Recipezaar is my go-to cooking site. I've posted a few recipes and I've used them a lot in the last several years. I almost always change the recipe quanitity for one or two. There are quite a few more recipes for one person as well if you do a search for it:)
Oh totally! I buy frozen Turkey Meatballs, low cal marinara and make my own pasta less lasagna with thise and some fat free cottage cheese in the microwave. Something similar could be done for the su using the same meatballs and sauce, Fat Free (or 2%) shredded Mozarella cheese and a whole wheat lite roll. There are so many different breads out there now that are healthy, low cal and taste great!

Thanks for this info-it's especially helpful since we're probably all spending a fortune in gas and have to cut down in other places. I figure if some of the recipes have less-healthy aspects, you can always do substitutions of ingredients and adjust to your taste and health preferences. Even the meatball sub!

Glad you all liked it! I'm always up for cheap, quick, and easy....especially if it ends up being tasty and healthy. Granted, the meatball sub probably isn't the healthiest thing out there, but that recipe sure has my mouth watering.
I can't wait to try some of these. These will come in handy considering our difficult economic times, but yet they seem to be very yummy!!!!
