A healthier southwestern taco salad:
Mince fresh cilantro, pieces of carrots, corn, bell pepper, diced tomatoes and onions. Any meat and/or beans. Add chili powder and cumin to taste mix everything together with greens. Sprinkle with cheese.
Add a tart dressing. I would use a splash of apple cider vinegar. If that's too tart for you, perhaps a commercial lime based something. DattyKathy's idea of using fruit juice as dressing is very interesting! Perhaps some orange juice?
A few tortilla chips. Sweet fruit on the side to balance the spice. Sliced strawberries and grapes together?
Now I'm hungry!
