I've been doing rice and beans (there's a brand here called Glory that has really good seasoned Pinto beans) which is easy to fix. I'd just never thought to toss them over lettuce and add avocado.

I don't really do tomoatoes or peppers, so this is an idea that I can just do what I like. Alas, there's the issue of keeping lettuce fresh, but I still like the idea.

If I'm energetic, I pack some stuff the night before, if not, well, I try to be quick about it in the morning.

Leakay - how sweet that your DH packs your lunch! Too much is better than not enough. :)

I have to be a picky eater because I have IBS & Acid Reflux... unfortunately pretty much all of these options are nixed because I can't have any kind of lettuce more than once every few days and less than a hand full. I also can't have peppers of any kind (including bell) or more than 4-6 nuts....lol These principles can be applied to other things though so I will keep this in mind! Thanks!

I'm far from a picky eater - our house rule when I was growing up was "You have to give it one honest try." It's amazing how just making the effort can expand your horizons - try it, friends!

But I'm horribly lazy in the morning. I thank goodness that DH is not, and always packs my lunch for me, usually from leftover of the night before. Admittedly, he packs way too much sometimes, but I have learned to make those containers go two days at the office, or throw out the leftovers there, so he doesn't get his feelings hurt! LOL! Men, you know?

Thanks for this. :) I don't know if I'm as picky as what you say you are, but I'm still leery about many foods new to me. So I'm pretty cautious when it comes to food suggestions, too. :)

I'm always on the lookout for a quick lunch, however, being a picky eater, most suggestions really don't work for me because I don't like most of what they suggest.

For starters, the first suggestion is basically what I pack for lunch but tossing it over some lettuce and adding a few other ingredients. I can go with the avocado, but leave out the salsa.

Even without left overs, which many of won't have, I think these suggestions can work.
