We have been grilling sliced eggplant, zucchini and peppers. I just spray the slices with olive oil and add a bit of fresh ground pepper and hubby works the grill. It avoids heating up the kitchen and tastes great!

Good afternoon all.

We are having extrem hot weather here in NE Ok. Instead of heating up the kitchen or doing BBQ, we are having salads for dinner tonight. Not much of a clean up when finished.

red&purple
2 egg plants cubed
2 red peppers cubed
2 red onions cubed
saute in
2 TBsp extra virgin olive oil
adding eggplant first
then red peppers
then red onions
salt lightly and fresh ground black pepper

yellow&green
1 pound mixed yellow and green summer squash chunked
1 pound green snap beans 1" snap
3 green peppers cubed
6 (yes 6) cloves of garlic
saute in on med heat (hot enough so that the fluid that comes out of the veggies does not collect)
3 TBsps extra virgin olive oil
first the squash
then the peppers
then the beans
when veggies are tender put garlic through press lower heat and stir in, continue until garlic is mellow (unless you like it sharp)
browned garlic turns bitter.... don't brown it
lightly salt and fresh ground black pepper

I originally meant to mix this all together but ended up serving it side by side in the bowl... it's really pretty

Black bean salad with a citrus/cumin/coriander dressing.

Cucumber Raita (diced w/mint and cumin) or its cousin cucumber yogurt salad (thick sliced w/dill, celery seed and red onion) Both have low fat yogurt and lemon juice.

Last months Cooking Light had a watermelon salad. I like the CL recipes but not the magazine, too many drug ads for me.

I have often made corn and black bean salad with a little onion, bell pepper, and oil and vinegar. But recently I have made this similar one with avocado, lime, and cilantro, and I love it:

I thought at first I'd want to add some salsa for kick, but as it turns out I like it as is. I don't know how this compares to NCSUZEQ's recipe, but I figure you can't go too wrong with those ingredients!

ADLINS, now when I cook the steamed vegetable recipe, I've removed the pasta and use an extra red potato instead. I don't miss the white pasta. I love the fresh herbs with that recipe. I even have my own herb garden now. SMILE

A lot of good ideas.

QualityKJ - I looked up the Steamed Veggies & Rotini recipe... and added it to my cookbook. What I really like about it is that the veggies can be mixed up (which is good since I'm a bit picky) and that it has some taters in there.

Mifflin - I seem to be vaguely aware of bulgur wheat, but have never had it. I'll be looking into it.

Side dishes are not usually a problem around our hours. We like corn, beans, salads, greens (mustard, turnip, spinich). It is the main dishes that are a problem.

I mostly eat the "side" dish as the main dish. I love veggie stews they can be seasoned in many different ways and can be many different combinations of veggies. I usually add a legume (white beans if I'm going mediterranian, pintos for mexican, lentils or channa dal for Indian, etc... That way I'm eating a pile of veggies and some protein. I also, make sure to add cold pressed organic oil as a flavoring garnish, olive unless it's chinese or indian then there is sesame, almond or mustard oils. I have given up ghee *sigh*

My fave starch is bulgur wheat. It's like rice but with fewer calories and more fiber, and takes just 15 min to cook. For side veggies, I've gotten hubby to grill a lot of things that are yummy: red, yellow, and orange peppers (I don't like green) are creamy on the grill! Zucchini is delicious, and so is asparagus. Putting veggies on a cookie tray with Pam, salt & pepper is delish, too. Brussels sprouts are addictive when roasted!

Another idea is to used diced or stewed tomatoes to poach fish in. It adds color, flavor and a veggie by just opening a can. This time of year, you can get fresh tomatoes, but in winter, this is a big help to my cooking!

I love the idea of cold soups, and will look into them!

I've been doing a lot of steamed veggies - beets are a current favorite - with crazy jane's mixed up salt for seasoning, or raw veggies. Not inspiring, but lowfat and tasty and very simple to make. I did try a recipie for chilled cucumber and avocado soup, and it made a wonderful side also. I plan to check out more chilled soups over the summer.

I cook alot of the sparkpeople side dish recipes. My favorites are the Steamed Vegetables with Rotini, and the Sauted Spinach with Tomatoes. I usually have a starch, like brown rice, corn on the cob, or potatoes with my main dishes.

Black beans and brown rice is one of my batch-cook favorites. I put the rice in my rice cooker with some sea salt and cumin, and then when it's done I add a couple cans of drained, rinsed black beans and some fresh salsa. It's a yummy side dish, or good as a quick meal (especially with a little lowfat cheese on top).

I often broil veggies in the oven with just a little olive oil, salt and pepper. Asparagus (especially the skinny baby ones) is just wonderful this way, as is zucchini, and winter veggies like potatoes, carrots, sweet potatoes, butternut squash, etc. If I'm broiling salmon too, I just throw some veggies in the pan with the fish and they're done at the same time.

I LOVE Black Beans and make a simple dish (usually for breakfast actually), with 1/4 cup of barley and 1 tables spoon of dried black beans. If you cook the barley forever it gets BIG- to over a cup and this concoction has only about 120 calories. I sometimes add a cup of cut up celery as it cooks, or some carrot and it really is a LOT of food with no fat and very low calories. I season with Five Spice & some pepper leaving a little broth. Like I said I usually have this in the morning (quite filling), but it could be a good side dish seasoned with almost anything I suppose.

i have the same problem a lot of the time. But i tend to stick to sides or either brown rice or red potatos for a starch and a fresh veggie (usually broccoli, summer squash, green beans or asparugus). These i will usually saute in a pan. heat oil with some minced garlic & green onion and then add veggie for just a couple minutes. it makes the veggie hot but still crisp. I will also add some red pepper flakes to the pan for some added heat. My bf seems to love this emoticon

I will also serve brown rice & black beans as a side (a 2:1 ratio respectively) then add in some chopped onion, chillies, cilantro and garlic. This is a Costa Rican inspired dish but is very tasty with some hot sauce and goes well with chicken or fish.

Everything i make is quick and easy! But these few things taste pretty good and i find adding garlic to anything makes me like it even more. YUM emoticon

Honestly, I don't do a lot of side dishes. In our family it was usually just a one pot meal. Maybe some potatoes so I've never gotten into the side dish thing like I probably should have.

I submitted 2 recipes for sides to Spark: Cole Slaw and Mediterranean Couscous Salad. I also use fresh veggies as sides because they will cause you to eat a meal more slowly. emoticon

I like the bags of frozen veggies that you can throw in the microwave. As long as you stay away from the ones with sauces, they're great. In addition to the "Steamfresh" variety available nationally, Safeway has their own store brand. These are a great way to make sure you're eating your veggies. Yum!

I pretty much just make a large salad to go with everything. Chicken, fish, Tofu. Salad, salad and more salad. Sorry, but a few ideas for something low in calorie would be nice!!!

I like couscous with peas or corn. BBQ's always are good with baked beans or grilled corn on the cob (soak in water for about 30-45 minutes before you place on top rack of grill).

Just some basics, but easy and very tasty!

I know July is almost over, but we'll start in the middle.

I frequently get in a rut and I realized that I'm probably not the only one. Coming up with a "main dish" isn't so much the problem right now as what to eat with it - the side dish. I seem to be stuck on frozen potatoes. Low calorie and easy to fix.

So, Side Dishes will kick off the monthly discussion. What do you do for side dishes? This in't limited to recipes, but anything, including pre-prepared, frozen, etc. All meals included.
