Hi everybody.

Tonight my boyfriend is coming over and we're making homemade pizza. I picked up some whole wheat pizza dough yesterday, along with a ball of mozzarella, baby broccoli, & plain chicken cuts. Omg it's gonna be sooooooo good.
(got a bottle of wine to go with it, so that should be good too lol)

Decided to research alternatives to eating so much red meat. Tofu has really changed over the years and I'm impressed.

Made a recipe that called for 1 1/2 cups of feta cheese. I only used about 1/4 cup and replaced the 1 1/4 cups with finely diced tofu. It was a wonderful substitute for the fattening cheese.

Also made a lasagna and substituted pureed soft tofu for the ricotta cheese. I mixed the tofu with an egg, salt, pinch of oregano and finely chopped parsley.

Oh yes... What did I have for dinner tonite?

Spinach - tofu - rice fritata
Sliced tomatoes
Plain yogurt with cinnamon, Splenda, a few raisins and a tablespoon of chopped walnuts.

This was a nice change from the usual.

Leftover meatloaf, Ronzoni healthy harvest pasta, and 2 servings of green beans drizzled in a little bit of olive oil. For some reason, I'm already craving some dessert though!!

We'll have leftover zPizza. We order 3 small size in the varieties with a lot of veggies and some with chicken on top. I can have a piece of each and add a salad and hit all my nutrients and calorie range!

Me too on the comfort food... its cold here! Brrrr...

Tonight, I fixed roast beef hash...about 3 oz., Chopped roast beef, chopped 3 small boiled yukon gold potatoes,skin on, and 1/4 medium onion all together in a pan, with 1 tsp light margarine, on low. Lemon pepper, and grated orange rind for seasoning. Cooked together on low for about 15 minutes, long enough for all the flavors to blend, and the onions to become translucent. Yummy!

Had an 8 oz. glass of 1% milk with it.

Tonight for dinner, I had 2 2 oz. fish filets, one small boiled potato, and stir fried mixed vegetables with grated orange rind on them. Yummy!

I splurged and had steak & potato's.

I've been sick for the last 2.5 weeks. It's always tasted so good and perked up the energy level to have a steak after being sick.

I don't know if it's the healthy thing to do or not, but it sure tasted good and my energy level is a lot better this morning too.

Last minute company tonight - a relative in town from the West Coast for a conference and we invited him for dinner.

So I'll go to Whole Foods and get some nice fish, marinate it and have hubby grill it. Will add asparagus since that's in season, spring greens salad, and either brown rice or bulgur. For dessert, I'll get fresh fruit and make a parfait with vanilla yogurt (can be done ahead). I can offer GS cookies with the parfaits for the guys. For appetizer, either veggies and hummus or maybe shrimp cocktail. Or even use up some of the full fat cheese (and I'll try not to touch that or the crackers).

Thanks what I made last night.
Frozen shrimp from Sam's Club
A hand full of baby spinach leaves
and some broccoli and onions from the salad bar. Stir fry add a couple of tbls of stir fry sauce
Rice and Bam

Dinner and lunch the next day.
Very tasty - but if it did this all the time I'd get bored fast.

I'm probably gonna do a shrimp & veggie stir-fry tonight. Hubby decided he wanted Chinese and I had him pick me up an order of steamed shrimp & vegetables, and then another large order of just steamed veggies, so I'd have extra to go with my meals for the next couple of days.
I like to get that and then throw some in a pan or wok with low-sodium teriyaki or hoisin sauce and stir-fry for a few minutes. Sometimes I add feta crumbles to it, too, for extra protein and flavor. emoticon

Last night, had leftover rice,bean,veggie medley I made on Sunday, with brown rice and red kidney beans - it wasn't that great as leftovers.
I added 4oz. of 96% lean ground beef with mexican seasonings and a little cheese - that made it a lot tastier.

As for the meat, I bought a regular sized package, and then divided it into 4oz. single servings, froze three of them, and kept 1 in the fridge for later this week. Hopefully being in small packages will help it defrost ok and I'll actually use it. (Instead of my usual of letting frozen meat sit in the freezer for months and then throwing it out).

Grilled chicken breast (mexican style) with grilled peppers, onions, spinach, corn and low fat mexican shredded cheese. Tossed together in a whole wheat tortilla with some reduced fat sour cream. Yum!

