As for dessert, I whip them up like pumpkin. I add and egg, some ground flax, a smidgeon of brown sugar, baking spices. I actually bake these ingreds together for a souffle-like dessert with real whipped cream. A light dessert or side.

I live in south Georgia, so of course I love sweet potatoes. However, they can be high in carbs and calories, so I sometimes "cut" them with Butternut squash. It is sweet and creamy and blends so well with the sweet potatoes. I also peel, then slice the butternut squash into fries and bake in the oven...I can eat a whole one by myself in one sitting--only 210 calories for a whole squash!. They are delicious! They make a wonderful soup, too!
I love a white baked potato but I've read they are very high on the glycemic index. Recently, I have been baking sweet potatoes then mashing the pulp with a little "I can't believe its not butter light" with some cinnamon. Hubby and I share a potato between us. I live in MS so getting sweet potatoes is not a problem. We have them here at the grocery just about all year round.
I do make a soufle-type casserole at Thanksgiving with sweet potatoes but it is very high in calories. It has brown sugar, dark syrup, pecans, egg yolks and whipped egg whites.

OMG! I had never eaten a sweet potato until about 4 years ago. Being from up North, they weren't a common staple in our household like they are here in Texas. My daughter suggested one night at Texas Roadhouse after we had both become lifetime members of WW to try a sweet potato and so I did. I'M HOOKED! I rarely eat white potatoes anymore and LOVE, LOVE, LOVE...sweet potatoes. That being said, I only eat one occasionally, but when I do YUM!

That is a great idea! My mind is busy with ideas now! Thanks for the idea. I love potatos...I try not to have my favorite potatos and eggs unless we go out for breakfast though. But I still fix baked & potato salad...just leave skins on for the nutritional benefit & fiber. My hubby isn't fussy. But he'd rather have white rice which I fix him once in a while. I prefer brown. I just bought a bag of yams & sweet potatos...I think I will fix me up something special today!

I've never used sweet as a dessert. What do you do with it? I like them all, but would say I use white the least. In fact, I just don't eat potatoes very often anymore and that used to be a daily staple when my husband was alive. I don't think they even sell actual sweet potatoes in our grocery stores, they seem to always be yams and I use the term interchangeably myself.
