Rosemary does very well in a largish pot on maybe a small stand...It becomes like a small bush or tree...I've not tried to "winter" one however...I'm not sure how much sun they would require. My house is dark and shady because we're in the woods...and my one large window (which takes up the whole front of our house)faces NORTH...so sunlight is rare. :( My house is also usually cold and drafty as we are in the mountains and catch all the wind. Houseplants hate it.
Next place I live, you can bet I will be more careful about things like that. I SO much miss growing my herbs in the winter. That's why my dehydrator is my best friend.
I have a window box on the window will over my kitchen sink which faces west. I currently have some basil but will be filling in with herbs from the local nursery using the "August Bucks" I earned in the spring and summer. Things like chives, oregano and parsley do well because you keep cutting them back which spurs more growth. I would not grow something like dill because it gets so big. The rosemary will do well when small but will get too large for a window sill.
The plant doesn't usually care when it gets the sun, it just wants. I do admit to using a grow light during the winter since sun is sometimes non existent. I have actually done fairly well just using florescent lighting, but it is not always great for some things.
I live by myself in an apartment (no balcony), so I have to buy mine from the supermarket. If I don't crush and handle with care and put on a roomy shelf in frig, do you think they would keep in a green bag?
The first step in getting somewhere is by deciding not to stay where you're at.
They work for produce...but I'm not sure I would recommend them for fresh herbs... Herbs shouldn't be crumpled and put into a drawer...when they're crushed they lose their flavor and quickly wilt.
I also have a dehydrator and an herb garden. This is probably the best solution if you dry a lot of stuff, or grow a lot of herbs...but it IS pricey if you are not going to make a lot of use of it. I dry the herbs when I have them in bulk and to replenish my stock, and I use the herb keeper as I mentioned earlier for fresh herbs or ones that I use frequently.
Since I have a full garden, I have my own dehydrating machine to dry my own herbs. If you are doing just small batches, you can fill an ice cube tray with the herb and then fill with water and freeze. You can also hang upside down and let air dry, but that depends on how much space you have and time. Goood Luck. It is worth the time. :0)
There is a great thing on the market. It is a plastic cylinder, called an "herb keeper"...you put the stalks of herbs into it, and fill it up to the water line, (about 2" of water) and then it has a plug-like wooden cap...The whole thing goes into the refrigerator. It works GREAT! The herbs stay fresh, literally for weeks.
I don't see why the same thing could not be made with a little creativity by following the same principles, if you didn't want to spend the money on them. (if you use more than one type of fresh herb, you would want one for each which can get expensive.)
Another alternative, which I used before purchasing my "keeper" was to soak a few paper towel sections and wrap them around the base of the stems and and about an inch of water to a large plastic cup...Set the herbs in there and put the whole thing into the fridge. It works pretty well also.
I live alone and just cook for me. I love fresh herbs, but keeping them fresh is a real problem. Right now I have a bunch of cilantro standing in a glass of water on the counter, but I'm afraid it won't stay fresh.
Blot dry and put in a bag or tupperware in the refrigerator? Freeze them? What do you do?