Tonight I'm trying one of the Bird's Eye Viola Dinners - Cheesy Chicken I think. But, it's also got carrots, corn and broccoli, which for the veggie picky girl is pretty cool. Hope it's good, cause I'm planning on getting three meals out of it.

Someone asked me if I had ever done "google cooking" where you key in the ingredients you have and see what recipes come up.

That might give you some ideas for the spices to add to those turkey breasts? Another cool think I learned over Thanksgiving is the the very fancy sounding "mirepoix" is really just carrots, celery and onions sauted in a bit of butter or olive oil and seasoned with salt & pepper. So you add that to a bit of turkey gravy and have a nice sauce.

The other day I found a package of 7 3-oz. turkey breasts at Trader Joe's - I packaged two sets of two and one in freezer bags and froze, and kept two in the fridge, which I've had the last two nights for dinner.

I'm not sure I'm a fan of turkey..I might go back to chicken (the nutritional difference isn't that large). But, the breasts are thin sliced so hopefully they'll defrost okay.

Tonight I had a turkey breast and a brown rice and kidney beans thing I just invented... the seasoning needs help but I'm not great at cooking... (I ended up just adding more salt - oh well). The second serving is leftovers for tomorrow or lunch on Monday.

Last night I had no food in the house... defrosted some hamburger meat from the freezer, cooked it, then made mini-hamburger pizzas - Multigrain english muffin, split in two, topped w/ meat and spaghetti sauce and part-skim mozzarella. They came out pretty well.

And because my mom was freaking out on the phone that I've lost weight - funny b/c 4lbs ago all she said was how great I looked, but now I guess she's worried I'll take it too far - I had ice cream for dessert. with fresh strawberries. yummy.

Haha, I had breakfast for dinner last night too!

First, before yoga, a light Multigrain English muffin with an easy over egg w/ half the yolk removed, and 1/8 cup low fat cheese.
Then, after yoga, oatmeal with pumpkin and spices and some sugar (yes, I stole the oatmeal/pumpkin from the breakfast board) - it was pretty good, and filling.

On some nights when I work out I will have two 'dinners' - one after work and one after the workout - but it depends on the timing of the workout and how hungry I am when I get home. Sometimes I just have a small snack before and real dinner later. I always have to eat something after working out, even if it means dinner at 9pm.

I over spent my calories at lunch with a wonderful wrap with turkey and cheese. Used mustard instead of my usual, mayo.

For dinner I had Surprise Mashed Potatoes?
Actually it is cauliflower that's mashed with a little parmesan, soy 'bacon' bits, salt, pepper and a sprinkle of imitation butter.

If you haven't tried this, please give yourself a real treat and feel really great about all the saved calories.

BTW... I weighed today... Progress has been made!
Starting weight: 220 Today's weight: 198!!!
I'm doing the happy dance.

I had one of my favorite crock pot recipes from SparkPages: Black Bean Chicken.

Just 4 ingredients to make 6 servings!
1 lb boneless Chicken breasts
2 cans black beans
16 oz salsa
1/2 cup brown rice

Great on protein and fiber! Hubby had 2 servings, and now I have leftovers for lunch!

Tonite I will have a wonderful salad.
Later tonite I am having Jello brand sugar free banana cream/fudge sundae. Sounds like tons of calories. Nope! Only 60 calories.

Tonight, bar-b-que chicken pizza. It's really a boboli crust (1/2 per the portion guide), bar-b-que sauce, chicken (which I baked and cubed), mushrooms and mozzarella. I'll probably also throw in some Green Giant Corn Bites. Strange, I know, but it's actually very tasty.

Since we had a big party for my 70th B-day today (REAL date in 3/19), we had lasagne, tossed greens salad, and garlic bread at my brother's house. We are neighbors. Also had chocolate cake with chocolate filling and chocolate frosting plus vanilla ice cream today. I had my piece and stuck to only one! I feel really righteous about that!

I know we have been posting about breakfast menus. How about at the end of the day? Dinner?
Personally, breakfast is a no brainer for me.
It is the dinnertime meal that back me up!
I've been trying to have a bigger lunch and then lighten up at night.
