I found that a good freezer really helps in many ways.I just froze a whole chicken which I had boned,skinned and sectioned after cooking it in a crockpot yesterday,now have cooked chicken for all next week and probably after that!!Today I will cook up some frozen food from last week and add that to what ever I decide to cook.I also freeze my loaves of bread and then can thaw them out and enjoy them later.Hubby makes sure we have lots of various kinds of food so a freezer is wonderful.If you have little kids have them help you with kitchen projects.They will most likely really enjoy the fun part of helping you out.Maybe today I will get out my bicyle and ride around a bit.Good exercise!!!

Last night I made a salad of cooked ahead chicken breast, craisins, walnuts, celery with low fat yogurt as dressing. I had planned to make it into wraps with flour tortillas, but we ended up wrapping it in large outer leaves of romaine lettuce.
Sound more like lunch than dinner, but we are trying to make our evening meal lighter.

I used a bunch of fresh veggies this week and chopped them--not small though. I had cucumber, tomato, cauliflower, red onion with just a touch of mayo, dill, and tarragon. When it gets low, I just chop something else in.

If possible visit the farmers market and see what is fresh, maybe a little more money but really good! Loved all the suggestions and the website suggestions, stir fry is my fave too!

I'm big on stir fries. I make sure to have veggies in the house and tofu marinating in the fridge. If I don't feel like waiting for rice too cook, I make soba noodles to go with the stir fry.

Omelet in a bag -- interesting. Never heard of that. Good idea for dinner as I do occasionally throw breakfast foods in the dinner routine. When I'm having stomach problems, pancakes are a go to food. They're good and something about a plain little pancake helps settle my stomach.
Have been thinking lately though about doing omelets or something for dinner as well.

I love omelets but haven't tried the plastic bag. Mac n cheese--pretty much can't have it in the house because I can't leave it alone. Yogurt's a favorite anytime--especially the Greek yogurt.

omelets in a bag- mix pour in sealable bag and boil. simple and doesn't need to be watched as close ad to doing it in a frying pan.

The recipe section has some nice vegetable salads that could be used as a side. I took the 5 Bean Salad to a cookout over the weekend, and it was a hit. I also tried an Israeli Salad that was quite good.

Truly fast, truly low cost dinner for one. You asked ;) Fred Meyer in the West (which is Kroger's in the East) sells for 88c a frozen dinner called Michelina, and the one that is called Beef and Peppers is my fave. What else is in there? Rice, celery, and tomato. Just enough for me, was the request.

I make some sort of bean dish almost every other weekend. Either navy bean soup, or refried beans, or a bean salad, or chili. If not beans, then I do something with lentils. I portion it into containers and freeze it. The weekends I don't make something with beans, I do something with chicken or ground beef. Generally I have 5-6 different dishes in the freezer, usually at least 3-4 of each thing. It's a lot of storage containers, but it means that I can come home and thaw Italian sausages in tomato sauce, or pesto chicken, or chili, make a salad, and be eating in half an hour. And if I have company, I can thaw two containers.

I'm with a few others... I buy chicken when it is on sale, either thighs or whole chicken when really low priced. I remove the skin, cut up and pack into single portions and freeze. I always have a portion thawed in the fridge, so I can make a quick meal. I also buy talopia which is already separated into 3 or 4 ounce portions and they also make a nice budget meal.

Maybe a bit late. I always try to have salad available to supplement. I made a quesadilla the other day for my granddaughter, and it worked pretty well.(We shared, but I could've eaten it all.) Use one tortilla and make sure the cheese covers one half. I spray the skillet, fold the tortilla in half and brown both sides. You can use a bit of salsa if you like--either inside on top.

My new thing is frozen veggies. Bake a chicken breast and toss it in for some protein and with the combination of the fiber you can get from the veggies you are looking at a pretty filling, light and cheap dinner.
