I've been doing rice and beans (there's a brand here called Glory that has really good seasoned Pinto beans) which is easy to fix. I'd just never thought to toss them over lettuce and add avocado.
I don't really do tomoatoes or peppers, so this is an idea that I can just do what I like. Alas, there's the issue of keeping lettuce fresh, but I still like the idea.
If I'm energetic, I pack some stuff the night before, if not, well, I try to be quick about it in the morning.
