I have to second the sandwich thing. I started making my own again several months ago on the weekend. Tuna -- I used the individual pouches. And, now, it's ham and cheese. You can pick the bread and the filling and be creative.

I'd also second the wraps... especially with something like hummus. And, a yogurt goes well with both of these.

I bought an egg poacher a few months ago and my husband and I are hooked, such a healthy way to eat eggs. Also how's about a wine and cheese night, just buy some cheese, good crackers, fruit like grapes, etc. Or other appetizers that you don't have to heat up, we especially like hummus and baba ghanoush (eggplant dip, find a good mediterranean store) and veggies. Takeout is always an option if you are desperate.

Remember you can be a miracle: it may seem small to you but can make smile or lend a hand to someone else.

I love collard wraps - you just take collard greens (cut out the big middle rib) and you can put tuna salad, hummus or whatever in them. I've even rolled them around lunch meat and cheese.

well today I will try to stay cool with the swamp cooler going all day sure hope we don't have a power outage!! Anyway will stay home today and fix a nice big fruit salad for lunch and will share some with our nice neighbor. Suspect if we didn't have a swamp cooler I would sit outside with a hose nearby in the shade and just cool myself that way but we do have good air conditioning so will enjoy that.Time to get the shorts on!!

I grill salmon and make multiple servings so I can use it as a cold add on to cooked pasta with fresh basil. Buy the baked chicken at the store and that means just adding veggies and dinner is served.

Hi....

Can anyone suggest some easy meals to throw together in this hot, hot, hot weather. I'm literally burned out and can't even think of cooking.

Please - no salads.....or cold soups.

Anything else healthy I can throw together in a few minutes? I'm out of ideas.
