Last night's leftovers (made 3 portions of it) - Im calling it Pesto Pasta w/roasted veggies. I chopped up zucchini, summer squash, bell pepper & red frying peppers & baked with a little olive oil & seasoning. Then cooked a cup of whole wheat pasta and tossed with about 2 Tbsp fresh pesto.

I had a nice salad for breakfast. I'm going to have a ham and cheese sandwich for lunch with some tomato soup and some green tea. For dinner I'm going to buy a Boston roll from my favorite to go place and eat it at home with some spinach and mushroom tamogoyaki.

I've started out the day with a fresh, low-fat blueberry muffin I made and some soy milk. Later today, I'll have some tomato/veggie soup and still decided what to have for dinner. :)

Well, for breakfast I had a strawberry poptart (beter than nothing, I suppose : /). For lunch I'm having a ham and cheese bender and a thermos of tomato soup. And for dinner I'm either going to have my leftover tuna hot pot or my leftover fettuccine and broccoli alfredo.

I ate breakfast late this morning decided to fix Ranchos hueveros, eggs with corn tortilla and enchilada sauce , avocado and low fat sour cream. Lunch is fresh ears of corn, chicken breast and salsa. Dinner will be mixed greens, whole tomato, 2 oz's chicken breast and dressed with olive oil and lemon. I am eating fresh peaches, blueberries and watermelon as my fruit.
My total calorie count is 874. 127 carbs, 27 fat and 65 protein. Sodium is 1129 mg. I have some extra calories if I want a snack.

I am going to make some steak on the grill. If I have enough veggies, I will cook them on the grill too. Since I need to mix up some cookies, I am going to see about making a new recipe called "Brooklyn Blackout Cake." We will see, but I it is a cooking weekend.

Made a taco salad out of the leftover taco meat from last night...

Tonight we're going simple (because I need to up my protein!) Just some good old tuna fish sandwiches with celery, carrots and onion. Yum!

It's taco night! It's been a while since we've had tacos, so I'm (obviously) really excited. I'm going to use 1/2 lb lean ground beef (93/7) and 1/2 lb lean ground turkey (93/7) for the meat filling. I bought a low sodium taco seasoning, but honestly it's not that low in sodium. I think next time I'll experiment with a make-your-own seasoning so I can control the salt.

Toppings: fresh tomatoes from my garden patio, shredded romaine, and salsa. I'm shredded some cheese for the man, a bit of sour cream for him too, but I'm keeping mine light.

I experimented with making "pizza" yesterday and it was yummy so will probably make it again. Instead of pizza dough / shell, used a tortilla which I baked slightly in the oven and then topped with cooked shredded chicken, peppers, parmesan cheese & goat cheese. Instead of pizza sauce, I used salsa.
You can adjust the amount of cal, fat & protein based on how much you top your pizza with. I found my portions to be just the right amount. Check out my Nutrition Tracker to view the quantities I used.
455 cal / 40g carbs / 14g fat / 39g protein

This morning I'm having oatmeal and blackberries.

For lunch, I'm not quite sure yet because I think my boss is buying lunch -- he gets to choose! I'll probably have a sandwich and salad, regardless of where we go.

For dinner...that I'm not sure of yet either! I need to use up some tofu I have so I think I may make some tofu parmesan over spaghetti and a salad.

I'm making a refreshing whole wheat pasta salad with lima beans, chickpeas, zuchinni, brocoli, red onions, fresh lemon, herbs, and a sprinkling of grated parmesan cheese. Yummy!

That's one thing that has been nice about joining relishrelish.com. The menu planning is so easy and the food is so good that I'm not sitting around all day Sunday trying to figure out what the week is going to look like. No diet food...just good, healthy, homemade stuff so I'm actually in the mood to cook.
