Yes, I definitely think a vinegar based dressing is the way to go. Sounds like you already have a lime vinaigrette that sounds yummy. I love cumin.

Just kill the salt. Stamp on it! Smash it! Throw it over your shoulder and out the window. Nasty nasty bad bad. Your heart begs you for this small mercy.

Add to greens and raw veggies, anything grilled - meat, poultry and veggies. To me, adds variety and is filling.

I don't have a proper recipe, per say. It is about 2 tbsp 100% fruit juice to a tbsp of olive oil and a tsp of vinegar. Salt and pepper to taste. I just fix for myself so it is small batches.

Thanks Kathy and Claire. Both those ideas look really good. Kathy do you have a recipe for a fruit juice dressing or do you just go by look and taste? If you have a recipe would you share? Claire do you think something like a vinaigrette dressing would work? The one I use now has lime juice, cumin (I used taco seasoning until I ran out) salt, and salsa, I love it!

A healthier southwestern taco salad:
Mince fresh cilantro, pieces of carrots, corn, bell pepper, diced tomatoes and onions. Any meat and/or beans. Add chili powder and cumin to taste mix everything together with greens. Sprinkle with cheese.
Add a tart dressing. I would use a splash of apple cider vinegar. If that's too tart for you, perhaps a commercial lime based something. DattyKathy's idea of using fruit juice as dressing is very interesting! Perhaps some orange juice?

A few tortilla chips. Sweet fruit on the side to balance the spice. Sliced strawberries and grapes together?

Now I'm hungry!

To make it a full meal, at lunch I add fruit to the meats in my salad and use a fruit juice mixture for dressing. For supper I add veggies and have a heavier dressing or a thinned cheese sauce.

I absolutely LOVE salads and since I live in south central TX they're an integral part of my dinner menu for about 9 months of the year. I'd love suggestions for different things to add to a salad mix to make it into a complete meal, all suggestions will be sincerely appreciated. Right now I do things like adding a cooked, diced chicken breast half, or a small piece of cooked top sirloin, or maybe a 1/4 cup of one or two types of beans. I also make a salad based on a rice blend that I add different type beans to, or diced chicken or steak, or a 3 ounce package of tuna. Thanks for any suggestions.

I'll also take suggestions for other cold dinners that are quick to fix.
